Chocolate Maven Loyd Auerbach is a lifelong Foodist who got heavily involved in learning as much as he could about that dark stuff, Chocolate, in the early 2000s. This led him to begin conducting guided chocolate tasting sessions for audiences big and small and significant further research. While interviewing famed chocolatier Joseph Schmidt in San Francisco, it was suggested he learn to be a chocolatier himself – and so he did, earning a Professional Chocolatier certificate from Ecole Chocolat in 2009. The following year saw him begin to produce some of his own unique products, mainly “ghost drops,” under the banner Haunted By Chocolate, which he sold in small lots for several years along with special truffles he still makes today (though only for special people/audiences).Auerbach is also a world-recognized paranormal expert/parapsychologist with a graduate degree in Parapsychology and thousands of media appearances. He is the coauthor of the new paranormal mystery novel Near Death: A Raney/Daye Investigation, and the author or coauthor of nine paranormal books including Psychic Dreaming, Mind Over Matter, ESP Wars: East & West, The Ghost Detectives' Guide to Haunted San Francisco, and the classic ESP, Hauntings and Poltergeists. Pam Williams is somewhat of a legend in the world of chocolate. She’s been in the industry for over thirty years, and she’s been teaching the business of chocolate at Ecole Chocolat since 2003. The school offers classes in chocolate making from bean to bar, chocolatiering, and all the other courses you’d need to start up your own chocolate business. It’s largely responsible for spreading the craft chocolate movement from North America to Europe and beyond, because this school is entirely online. I had the pleasure of interviewing Pam for the most recent episode of this chocolate podcast—which you can listen to here— but her story is so interesting that I knew I had to share more of it. So here’s a blend of Pam’s life experiences, perspectives, and the little stories that have made her the person she is today. Biography: My Chocolate Soul grew out of Ramona Thomas’ love of baking and sweets, especially chocolate. Although she had baked for many years, the initial idea for starting the business came after taking an introduction to French pastries course at the French Pastry School in Chicago. Before transitioning to the dessert industry and founding the company, Ramona had an entrepreneurial career in education and philanthropy for 18 years. She holds a B.S. in Applied Mathematics from Brown University and a Ph.D. in Higher Education from the University of Pennsylvania. But Ramona felt so at home in a commercial kitchen that she began thinking about how she could spend more time in one doing what she really loved. Ramona is a graduate (with honors) of Ecole Chocolat’s Professional School of Chocolate Arts Professional Chocolatier Program. Her recent television credits include parts on Super Girl, iZombie and Haters Back Off, Frequency and Second Chance. A multi-dimensional creative, Jasmine has founded and/or contributes to a numbers of businesses: In 2014, Jasmine founded The Blenderist as a single-contributor food blog. Two years later, she started The Black Food Bloggers Club, which she has grown into a lively and focused community. In 2017, she was inspired to promote diversity in food blogging by building out the Black Food Bloggers Club and converting The Blenderist into a multi-contributor site featuring the contributions of BFBC members. Jasmine is a proud teammate of Bjork Ostrom's at Food Blogger Pro, where she heads up the affiliate program and designs graphics for the FBP blog and podcast. Jasmine helps clients solve design and marketing problems, collaborating on branding and design projects with her artist partner Chris through their creative agency, RXVP. A passionate lover of chocolate, Jasmine has a certificate in Chocolate making from Ecole Chocolat. She co-founded Chocolate Codex, an informational resource for consumers looking to expand their chocolate knowledge and appreciation. Chocolate Codex features "tasting notes and commentary on chocolate from around the world" and offers "(totally unscientific) tasting guidelines to serve as a prompt to help tasters and readers develop their own tasting vocabularies." Jasmine lives in Vancouver, British Columbia with Chris and her grumpy chihuahua. Today on the Farm Report, two chocolate experts call in to tell Erin all about what gives chocolate the "fine" label. Pam Williams and Dan Pearson founded Ecole Chocolat and Marañón Chocolate, respectively. Both of today's guests helped found the Fine Chocolate Industry Association and its recent initiative the Heirloom Cacao Preservation, which seeks to save pure cacao beans from extinction. Pearson discovered a source of 40% white cacao beans while working as a businessman (and sourcing bananas) in Peru. He learned of the bean's rarity after sending it to the USDA for genetic testing, and has since teamed up with Pam to raise awareness on the possibility of such fine beans' extinction.
Richard's journey to become a Master Chocolatier began in 1995. In his pursuit he has spanned the globe from Ecole Chocolat in Vancouver to Ecole du Grand Chocolat Valrhona in the Rhone Valley of France, studying and fine tuning his artful craft. Today, he is running the show at the very successful chocolate cafe called the Dancing Lion. There is no questioning he owns the chocolate scene in Manchester, NH.
