Umber Ahmad is the baker extraordinaire and owner behind the buzzy Mah-Ze-Dahr bakeries in Manhattan, Washington D.C., and Arlington, Virginia, known for their nostalgic desserts, breads, and pastries. Before entering the food world professionally, Umber worked in finance as an investment banker and simply baked for fun on the side. But eventually, her passion became too strong, and after a little push from a certain Top Chef judge, she followed her dreams and opened Mah-Ze-Dahr in 2016.In this episode, Umber joins host Jessie Sheehan to chat about her journey into the sweet world of baked goods, the special meaning behind her bakery's name, and some of the delicious treats you'll find at Mah-Ze-Dahr locations. She also walks Jessie through her recipe for Nisu, a traditional Finnish bread with cardamom and coffee, which was the first thing Umber learned how to make. Click here for Umber's Nisu recipe. Thank you to Plugra Premium European Butter and California Prunes for supporting our show. Hosted by Jessie SheehanProduced by Kerry Diamond and Catherine BakerEdited by Jenna SadhuEditorial Assistant Londyn CrenshawRecorded at CityVox StudiosShe's My Cherry Pie is a production of The Cherry Bombe Podcast Network. This week's guest is Umber Ahmad - the founder of the rapidly growing bakery, Mah Ze Dahr. Her journey from banker to baker has been told before by everyone from Martha Stewart to Buzzfeed to Time magazine. Umber was a guest in the early days of this podcast in June of 2017.  Over the last few years, I've come to know Umber well and in full disclosure I've worked with her both formally and informally as she launched and began to grow her business. When the pandemic hit us all like a tidal wave in March of 2020, I wondered how Umber would keep Mah Ze Dahr afloat.  A business that depended hugely on a single brick and mortar location in Greenwich village didn't seem to have much future as her customers fled New York and the city turned into a post apocalyptic landscape of deserted streets and shuttered storefronts. Twenty months later, Mah Ze Dahr hasn't just survived it has thrived. That single location has turned into four and her online business has doubled.  The leadership instincts on which the business is growing were honed in Umber at an early age. It is too easy to think of leadership as an abstract, intellectual, and even academic construct.  It is not. Leadership is the most powerful change agent on the planet - this one or any of the others that we attempt to occupy in years and generations to come.  Leadership is most visible when we are confronted by the twists and turns that life brings us.  Coronavirus has been a series of hair-pin bends on the side of a mountain and many so-called leaders have climbed into the back seat and clung on for dear life. When faced with these moments we quickly discover whether we are a leader in name only, or whether we are willing to confront the challenges of whatever lies ahead.  Whether we hit the brakes and stop, or whether we accelerate through the curve and head for the future.

New York Launch Pod: A Podcast Highlighting New Start-Ups, Businesses, and Openings in the New York City Area (NY Launch Pod)

She tells us about the moment she learned her debut novel was a New York Times bestseller, why she writes from such a specific—and jewish—place, and why people are always asking her about Philip Roth. Our Gentile of the Week is Umber Ahmad, the banker-turned baker behind Mah-Ze-Dahr bakery in Manhattan's West Village. She brings us their delicious old-fashioned donuts, which are made with buttermilk, lemon zest, and vanilla bean and are fried and then glazed. She tells us about growing up in Northern Michigan to Pakistani immigrant parents, and learning from a young age to use food to tell stories and create community. Her question for the hosts is about how food became such an integral part of the Jewish holiday calendar. Email us at Unorthodox@tabletmag.com or leave a message at our listener line: 914-570-4869. Natasha Pickowicz represents the new breed of pastry chef--they’re busy, curious, creative, and political. Natasha oversees the teams at not one, but two acclaimed restaurants in Manhattan: Flora Bar at the Met Breuer museum and Café Altro Paradiso, where she turns out beautiful desserts and baked goods, from her grey salt sticky buns to her bombolini alla crema. She contributes her work to cool happenings around town, like the Wifey cafe-gallery pop-up in Brooklyn last fall, and she helps organize important food moments, like last year’s all-star bake sale that benefited Planned Parenthood. The sale is back this year and will take place Sunday, April 8th, at Café Altro Paradiso, and features yet another amazing roster of talent, including Erin McKenna’s Bakery, King, La Newyorkina, Mah Ze Dahr, Poppy’s, Ovenly, Otway, and The Smile. If you’re going to the sale, go early. Tune in to this episode to hear how Natasha went from English Lit major to one of pastry’s brightest talents, what her pastry resolutions were, and how to soak your cake layers.
