You might learn some AI insights as well.9:35pm - Did you know that BBQ pork ribs were once considered the most vile items on the earth? True story (mostly) and tonight, our pal Robert Moss will tell us all about how this highly revered BBQ meat of today was able to turn the corner from "trash meat" to "favorite BBQ item" on most menus. Episode 398Taking you back to September 15, 2011, we are excited to feature a truly pioneering figure in the history of our program. I would confidently assert that she was the program's very first "Embedded Correspondent," a concept she embodied long before the EC format became a familiar and established part of our show. Her name is Kelly Dodd, and we encourage our audience to consider if that name sparks any recognition.Fourteen years ago, Ms. Dodd was a vibrant young enthusiast immersed in the thrilling world of competitive BBQ. Her involvement stemmed from her father, Brian, who served as the esteemed pitmaster for the renowned team, "Whoose Smokin'." It was Mr. Dodd who initially reached out to me with a compelling proposal: Kelly could conduct on-site interviews directly from the heart of these high-stakes BBQ competitions. At that time, competitive BBQ was experiencing a surge in popularity, captivating a wide audience with its blend of culinary artistry, intense rivalry, and vibrant community. Kelly's natural charisma and insightful questions allowed her to secure some truly exceptional interviews. In fact, the segment you are about to hear is a testament to her groundbreaking work, featuring conversations with some of the most distinguished and legendary competitive BBQ teams of all time, offering a unique glimpse into a pivotal era of the sport.Ready to make a “BEST OF” show all your own?? BONUS CONTENT:What's going on, BBQ Central fans? You know that new song we've got, "Get In The Smoke"? Well, I've just been told that some other podcast is doing a full-on deep dive into it. I'm not sure what they're going to find, but I'm flattered they're digging into our new theme. You'll have to let me know what you think. And while you're at it, fire up the pit and get in the smoke with me.
Taking you back to - 8/30/2011 - Thai week featuring one of the most special people in BBQ and in my BBQ and personal life…Diva Q, Danielle Bennett. For those who know Danielle in the recent years of her career, you know her as an author, a cooking instructor and a TV show host…amongst other things. However, Danielle was also quite a successful BBQ competition cook…and in this segment, we talk about how she had been recently DQ'ed at a contest right off the rip at her chicken turn-in. Danielle talks in-depth about this whole thing, what led to it and where the blame falls when it comes to this DQ.Oddly enough, 2011 was a year where many top pitmasters were getting DQ'ed for missing the turn in window at the events they were cooking in.BTW…Diva Q in Hartville on Sept 20th at Grillfest…it's going to be a blast!Ready to make a “BEST OF” show all your own?? Also, interesting to hear what Steven was talking about and finding important 17 years ago vs. what best practices dictate in 2025…some things similar…somethings…not so much.Lastly…and this is all about me…but CRIPES…why do I sound like that??? I don't like the way I sound those first few years…not sure what I was using from an equipment stand point…but the higher “nasally” sound, to me, is a bit off-putting…however, you may not share the same viewpoint as me…which is fine as well.Ready to make a “BEST OF” show all your own?? Thank you to sponsor of this episode: Green Mountain Grills________________________________________________ Episode 384Taking you back to 3/24/2016 and this week we feature a gentleman who was a semi-frequent guest of the show when he was at Weber Grills…that being Kevin Kolman. Back in March of 2016, Weber was trotting out their new “Weber Summit Charcoal Grill”. It came in a few different variants…one more expensive than the other…many considered it to be a bit overpriced when it came out considering what it was…however…that sentiment quickly went away once you realized how different this was from a traditional kettle cooker. However, the most notable part of this launch was that Weber was going OUT OF THEIR WAY to say that this grill was not looking to compete in the ceramic grill space…there were (Are) a number of things that could actually go head to head when compared to a Ceramic cooker…but Weber saying this was not a ceramic killer. Then, a few years later, they changed the name of the Summit Charcoal Grill to the “Weber Kamado Grill”...because it's not competing in the ceramic grill market…right??? OK!!Confusing marketing and branding aside…let's mention the most important fact…everyone who has this cooker LOVES it. Very versatile, very fuel efficient, very easy to control temps…in fact…many people say that this is the grill they would take with them if they were stranded on an island and could only bring one cooker with them…so that says a lot. I would take one for sure…Weber…if you're listening…I would take one.Ready to make a “BEST OF” show all your own?? Email Jon Solberg and let him know what you would like to hear on a future episode! Within the minutes of this segment, Sterling really goes all in on his chicken process at the time…talks about time, temp and what the judges might think of texture at certain temperatures. He also was very open about how the whole competition scene was changing at this time in 2015. Very interesting to hear a top cook talk about things he's working on both “in competition” and also trying to just become better from a high-level as a team. If you don't know Sterling, hearing him talk in this segment will certainly make you appreciate what he has been able to accomplish in the bbq competition scene…amongst other industries.Ready to make a “BEST OF” show all your own?? This was an organization under a different management/ownership group back in 2018.This was actually a re-release from the show that happened…allowing myself to set up the rant a bit better than I did when it happened live on the show…so, if you like me and rants…you will want to take this Best Moments show this coming Friday.By the way…I will remain steadfast in my take on the AOE…you pay to enter…someone will win because they paid…and that's it. In fact, I think there was ONE entry in the “BEST PODCAST” category this year…certainly less than 3…so you have 3 to choose form because that's all that paid…I am always skeptical about these kinds of things…just me…but be sure to tune in this coming Friday to hear the classic rant.Ready to make a “BEST OF” show all your own?? However, this particular clips really gives you all the details on what this show was looking to accomplish...it was a pre-recorded supplement piece to the Tuesday show. Now, you might be asking why I forgot about it...easy...I think this show made it (2) episodes in length before Meathead from Amazingribs.com called me and said, hey...I like what's going on here...I have the Pitmaster's Club...and I am looking to get some recurring new content up there for the members...can I buy the concept and have you do the show for me? Within the minutes of this show that Jon has put together, we talk about how he got into competition BBQ and what really drew him into staying in it. I don't know what my side of payment would have been had I lost…but I didn't lose…so no matter. HOWEVER, Chad lost…and his side of payment was, that if he lost…which he did…he would have to come on the show and shave his head and his carefully manicured “chin beard”...which is very important to Chad…and Chad's lady friend at the time, who loved the hair and the beard, is the one that actually did the shaving…I don't have any idea where the video would be on this…but the audio is pretty great…so be sure to grab it this Friday!!Ready to make a “BEST OF” show all your own?? In this episode, Dave and I talk about a topic that I have mentioned a number of times on this show…that being Horsemeat. Dave and I talk about the general topic, why horses are different and what the thoughts of horse meat consumption are across the country…because it is not the same thought across the globe. Dave brings up some REALLY good points that make a lot of sense to the folks who are open to listening to them…but for the majority of you whom are not open to it…you will take a shit on it like you would do otherwise…and I will continue to try and keep this as a grassroots movement…regardless…I think you will enjoy the segment no matter what side of the fence you are on.Ready to make a “BEST OF” show all your own?? In this episode we dove into the fascination that many folks in Wisconsin (and the surrounding areas) have with “cannibal sandwich”...basically raw ground beef, on rye bread squares topped with raw onion and black pepper...100% gross. So we talked about that topic, the safety concerns that surround it and so on…we even talked a little bit about the BBQ HOF…Meathead says that he anticipates that he would never get in…history would prove otherwise, of course, as he made it in a few years ago…so get ready to go back 8 years ago and learn about the BBQ HOF and raw hamburger meat eating.Ready to make a “BEST OF” show all your own?? So, this Friday you will journey back with me as we take a look at the top guests, stories and everything else that Jon jammed inside 8 minutes to wet your whistle to hopefully go back and check out the whole show.Maybe, in 2025, I will do a my best to keep weekly notes on the show to do a recap show at the end of the year…those are always fun…but I also feel like those are lame and require very little work because you are just puking back what's already happened…so I probably won't do a recap…but maybe…I am a hypocrite who is always living right in the middle of hypocrisy!Ready to make a “BEST OF” show all your own?? In this segment we talked about his 2013 competition season and we also talked about the WFC…which was in its sophomore season at that time. Bob won the ribs category that year and we talked about that as well.Interestingly enough…during Jon' s talk out of this week's show, he mentioned that Bob Trudnak is one of, if not the most, under-vslued people in the industry…I have to say, I am not in a position to disagree with that statement. I know there are those of you who go way back with the show and you know what Bob has accomplished…but there is a new generation of live-fire enthusiasts who probably have NO IDEA who Bob is, what he's done in the industry and what he has accomplished on the competition and business side of things…it's just a name…so I will agree with Jon on this…Bob is highly under-valued in regards to his whole body of work in this industry…and from a show perspective…has been associated with me since DAY ONE…legitimately DAY ONE!Bob, hope you are well…hope you are having a great holiday season…and look forward to catching up with you next year!!!Ready to make a “BEST OF” show all your own?? Episode 268 features a candid interview with Greg Rempe, host of the BBQ Central Show and we explore 3,000: Baseball's Elite Clubs for Hits and Strikeouts with Author, Douglas J. Jordan, plus we discuss the possibility of the Golden At-Bat Rule Greg Rempe is the creator and host of the longest running and most listened to show dealing with live fire cooking, The BBQ Central Show. He has been extremely supportive of our show with advice, support, and encouragement. We wanted Greg back to learn more about him, his show, what it takes to produce a successful podcast, his opinions on barbecue and baseball and much more. His show can be heard live every Tuesday night from 9:00 pm to 11:00 pm and is released in podcast format; the first hour on Wednesday and the second hour on Thursday. Then on Fridays you can catch up on parts of past episodes listening to The Best Moments of The BBQ Central Show in 10 Minutes or Less. You can find out more about his show by going to http://thebbqcentralshow.com/ Douglas J. Jordan is a retired college professor. His baseball articles have been published in the Baseball Research Journal and NINE: A Journal of Baseball History and Culture. He joins us to discuss his newest book, 3,000: Baseball's Elite Clubs for Hits and Strikeouts. This book goes into detail about the elite players in each category, describing how they collected their historic hit or strikeout and their age at the time. Discover the pitchers who gave up a 3,000th hit and the victims of a 3,000th strikeout. This book covers the near-miss men, the ones who almost made it to the milestone, and predicts which players might reach 3,000 hits or strikeouts next. This comprehensive volume tracks all players who have reached this impressive achievement, all who missed it by a hair, and some who might be poised to claim the title. We conclude the show with the song, Baseball Always Brings You Home from the musician, Dave Dresser and the poet, Shel Krakofsky. We truly appreciate our listeners and hope that all of you are staying safe. If you would like to contact the show, we would love to hear from you. This segment was done on the Embedded Correspondents segment…from length of time to wait to hear awards to feeling like the BBQ event was treated as a second class citizen, to rules not being clearly written, to people and teams not getting checks on time…Doug really…GAVE IT…to that version of the WFC…so much so…as to say he would never be going back to this event again…EVER!The best part of the segment is the former Tennessee EC, Steve Ray, telling Doug that DOUG was the only one who didn't seem to know the rules…so classic!Ready to make a “BEST OF” show all your own?? What's even more special about this show…holding Sam to the side…is that this is one of those “Wednesday” shows…remember, there was a short but definitive period in time when the show DID IT LIVE on Tuesdays…and then did an additional hour on Wednesdays!! It was so long ago, I forgot that I did that…this show took place in the basement of my Amy and Ed Levon's house…Yes, of the Wickliffe Levons…because I was in housing transition at this point in time…had to move out of my current home because renters needed in…home we were building at the time wasn't finished…so had to move in with the in-laws for about 8 weeks until everything was done…so I was doing all shows from their basement…they let me take it over, set up the studio and DO IT LIVE from there basement…WOW…that was a time! There is actually a show that Job did a number of months ago where he featured Amy Levon as a guest…we talked about how her, then, young son had an aversion to mashed potatoes…I know…CRAZY!!Anyway, check out the Best Moments show this Friday and listen to a Wednesday show with me and Sam The Cooking Guy talking about Thanksgiving.Ready to make a “BEST OF” show all your own??
