Season 5: Episode 205In this episode of North American Ag Spotlight, Chrissy Wozniak welcomes back Matt Durian, Livestock Manager at the American Royal, to discuss the highly anticipated 2025 American Royal Spring Youth Livestock Show. The American Royal, a Kansas City tradition since 1899, has long been committed to championing food and agriculture. After celebrating its 125th anniversary in 2024, the organization is excited to bring back the Spring Youth Livestock Show for a second year, offering young exhibitors another opportunity to showcase their skills.Taking place from March 28-30, 2025, this year's show comes with an exciting addition—$3,000 in prize money for champions and reserves across all species, thanks to generous donors. Matt shares how this funding was secured and what it means for exhibitors competing in the non-terminal show. Unlike the fall show, the spring event offers expanded weight limits, making it more accessible to exhibitors with younger livestock that are not yet market-ready.Matt and Chrissy also discuss the unique role of the American Royal in educating the public about agriculture. The Spring Show will include an educational component, with a livestock judging clinic hosted in partnership with Northeastern Oklahoma College. This clinic will provide hands-on learning experiences for FFA students, aspiring judges, and anyone interested in improving their livestock evaluation skills.Reflecting on his background in California agriculture, Matt highlights the rich farming and ranching history of his home state and the misconceptions he has encountered since moving to Kansas City. He also shares the rewarding experience of welcoming first-time exhibitors to the American Royal, noting that 90% of last year's Spring Show participants had never competed at the fall event. For those attending the show, Matt offers recommendations on must-see Kansas City attractions, including the city's renowned barbecue scene and opening weekend for the Kansas City Royals—named after the American Royal itself.Listeners interested in participating in the show can register at AmericanRoyal.com, where they can also purchase tickets and learn more about the event. Those looking to support the American Royal can explore sponsorship opportunities or volunteer to help make the show a success.Tune in to this insightful conversation about the future of youth livestock exhibitions and the ongoing mission of the American Royal to inspire and develop future leaders in agriculture. On today's episode of HowToBBQRight Podcast, mark your calendars for November 14th at 6pm CST for our Turkey Talk Livestream (00:00)! Thanksgiving is almost here, and some of us are really excited (01:11). There were some familiar names called at the American Royal this year (05:30). What is a “Warming Mat”, and why am I breaking it out at Thanksgiving this year (08:16)? Malcom rolled out his first turkey recipe of the year, and it's worth the 72 hours it takes (10:30). If you're looking to tighten up that turkey skin, here's the BEST way to get that bird crispy (27:36). Should you be brining AND injecting your bird, this Thanksgiving (30:39)? Pellet Grill turkeys are better than every other turkey, hands down (31:54). Looking for a new grill to add to your arsenal? Primo Ceramic Grills has you covered (38:43)! He's no expert, but here are some tips from Malcom about how he carves turkey (39:19). After years of cooking turkey, what is Malcom's number one thing he has learned over the years (42:06)? These turkey breast roll ups sound dynamite (46:20). Malcom shares a few of his turkey catering tips for the holiday season (48:49). From start to finish, here's how Malcom smokes his briskets on a pellet grill (51:17). Can you hold the temps steady on a pre-sliced brisket when traveling (55:38)? Make sure all plastics are removed from your coals before lighting them up (57:57)... Instead of using foil, can you use a half pan to wrap ribs and put them back on the grill (59:23)? Don't ditch those pork butt juices, ALWAYS incorporate them back into your meat (1:00:17)! These are the best places to eat and drink in New Orleans (1:03:03).
On this week's episode, we're discussing our Thanksgiving favorites, the best way to cook a turkey, and recapping the American Royal.
Swing and a long drive, deep left field … back, back, back … GONE! To borrow a baseball analogy, John Shirey II of Chunky BBQ hit the ultimate open-fire walk-off over the weekend at Kansas Speedway. Shirey and wife Stephanie won the 44th annual American Royal World Series of BBQ Open Grand Championship - a field of 444 teams from around the globe. Not only was it a major championship, it vaulted the Hershey, Pennsylvania team to KCBS Team of the Year honors by one point over 2023 champ Janky Leg BBQ. What a feat it was and on Episode 284 of the Tailgate Guys BBQ Podcast, we visit with John about the thrill, the nerves, the aftermath, the exhaustion and what's next for Chunky BBQ in 2025. We also review our American Royal weekend where the Tailgate Guys competition team got to take a treasured walk for the third time in four years, this time with an 8th-place in baked beans. Some of our other scores also were pretty darned respectable as well (and some weren't) to cap a trip that had its challenges from a blown trailer tire en route to heavy rain on cook morning. A special shout-out to our friend Marty "Sign Man" Prather for supporting our Royal journey. Charlie Wallace of The Grill Guys of Missouri stops by for a rundown of their venture into competition at Wingapalooza in downtown Springfield, where they took home some hardware. On today's episode of HowToBBQRight Podcast, I'm decked out for our Halloween costume contest here at The Shop (00:13)! We're bringing on Kevin from the Butcher Shoppe to discuss the in's and out's of owning a butcher shop (04:49)! These are the BEST and WORST Halloween candies, in our opinion (07:11). Looking for a new grill to add to your arsenal? Primo Ceramic Grills has you covered (10:07)! It's time to welcome on Kevin Green from The Butcher Shoppe in Pensacola, FL (10:52)! What is ‘The Butcher Shoppe', and why is it so important to us (11:48)? This is the reality of getting started in the butchery industry (13:59). When did Kevin get involved in owning ‘The Butcher Shoppe' (15:00)? The BEST thing about ‘The Butcher Shoppe' in our opinion is the customer service, and here's why it's so important to Kevin (19:13). How many A5 Briskets did Kevin send the American Royal this weekend (20:43)? The Butcher Shoppe is famous for it's Japanese A5 Wagyu Briskets (23:40), but is the Wagyu you're buying in grocery stores actually real Wagyu (27:04)? If you've NEVER cooked wagyu before, here's Kevin's TOP cuts of meat to start with (29:13). Is dry aging worth the hassle (37:21), or is it more beneficial to go with a wet age (39:36)? What does the owner of a butcher shop like to take home with him to throw on the smoker (41:49)? Other than beef, what other meats does ‘The Butcher Shoppe' keep stocked in the coolers (43:40)? With the holidays on the horizon, here's what you should be on the lookout for this year when shopping for your protein (49:33). What is the MOST EXPENSIVE piece of meat Kevin's ever sold (52:29)? Other than the camel tenderloin Kevin sent Malcom, what other exotic meats does Kevin like to stock up on (54:08)? Finally, what are the BEST BBQ spots to hit while you're in Pensacola, FL (1:00:38)?

We're off to the American Royal World Series of BBQ, but before departure we visited with some folks who are going to be a big part of the weekend. First up is Danielle Bennett, better known in the BBQ world as Diva Q. A championship competition pitmaster before launching a career as a television personality, cookbook author and brand ambassador, Diva Q will be honored on Saturday at The Royal as part of the 2024 BBQ Hall of Fame Class. She talks about her career and if she's offended by the term “female pitmaster.” As usual, she's a great interview. The next time we complain about the weather or wind or whatever when it comes to cooking outdoors, it'll be time to think of Shane Howard and Brenda Harrison. The Colorado pitmasters are blind - but return to cook their second American Royal this weekend as Blind Butt Limitless BBQ. How do they do it? It's far from a novelty act. Shane and Brenda finished 106th among 487 teams at last year's Royal and hope to do even better this time. Either way, they invited you to stop by and see them at space No. 347 and talk some Q. We also check in with Breana Via of Smoke 'n Magic BBQ about their Royal preparation, and Skyler Spartan has the latest from The Grill Guys of Missouri. (November 7, 2023 - Hour Two)One of the best competition cooks to ever light a fire, Travis Clark, joins me to lead off the 2nd hour. Over the past handful of years, only two teams have won the KCBS team of the year title, and Travis is one of those teams (Gettin' Basted is the other). Tonight we talk about any thoughts he has on the 2023 American Royal fiasco, the limited 2023 competition season he's run and we'll look into 2024 and see if he has any interest (or time) to make another run for team of the year. Aside from competitions, Travis has turned into quite a successful restaurateur and business person. Aside from the Clark Crew BBQ brand, he has also gotten into a line of sports bars that will allow him to showcase his other food expertise as well. Travis has never been short on opinionsThe BBQ Central Show SponsorsPrimo GrillsPitts & Spitts BBQ Pits - Use "charcoalcentral" at checkout for $150 Off Charcoal GrillsBig Poppa Smokers – Use promo code “REMPE” for $10 off your purchase of $50 or more!FireboardCookin PelletsPit Barrel CookerFranklin BBQ PitsThe Butcher Shoppe - Save 10% When You Mention "The BBQ Central Show"JRE Tobacco – Makers of the Aladino (and other) line of premium cigars!
(November 7, 2023 - Hour One)9:14pm & 9:35pm - In the first hour tonight I will be joined by the CEO of the Kansas City Barbeque Society, Rod Gray. About 5 weeks ago, there was a scoring issue during the American Royal competition that was unlike any other in the history of KCBS competition BBQ. Wrong winners were announced, places up and down the list adjusted and teams want to know what happened, why it happened and what is being done to ensure that this won't happen again, not only at this event, but at all other competitions across the country. Yes, there have been other interviews with Rod over the past few weeks but there were very important questions that were left unasked for whatever reason. Tonight, we make the time to dig into the most important questions and see if answers will be given. I hope you take the time to tune in live tonight and listen for yourself. The BBQ Central Show SponsorsPrimo GrillsPitts & Spitts BBQ Pits - Use "charcoalcentral" at checkout for $150 Off Charcoal GrillsBig Poppa Smokers – Use promo code “REMPE” for $10 off your purchase of $50 or more!FireboardCookin PelletsPit Barrel CookerFranklin BBQ PitsThe Butcher Shoppe - Save 10% When You Mention "The BBQ Central Show"JRE Tobacco – Makers of the Aladino (and other) line of premium cigars!
(October 31, 2023 - Hour Two)10:14 - BBQ Smokey is back...and better than ever. Well, at least for a few minutes until he realizes where he really is. If you are in the mood for a Halloween related tune with a BBQ spin you won't be disappointed (well, you might be VERY disappointed).10:35pm - There has been a guest booked for this segment for a number of weeks, however, he has gone radio silent the past 10 days leading into tonight. At the time of this release, I am unable to confirm if he will be here or not. If not, I have a number of items to get through that have been sitting in the "content bin" for instances like this! Stay tuned!!PROGRAMMING NOTE: Next Tuesday (11/7) I will be interviewing Rod Gray, CEO of the KCBS. Last week he appeared on 2 BBQ related podcasts talking about the issues that arose during the American Royal Open last month. If you are a competitor or someone who actively follows competition BBQ and especially the KCBS events, you will want to tune in live for this interview. I believe it will be the definitive interview that covers the "what" and "how" it happened at this year's American Royal.
