POPULARITY
Why This Episode MattersPaul Clarke explains why Imbibe has lasted 20 years by staying consumer-focused, independent, and credible. It's also a great look at how cocktail culture changed over two decades, from teaching people the basics of a proper sour to telling deeper stories about the people and ideas shaping what we drink now.Mark Pascal and Francis Schott connect that editorial philosophy to hospitality itself: lead with quality, tell the truth, and earn trust over time.Along the way, the episode covers Negroni Week, the Imbibe 75, independent publishing, cocktail storytelling, and why bitterness eventually wins people over. The BanterMark and Francis open with a riff on awards-season humility, noting that in restaurant life, humility usually comes from service failures and hard-earned recovery—though they're not above enjoying a medal when one comes their way.The ConversationPaul Clarke, executive editor of Imbibe Magazine, talks about building a drinks publication that serves both curious consumers and serious professionals without losing clarity, rigor, or pleasure. He explains how the magazine explores “liquid culture,” with attention to the people, places, and ideas behind what ends up in the glass. The discussion also traces the rise of modern cocktail culture through the lens of the Negroni and its many descendants, while highlighting Imbibe's role in shaping conversation through projects like Negroni Week and the Imbibe 75. It's a smart, funny exchange about editorial standards, independence, and why good drinks writing should be as engaging as the drinks themselves.Timestamps00:00 – Banter: what “humbling” really means in the restaurant business05:00 – Why Imbibe works: consumer-first, not trade-first11:00 – Trust, credibility, and the line between editorial and advertising16:00 – 20 years of cocktail culture: from basics to “liquid culture”20:00 – Good writing is a big factor in Imbibe's success24:15 – How independence key to Imbibe's survival28:00 – How Negroni Week began and why it became global34:00 – The resurgence of the Boulavardier40:00 – The Imbibe 75 and the people changing how the world drinksBioPaul Clarke is the executive editor of Imbibe Magazine, an independent drinks publication celebrating 20 years in 2026. Hennessy is the drink of choice for many in the Black community. Nas, Rakim and several other rappers have endorsed it. Many more rappers have made tracks laced with references to Hennessy...aka da Henny. Personally, I prefer Jack Daniels, but even that will be discussed. https://www.youtube.com/watch?v=F5Bz2PQsW1o On the road to success, many people will tell you many things. One thing you'll likely hear is that you need to improve your golf game. Deals are made on the golf course, they say. And if you can't play - or don't play - you'll be left out of the inner circles of power. One thing you likely haven't heard - until you finish listening to this episode - is that you need to improve your drink game. You see: after you come of the golf course, you'll end up at the 19th hole for the game after the game. And while deals may be discussed on the golf course, they are finalized on the 19th hole...over drinks. Big sales? Finalized over drinks. New clients? Finalized over drinks. Fast-track promotions? Finalized over drinks. And it all depends upon what you drink and how you drink what you drink. And...Hennessy is beneath you... Or at least it should be beneath you - when you aren't at home. Or at least that's what Je'Wesley Day of Cocktail Chronicles is trying to teach you. In this episode, Je'Wesley will give you some tips on how to improve your drink game. Many say you need to dress to impress. And Je'Wesley encourages you to also drink to impress. You can find out more in the article from Ebony Magazine listed below. It's the Bartender Journey Podcast number 190! Listen with the audio player on this page, or subscribe on iTunes, Android or Stitcher Radio. It’s a constant in the Hospitality Industry….we are on our feet for hours and hours. How can we make it better? I don’t know about you, but my feet hurt ALL the time! This week on the show we talk with an awesome lady – a doctor, a podiatrist, a holistic healer and she is going to help us with our foot pain! We will talk with Dr. Michele Summers Colon today on the podcast. First, a few important events coming up: San Antonio Cocktail ConferenceFri Jan 6-Sun Jan 15http://sanantoniococktailconference.com/schedule/ BarSmarts Advanced Atlanta - February 9, 2017 BarSmarts Advanced Milwaukee - March 29, 2017 Book of the Week: Once again our BOTW comes to us from Hazel. You’ve heard me talk about the mysterious Hazel before on the show, well next week, we are going to get her on the show and talk about Personal Branding for Bartenders. She’s a Marketing Guru, and it promises to be a great discussion. Here’s our Book of the Week from Hazel: The Cocktail Chronicles: Navigating the Cocktail Renaissance with Jigger, Shaker & Glass by Paul Clarke who started writing about the craft cocktail movement even before the term “craft cocktail” became commonplace and is a recipient of the Tales of Cocktail Spirited Award for Best Writer about Spirits and Cocktails. The Cocktail Chronicles covers the beginning of the modern cocktail renaissance, offers classic recipes and their modern takes and also features a chapter called “Bottles, Tools, and Tips” that discusses stocking your liquor cabinet and the best tools. Jim Meehan provides the foreword and each recipe is preceded by its history. The book is an accessible guide to both professional bartenders and cocktail enthusiasts featuring over 200 cocktail recipes written in a fun and engaging manner and is a great reference guide to have on hand. Paul’s a good guy – we’ve got to get him on the show one of these days. Featured in the book is the classic cocktail the Blood and Sand, and that will be our Cocktail of the Week. The recipe for the Blood & Sand first appeared in print in Harry Craddock’s 1930 The Savoy Cocktail Book. This is an equal parts cocktail: .75 oz Single Malt Scotch Whisky .75 oz Sweet vermouth .75 oz Cherry Heering .75 oz Orange juice Put all the ingredients in your shaker and fill with ice. Shake, and double strain into a chilled coupe glass. Garnish with an orange peel. Very nice cocktail indeed. Dr. Michele Summers Colon is not only a Podiatrist, but A physician, surgeon, health coach, yoga teacher, anatomy instructor, author and overall health & wellness expert. We are very happy to have her on the show to talk about something that many Hospitality workers struggle with – foot pain! Lots of useful information there. I hope it helped you out a bit…I know it did for me. Toast of the Week: Here’s to those who have seen us at our best, And seen us at our worst, And can’t tell the difference! Cheers.
