Meet Claire Sprouse, the owner and culinary dynamo behind Hunky Dory, a low-waste, all-day cafe, located in Brooklyn. Claire has been recognized as Esquire's top 10 "Most Imaginative Bartenders" in 2012, Food and Wine's "Best New Mixologist" list in 2015, and Drinks International's "Bar World 100" list in 2019. Today, we discuss Claire's passion for sustainability, which happens to be a primary value at Hunky Dory. It’s the driving factor behind everything they do at the restaurant. As Claire explains, you don't need to be a scientist to create sustainable, effective processes. Inviting people to Hunky Dory's brand of activism in a non-preachy way is what she and her staff strive to do. We also take on the high and low points of adulting, creating a sense of inspiration by way of her food and drinks, and focusing on the human experience within the hospitality industry.   We recorded this conversation a few weeks before New York City would become a pandemic hotspot and effectively shut down, including Claire's restaurant. So far, Hunky Dory is hanging on and offering takeout. So, if you're near Crown Heights in Brooklyn, please grab some grub. The tourism industry is having a difficult time right now. The coronavirus pandemic has made it difficult for people to travel so there are no customers. But, that doesn’t mean such businesses shouldn’t be considered by aspiring entrepreneurs in the future. In this episode of the Fire In The Belly Podcast, Pete talks to Claire Rees, the co-director at Introbiz Sweden and Wild Spirit, about her successful journey in starting a business in the wilderness. If we’re being honest, it is not something that most entrepreneurs would risk to do. But Claire and her husband has proven that it could thrive—they grew their dog sledding business at the peak of a mountain with zero to little resources. Their vision to expand has been paused because of the outbreak, but they’re ready to hit the play button soon. There is a lot that any entrepreneur can learn from her experience. Listen in to know more. KEY TAKEAWAYS What is it like to run a business in the middle of nowhere? Claire likes the calmness and peace she feels being within nature. She’s always been thrilled to run a business where she can enjoy her freedom, help people, and also increase her wealth. As Claire and her husband are running 3 businesses, internet connection is vital for them. Living far from urbanised areas can be difficult. So now, they are looking at ways to further develop the place to keep every business operation up to date as well as serve as an amenity for their customers. Claire and her husband Richard like helping people—whether it be by helping them stay fit or giving tourists a great experience. In their business, it’s not just people they deal with. They are also responsible of taking good care of the dogs. For example, when dogs are having a terrible day, then they don’t want to be with other people, especially the strangers. So, the dogs’ needs have to be met first. The furry friends’ disposition and health are as important as the people’s in their business. Businesses should be able to run on their own, according to Claire. This is her vision. She wants to be able to enjoy her freedom and time with family, with or without having to be hands on in the business all the time, in the future. Claire’s advice for entrepreneurs: Always aim for self-improvement. Do what you think is right for you. don’t let someone else dictate your path. Other people’s suggestions and feedback are just that, nothing else. It’s up to you if you want to take them into consideration. But if their words just stall you or push you backwards in terms of improvement, then it’s time to rethink, and maybe shut them out. BEST MOMENTS “It always has to be sustainable. I don’t want to be reactive.” “The seclusion and the escape into the wild is the life we want to end up to.” “I love people, but I like my space.” “What keeps me going is the positivity that people get.” VALUABLE RESOURCES Listen to Fire In The Belly Podcast in Apple Podcasts (https://podcasts.apple.com/us/podcast/fire-in-the-belly/id1499375061)! The job of a parent is to be there whatever and whenever for your child – those are the rules! That certainly applies to Claire Sutton, this week’s podcast guest. Claire shares her truly inspiring, but sometimes heart-breaking, story. Her daughter Jade, who is now 14 years old, has ADHD. The road to getting Jade diagnosed was drawn out. As Claire put it, Jade “slipped through the cracks of the education system.” Her early school years were a struggle and it wasn’t until year 5 that she was formally diagnosed. Claire and her family moved across the country and enrolled Jade in a much smaller school that was better equipped for Jade’s needs. Unfortunately, even though Jade seemed happier, her struggles continued. By the time Jade started secondary school, Claire had discovered the heart-breaking news that Jade had been self-harming for over a year. Jade had managed to hide this from her family, and when it was discovered Jade was adamant that she didn’t want any external help. This is when Claire realized that she needed, as she puts it, “to be the light”. Claire talks in depth about what being the light really meant in terms of listening to how Jade was feeling and hearing some things that parents never want to hear from their children. She talks about the need to stay calm and not get drawn in to what she calls the darkness. Although a lot of the things Jade talked about were quite dark and upsetting, Claire knew she had to be her rock, so she couldn’t let emotions get in the way of that. Claire was determined to be the light in her daughter’s life and get her through the darkness. Claire talks about how she would constantly reassure Jade that they would get through it and that there was light at the end of the tunnel, and they were heading for it no matter what. And slowly Jade began to gravitate towards her mother’s light. Claire’s ultimate goal was to help Jade see the value in herself again. Claire talks also about the need to shift the focus to something more positive in situations like this. Jade was a fan of pageants, and although Claire had her concerns, she soon realized that modern-day pageants are less about physical appearances and more about showing off the beauty inside a person. Jade loved the idea of competing in a pageant and Claire talks about these as a key part of her daughter’s recovery. Being a contestant has also meant that Jade had to do a lot of charity work, and give back to the community. So Jade began focusing on a new project that helped other kids her age who struggled with similar issues. She went and talked at assemblies in local schools about her experience with ADHD and depression. This project is now growing, and Jade has appeared on television in the UK, talking about her life and how she has come through the other side. She has now become an identifiable role model for other young people going through similar challenges in their lives. Finally, Claire talks about the three main areas she focused on with her daughter to bring her back to a more positive, happier place in her life: 1. To value herself again 2. To set inspiring goals 3. To give back These 3 things have helped her daughter not only come to the light but also to be a light for other young people struggling with the same challenges she has faced. Both Claire and Jade are inspiring individuals and remind us all what love and perseverance can achieve. After a trip to Brownsea Island in 1818, George, the Prince Regent declared "'I had no idea I had such a delightful spot in my kingdom'. It may only be 1.5 miles long and 0.75 miles wide but this 500 acre island is full of history, mystery and wildlife. Felicity Evans takes a boat across and meets Claire Dixon of The National Trust, who took over the island in 1963. As Claire explains, many previous inhabitants have left their mark on Brownsea. Colonel Waugh and his wife Mary were walking along the beach in the early 19th century when she got her umbrella stuck in the sand, pulled it out and discovered clay. They built the village of Maryland and started a pottery. At a newly excavated site, you can see some of the cottages that were built for the potters. She also tells the story of the eccentric recluse, Mrs Mary Bonham Christie who threw all the inhabitants off the island and patrolled the beaches with a shotgun. She handed it back to nature and for 45 years, animals, birds and the rhododendron ran wild. Then it's a walk to spot red squirrels with ranger John Lamming, who's lived on the island for over 30 years. Brownsea is one of the few places you can see this highly protected animal and in autumn they are easy to spot, burying food on the woodland floor. Felicity then heads to a low hide over the saltwater lagoon, to meet Reserve manager, Chris Thain, of the Dorset Wildlife Trust to see and hear about the huge diversity of birds that frequent this area. Finally, to the flattest part of the island where Lord Baden Powell hosted his first experimental Scout camp in 1907. Next to a huge memorial stone to the movement, Scout Commissioner, Kevin Philips explains how Brownsea is still visited by thousands of Scouts and Guides every year. Youth group leader and Girl Guide, Amanda Shorey encourages Felicity to have a go at den building, low ropes and archery, just some of the activities going on in The Outdoor Centre. Presenter: Felicity Evans Producer: Julia Hayball.
