Les cours du cacao continuent de s'enfoncer : les fèves se négocient à un peu plus de 5 000 dollars la tonne à la Bourse de New York. Les prix sont en baisse quasi continue depuis le mois de mai et ont chuté de 18% sur le dernier mois. Pour l'instant, la chute des prix est surtout due à une diminution de la demande des broyeurs de fèves, explique un expert de l'Organisation internationale du cacao (ICCO). Ces industriels sont installés dans les pays producteurs ou dans les pays consommateurs, et transforment la fève en produits semi-finis comme de la pâte de cacao, et la vendent ensuite aux fabricants de chocolat. Or ces fabricants ont revu leurs recettes et innové pour limiter l'utilisation d'un cacao devenu trop cher l'année dernière, et subissent aussi une baisse de la demande des consommateurs. L'autre facteur qui joue, c'est la production : elle s'annonce meilleure que l'année dernière en Côte d'Ivoire, le leader mondial, le chiffre de deux millions de tonnes de fèves circule contre 1 850 000 pour la campagne 2024/2025, mais il est encore trop tôt pour avoir des données fiables. Les volumes de fèves acheminés dans les ports ivoiriens pour y être exportés ont été bons ces dernières semaines, mais « l'expérience de l'année dernière a montré que ces arrivées pouvaient s'écrouler en deuxième partie de saison », rappelle notre interlocuteur. Ce texte qui vise à interdire la commercialisation en Europe de plusieurs matières premières, dont le cacao, s'ils sont issus de terres déboisées après 2020. Ce texte devait initialement entrer en vigueur fin décembre, mais le Parlement européen vient d'approuver un report d'un an, le deuxième du genre. Les obligations contenues dans ce projet de loi faisaient craindre des risques d'approvisionnement, tous les volumes de cacao ne répondent en effet pas aux critères demandés. Le report donne de l'air à tout le monde, moins de stress, c'est moins de pression sur les prix. Pour la stimuler, il faudrait que les industriels baissent leur prix. Certains ont déjà fait comprendre qu'ils seraient prêts à le faire, mais pour l'instant, « tout le monde s'observe » raconte un acteur de la filière. Sur les trois dernières années, les prix au consommateur ont augmenté de 30 à 40%. Si baisse il y a, sera-t-elle significative et en mesure de convaincre les consommateurs qui ont décroché de manger plus de chocolat ? Certains experts en doute. Alors que la campagne de commercialisation du café et du cacao est lancée depuis le début du mois d'octobre dans la région du N'Zi, l'activité tourne au ralenti. Le cœur historique de l'ancienne boucle du cacao, qui pesait près d'un quart de la production ivoirienne au début des années 1970, produirait désormais moins de 2% du total national. La faute à une baisse des rendements, aux multiples causes. Les planteurs se sont tournés vers d'autres cultures comme l'anacarde. De notre envoyé spécial à Dimbokro, Elles faisaient la fierté des villageois de Kongossou – les plantations de cacao. Les cabosses sont rares ces jours-ci. À l'ombre des arbres, Kouamé N'dri en désespère : « Ce qui a changé, c'est qu'il ne pleut plus. Avant, il pleuvait très bien, toutes nos forêts qu'on avait, elles sont petites maintenant. » La production varie de 50 à 300 kilos, très peu donc. « Mais le cacao, on gagne notre vie avec, on espère que ça va venir encore », ose encore croire le producteur. Le planteur n'envisage pas d'abandonner la tradition cacaoyère de ses grands-parents qui ont, eux, vécu la grande époque de Dimbokro. Il y a cinquante ans, l'ex-capitale ivoirienne du cacao était florissante, en témoignent ses anciens entrepôts ou encore le chemin de fer qui reliait la ville au port d'Abidjan. Le déclin s'est amorcé au début des années 1980 avec le vieillissement des plantations, la déforestation et les sécheresses, entre autres. « Le fait qu'il y a déforestation, le fait que la pluviométrie utile diminue, tout cela fait que les rendements diminuent puisque la rente forêt qui était un des facteurs de productions a disparu. Donc, les coûts de production augmentent et donc les planteurs, s'ils ont la possibilité d'aller chercher une nouvelle forêt, ils vont préférer ça plutôt que d'essayer de replanter dans la vieille plantation », détaille François Ruf, agro-économiste, spécialiste du cacao. Changement de culture La boucle du cacao s'est depuis déplacée vers l'ouest. Toungbo dirige l'une des anciennes coopératives de Dimbokro. Il témoigne de cette migration rurale. « Les planteurs qui étaient à Dimbokro sont partis vers Soubré, Gagnoa quand le changement climatique est arrivé et que là-bas c'était la véritable forêt. Donc, ils y sont allés », décrit-il. « Si vous allez là-bas, vous allez trouver des campements appelés « Petit Dimbokro », donc c'est ça qui fait la fierté de la région là-bas », précise-t-il encore. Les planteurs qui sont restés se reconvertissent – palmier à huile, hévéa, entre autres. L'une des principales alternatives est l'anacardier importé des savanes du Nord. La région du N'zi aurait produit plus de 4 000 tonnes de noix de cajou en 2023. Séraphin Koffi Ngoran en a planté quatre hectares. « Ça a été une lueur d'espoir. On a planté, certains parents nous disaient que c'étaient des bois du Nord, mais aujourd'hui ces bois du Nord nous profitent et nous apportent de la richesse », se souvient-il. L'anacardier a l'avantage d'avoir moins besoin de pluie, « c'est plus facile à faire pousser », selon Koffi Ngoran. À 425 francs CFA le kilo, la noix de cajou ne remplace pas la fève de cacao, six fois plus chère, dans le cœur des planteurs. Séraphin veut faire pousser des cacaoyers entre ses anacardiers.

The global food system stands at a crossroads. Climate change is reshaping where crops can grow, trade disputes threaten supply chains, and smallholder farmers who produce much of our food often have the least power in the system. Meet Heather Terry, founder and CEO of GoodSAM Foods, and discover how the company is transforming the traditional smallhold farm model by putting people and regenerative agriculture at the heart of a growing food company. GoodSAM Foods sources 90% of its ingredients directly from smallholder farms in Latin America and Africa, eliminating middlemen and reinvesting profits into farming communities. Terry's approach is both principled and pragmatic: as climate volatility reduces crop yields globally, the companies that have built genuine relationships with farmers will have access to limited harvests. "When I'm a farmer and I suddenly have leverage, who am I going to sell that product to?" Terry asks. "It's relationships."[Terry's journey to raise $9 million in Series A funding over 18 months illustrates the disconnect between traditional investors and regenerative business models. After facing skepticism from conventional CPG investors, she found success with impact investors who understood that sustainable food systems represent the future of the industry. While GoodSAM maintains USDA Organic and Non-GMO Project verification, Terry takes a critical stance on regenerative certification labels, arguing that current systems impose Global North standards on farmers who have practiced regenerative techniques for generations. Instead, GoodSAM focuses on direct relationships and on-ground verification. Her proactive approach protected both the company and its farming partners from sudden economic shocks at a time when the U.S. food system faces mounting pressures from climate impacts and trade policy changes. Cacao agronomist Sarah Bharath has become one of my closest friends in the craft chocolate world, and she's been on Bean to Barstool a couple times before. (You can listen to those conversations here and here.) Today I'm sharing the first of a two part conversation Sarah and I had recently about cacao farming and fermentation. Farmers need to make money to live, and that means efficiency and predictability are easy to prioritize.
