That shift led him to start farming organically on his own and to establish an industry-related consultancy. In 2004, he co-founded The Cornucopia Institute and built a reputation as one of the most recognizable and effective organic industry watchdogs. In March 2016, we connected with Mark Kastel of Wisconsin's Cornucopia Institute in Ojai, California. He was at Farmer and the Cook cafe & organic market to present a talk on Protecting the Integrity of Organic Farming and lead a discussion with the assembled audience of activist foodies.
Mike interviews Mark Kastel of Cornucopia Institute to discuss the Institute's report "Scrambled Eggs: Separating Factory Farm Egg Production from Authentic Organic Agriculture." The gold standard in organic egg production, according to Mark, is smaller, pasture-raised flocks, and these are the farms that earn the coveted 5-egg rating in the accompanying egg scorecard. At about 14 minutes, Mark starts drawing a distinction between pasture-raised and enhanced outdoor access. Enhanced outdoor access (a 4 egg rating), he says, is what mainstream organic consumers think they're getting, but the prevailing marketplace reality is not even close. His professional practice included political consulting, lobbying on behalf of family farm groups, and business development work benefiting family-scale farmers. Mark played a key role, through his research and policy work, in bringing great media scrutiny to the horrors happening to cows and on dairy farms using rBGH, a synthetic hormone used to increase cow’s milk production on dairy farms beginning in the 80’s.
