“LEAVE THE SQUID, TAKE THE CANNOLI.” Italy wins the Euro Cup, so we talk cephalopods.

In the latest episode, and in honor of Italy's historic Euro Cup win, a roundtable takes on its favorite and not-so-favorite Italian meals. I'm joined by fellow gastronomers Ms. Nic MoneyPenny and Mr. Eric Heras. (Nic lives in England, and Eric does not.) Is fried calamari the bellwether of a good Italian restaurant? “To anchovy or not to anchovy? That is the question.” Speaking of which, how many of us think that a Caesar salad is anything more than a bowl of green water? (I kind of liked them until I heard our guest demolish it.) You want to know -- NEED to know -- the answers to these and other risotto-related questions. But just so we're clear, we are NOT going to talk about pizza and especially not about pineapple on pizza. We did that last episode and it caused a ruckus. Be sure to listen to that episode first. Join us for a lively discussion with call-in questions from an audience on Greenroom from Spotify. THIS NEW YORKER has strong feelings about what a "real pizza" is and also what goes on top. But America, after all, is the "Land of the Free and the Home of The-Differently-Inclined-People-Who-Sometimes-Have-Wrong-Ideas-About-Pizza-But-In-The-End-It's-E-Pluribus-Unum." The host and eight guests, from California to Texas to New York to Finland and to the Middle East, weigh in on their idea of the ultimate pizza. My conclusion? An "everything pizza" just might be my favorite. "Black pudding" is not pudding. Mince pie is only a de-commissioned fruitcake. And "toad-in-the-hole" is... Well, tune in to this week's episode. Independence Day in the United States is when we celebrate throwing off a King's yoke. Yet, some of us also mourn the disappearance in the American diet of such English staples as Welsh Rarebit, Hobnobs and Jaffa Cakes. I'm joined again by periodic guest Paul Aldred from the United Kingdom. Paul sets me right on all the things I thought the Brits had wrong. When COVID hit Denmark, Sebastian (IG account @sjsousvide), like all of us, had to find ways to make the most of being stuck at home. He turned to cooking. He is now a home chef who is a craft beer and beef connoisseur. Sebastian also takes mouth-watering food photographs, some of which are used to promote Danish restaurant Steak-out and its amazing food (IG: @steakoutdk). Sebastian and I talked about cooking sous vide versus other options, finding a high temperature torch -- I pictured a flamethrower -- to get a good sear on certain dishes, and his favorite cutlery. My guest this week is Elyse Goode. Elyse and her husband Chad are veterans of the U.S. military and also Traeger grill enthusiasts. When their three children were very young, Chad was deployed, and after a long day Elyse found a bit of peace grilling her meals with, as she says, "perhaps a glass of wine or two." But why are Traeger owners so passionate about these grills?! Traeger is not sponsoring this episode, but they might as well be, because both Elyse and I give the grill two thumbs up. (To be clear, that's four thumbs in total.) Listen in as we talk about grilling, family and a whole cooking community. Elyse can be found on Instagram at @goode.ventures. U.K.-born and -raised Paul Aldred is of Jamaican heritage. In this episode of Biscuit Aisle, Paul talks about the influence of his parents' cooking and also how a Jamaican wedding ceremony is followed by a huge and celebratory reception with enough food to feed hundreds of guests for hours. Whether we're accustomed to wedding receptions like that or not, one thing many of us from different backgrounds have in common is how meals bring people together around a table. Mealtimes can bring harried and busy parents and kids together, and they can also be mutual meeting grounds for opposing parties. Most often, however, mealtimes give us a reason to be together and to forge or strengthen bonds. --- This episode is sponsored by · Anchor: The easiest way to make a podcast. https://anchor.fm/app --- Send in a voice message: https://anchor.fm/biscuitaisle/message

We sons love our mothers. Period, end of story. Join me for this special Mother's Day episode as my guest and I discuss growing up with Superhero Moms. Somehow, these women get food on the table for us kids who are always in the "eat-and-run" mode. Older and wiser, we hope, we take a few minutes today to remember them and their selfless sacrifices on our behalf. If you are a mother and especially a mother of small boys, I think you'll be encouraged to know that one day, your love and hard work will be truly seen and deeply appreciated. GUEST NOTES: Michael Cannell is a New York-based author whose latest book is "A Brotherhood Betrayed." It's the true story of Abe Reles, "the executioner-turned-informant whose curious death became gangland's greatest mystery."
