Otto Othman, founder and CEO of Pincho, joins the show with Scott Kitun. Pincho is a street-food inspired burger and kebab shop based in Miami, Florida. Otto, a former UX designer, talks about the origin story of how he and his cousin originally came up with a plan to sell his mom's pincho kebab recipe by opening up Pincho (formerly called Pincho Factory). Born and raised in Brazil, Otto says Pincho is basically a Latin twist on American classics like burgers, kebabs, chicken sandwiches (salads too) and hot dogs...getting hungry yet? In this fun foodie conversation, Scott and Otto get into the food industry and how to scale a business like Pincho similar to Chicago's iconic Portillo's food chain. Otto talks about how his background in tech helped fuel Pincho's growth during the pandemic - a time when many restaurants are struggling - and growing the fast-casual concept, or as Scott likes to call it, "the athleisure of restaurants". Pincho recently raised $20 million from Savory Fund to rapidly expand its presence across multiple states in Florida and Texas.
Pincho — perhaps better known in South Florida by its original name, Pincho Factory — is a distinctly Miami fast casual restaurant brand that’s grown to 10 locations serving kebobs and burgers. Co-founder and CEO Otto Othman joined us on this episode to talk about his own path from marketing to restaurants, how his Palestinian and Brazilian heritage came together with time growing up in Hialeah to inform Pincho’s take on Miamian casual dining (from the Tostón burger, which replaces the bun with fried plantains, to the Fritanga Burger that takes its inspiration from Nicaraguan cuisine). Otto and Mike also discuss the challenges of the restaurant business, how Otto and his company powered through some uncertain times to take Pincho from a struggling concept to an expanding enterprise with a goal of opening 100 locations, and some of the business and hospitality philosophy that fuels Pincho. On today’s episode you’ll hear Hector and I talk about what he looks for in businesses to be a part of, dealing with failures in business, adapting and changing with the times and more.
This weeks guest is Otto Othman of Pincho Factory. Born and raised in Brazil, Otto moved to the States in 2001. It was during a family BBQ where he and his cousins had some liquid courage and talked about opening a restaurant. Two days later, his cousin called him and asked if he was serious about the restaurant because he was already looking for restaurant space. So, it looked like they were opening a restaurant. There was only one problem, Otto had only worked in advertising and his cousin had little restaurant experience. With $77,000 to their name, the Pincho team was going to open a restaurant. The idea was to create a kick ass menu that was simple, had 8 menu items but the food was perfect. After a few months of testing menu ideas Otto’s cousins called him on Tuesday and said they needed to open on Saturday because they only had $6.27 left in the account. With no team, no employees, no training, they decided to open. On Thursday, Otto threw his birthday party at the restaurant and found a couple of employees to train and get ready for the opening on Saturday. They watched YouTube videos and reached out to anyone who would give them the time of day to ask advice on how to open and run a restaurant. After hours of YouTube videos, social media posts and reaching out to invite everyone they knew, they opened the restaurant with 400 guests and the rest is history. This episode is packed with a ton of great stories and messages. Local favorite Pincho Factory recently opened its second location in the heart of Coral Gables. With chalkboard painted walls, reclaimed wood tables and an inviting atmosphere, the restaurant has quickly been embraced by its new neighborhood. Chat Chow TV sat down with Pincho Factory owner Nedal Ahmed and learned more about the restaurant specialities and the inspirations for the menu. The restaurant gets its name from the skewers – or “pinchos” – that are prominently featured on the menu. Guests can customize them to their liking opting for steak, chicken or shrimp, served in either a salad, rice bowl or pita, with an assortment of sauces and toppings. While pinchos are the namesake, what has really made the restaurant a dining destination is its over-the-top burgers such as its Toston Burger, which was recently featured on Travel Channel’s “Burgerland,” and its Pastelito Burger. The menu also features a selection of weekly food special depending on Ahmed’s mood. “The chalkboard specials usually reflect what I’m craving that week,” said Ahmed with a laugh. “Occasionally it’ll have something to do with the season, but usually its revolving around my cravings. The restaurant is open for lunch and dinner daily, until 1am on Friday and Saturday, and even features a decadent brunch on Sundays serving up items such as Red Velvet Pancakes and Banana Bread French Toast.
