Jim Griffith and Jim Maples are the creators and hosts of the Revolutionary War Rarities Podcast - the official podcast of the National Society Of The Sons Of The American Revolution.  I recently discovered this show and was immediately drawn to it because of my love for Revolutionary War History as well as my membership in the Sons Of The American Revolution.   I kept coming back and listening to the podcast because it is so interesting and entertaining.  Jim and Jim do a great job coming up with stories, putting together the episodes and then presenting them.  They are a really good broadcasting team, and their voices are already synonymous with the American Revolution for me.   On today's episode I get to speak with them both, talks about the origins of this show and where it is going.  We will even touch on some interesting facts about the Revolutionary War as talk a little bit about agriculture and farming was used as a tactic to defeat the British!

Jim Griffith is a musician and art center director. He got his M.M. degree from the Juilliard School in 1987, his undergraduate degree from the Manhattan School of Music, and attended Florida State University. He’s been a member of the Hudson String Quartet in New York and director of the New Arts Festival in Fort Myers. He formerly served as principal violist of the New York Pro Arte Chamber Orchestra, and the New York Virtuosi, and he’s played with a bunch of other orchestras around the country over the years. He’s been with the Naples Philharmonic since 1989. In 1997 he formed a nonprofit called Florida Arts, Inc. in order to create a home for the arts in downtown Fort Myers, and he managed the founding and development of the Sidney and Berne Davis Art Center.

During today’s episode, host Andy Chapman explores Louisiana’s hog harvest and the deep-rooted tradition of a community preparing the pork for winter. The Boucherie event at White Oak Plantation celebrates a sacred event where 300 years of culinary history will be served up in a single day. In this special episode, you’ll be guided thru this event and experience the sounds of the day while hearing the participating farmers and chefs describe their specialties, processes, and respect for the animal that gave up his life to feed the community.  After the Butcher’s prayer, Brian Kazar shares his thoughts on how the annual event supports the local community and about the local farmers who raise the hogs with love and care and harvest them in a respectful manner. Master of Ceremonies, Tank Jackson of Holy City Hogs describes his hog farming operation which includes heritage breeds and heritage hybrids including the two rarest pigs in the world, the American Mulefoot and the Ossabaw Island hog. Thibodaux, Louisiana native, Chef Jean-Paul Bourgeois was part of the coordination team that put together this year’s Boucherie. He is using the blood of the animal to create a smooth, blood sausage. Just outside of the Boucherie in the horseshoe of preservation stations: Acre Restaurant Chef Jeff Compton and Bow & Arrow Chef Caleb Fischer from Auburn, Alabama are preparing and drying Moose and Ryeberry Salami, Fenociona, Salami Picante, and a Texas Hot Link sausage. The Chefs will have to wait to taste it as some salami will hang for two years for curing. Jim Griffith from the Johnson & Wales Culinary Institute describes his technique and the importance of making head cheese. At the sausage table, Matt Morland of Wayne Jacobs Smokehouse and Restaurant in LaPlace, Louisiana shares the important local history, seasoning, and smoking of Andouille sausage. Why should we get into a stranger’s car – or buy a stranger’s laser pointer? In 1997, eBay introduced a feature that helped solve the problem: Seller Feedback. Jim Griffith was eBay’s first customer service representative; at the time, he says “no-one had ever seen anything like [it]”. The idea of both parties rating each other after a transaction has now become ubiquitous. You buy something online – you rate the seller, the seller rates you. Or you use a ride-sharing service, like Uber – you rate the driver, the driver rates you. And a few positive reviews set our mind at ease about a stranger. Jim Griffith is not sure eBay would have grown without it. Online matching platforms would still exist, of course – but perhaps they’d be more like hitch-hiking today: a niche pursuit for the unusually adventurous, not a mainstream activity that’s transforming whole sectors of the economy.
