Inside the lab taste-testing the world's chocolate

Could standardizing chocolate help small-scale farmers? Chocolate scientist Julien Simonis thinks it could help persuade consumers to pay for higher quality chocolate, in turn helping out these growers. Every cacao bean is different, and for a long time, there wasn't a standard way of comparing the quality of chocolate. But in 2009, a sustainable agriculture nonprofit started a program called Cacao of Excellence. The goal was to develop a standard way of evaluating cacao just like those sommelier's do with wine. So today, we're going behind the scenes of a chocolate laboratory to see just how cacao is evaluated. This story was originally reported for NPR by science correspondent Ari Daniel.

In this episode, host Jack Eidt delves into the groundbreaking archaeological discoveries at the Huaca Montegrande site in the Peruvian Amazon with guest Karen Gordon, an associate at ASICAMPE, the nonprofit Association for Scientific Research of the Peruvian Amazon [https://abundantearthfoundation.org/ancientcacao/]. They explore the ancient Marañon culture, their sophisticated agroforestry practices, and the origins of cacao, the plant responsible for the world's chocolate. Traces of cacao have been found in 6,000-year-old ceremonial pottery vessels from what is now recognized as the oldest monumental temple site in Peru, predating the pyramids of Egypt or Mesopotamia. Tune in to learn how these findings are rewriting the history of organized human settlement and spirituality in the ancient Amazon. Nominated as one of the Top 10 Archaeological Discoveries in the World, Montegrande is currently unearthing the story of the ancient Amazonian Marañon Culture and their sophisticated agroforestry practices, social structure, and cosmovision – 3,000 years before the more well-studied Inca and Nazca cultures. These findings completely rewrite the history of organized human settlement and spirituality in the ancient Amazon. Groundbreaking evidence from Montegrande points to the Marañon Culture as being the earliest human stewards of cacao in the world, tending its domestication, cultivation, veneration and trade.

In this episode we open the door to our retreat experience and the deeper architecture behind our work. We explore what it means to build a space that is free, accepting, safe and even pleasurable without losing the rigor or depth. This conversation moves through the intentional design of our community, where processing is not isolated but shared, and where individual insight becomes collective movement. We also recount the Cacao ceremony and What it represents, how it functions psychologically and symbolically and why it serves as a threshold experience rather than a performance. This is not about spectacle but about direct encounter with fear, identity and the possibility of deliberate transformation. This episode is less about answers and more about orientation on how to live, practice and relate when the systems we inhabit are both the source of our conditioning and the field in which we attempt to wake up in. If you've attended our retreats you'll recognize the terrain if not, this serves as an entry point into the work. Please feel free to share this with anyone interested in community based practice, psychological transformation or the question of whether real change is possible within the systems we repeatedly recreate. Show Title: A "Superfood" Upgrade Segment 1: Almost everyone knows blueberries are good for you. However, most people have no idea what happens inside their biology when they eat them every day. Let's discuss 5 things that happen inside you right now by making blueberries a daily habit: • You Slow Down Brain Aging. • These "Brain Berries" contain Antho-cya-nins that cross the blood-brain barrier. • Research shows they boost cognitive function by up to 20%, scrubbing away "brain rust" and improving memory recall. • Your Blood Pressure Drops Naturally. • High blood pressure damages your artery lining, making it like Velcro for plaque. • Blueberries smooth out that lining. It's a daily "system reset" that keeps arteries slippery and flexible. • You Protect Your Vision. • They strengthen the tiny blood vessels in your eyes, helping to prevent macular degeneration and cataracts. • You Reduce Your Diabetes Risk. • Despite being sweet, they improve insulin sensitivity. • They don't spike your blood sugar; they help manage it better than some medications. • You Fight Cancer. • Every day, your DNA takes hits from UV rays and pollution. The antioxidants in blueberries "patch" these holes and destroy abnormal cells before they become tumors. So, blueberries are a miracle food. But what if there were another food that could deliver these same antioxidant benefits 40 times over? And what if, rather than fruit, it was a decadent dessert? ________________________________________ Segment 2: The "King" of antioxidants. It's not a berry. It's Ca-cao. The plant source of chocolate. • "The ORAC Score" – (Oxygen Radical Absorbance Capacity) is the scoreboard for antioxidants. o Blueberries rank highest of all berries. o But Cacao scores up to 40 times higher o It is the most chemically complex food on earth Inflammation is the root of all evil  joint pain, weight gain, brain fog. o Cacao is the most potent anti-inflammatory food in the world. It cools down the "fire" in your joints. o It contains An-an-dam-ide (The Bliss Molecule) and Theo-bromine. o Unlike caffeine which makes you jittery, Theo-bromine opens up blood vessels (lowering that blood pressure even more) while lifting your spirts. ________________________________________ Segment 3: The bad news is that Snickers bars don't count. They are Alkalized: Regular Coco is treated to taste less bitter, which strips 60-90% of the medicinal antioxidants. Meaning you're eating empty calories. 1. To make it sweet, they add massive amounts of sugar, 1. That causes the inflammation you are trying to fight. You need "Functional Chocolate." • A specific blend of Raw Cacao and Collagen Peptides. • The Cacao protects the joints (anti-inflammatory), • And the Collagen rebuilds them (structural repair). So, here is the best strategy: Swap your current desserts for healthy chocolate treats to... • Flood your body with cell-repairing antioxidants 40x blueberries. • Lower blood pressure and reduce stress. • Boost cognitive function by 20% and slow brain aging. • Protect your vision. • Reduce diabetes risk and fight cancer. • Develop better skin and lessen joint pain while you sleep. Call to Action • Now, to get the benefits of 40 bowls of blueberries in some delicious dessert recipes... • Visit DennisJHenson.com and look under the Health Tab.

Mine does at least! But today's guest, founder of Emerging Wisdom Cacao Samantha Veitch, shares a much deeper story on the ways cacao can support us through each phase of our cycle. And instead of just speaking to dark chocolate, she brings forward embodied wisdom around the more ritual and ceremonial nature of the cacao plant itself. Her experience with cacao began in Guatemala, where cacao holds a lineage of indigenous story and practice. And what's so interesting is that at exactly the same time cacao came into her, so did her awareness of the power of cyclical living. She shares her meandering organic journey of weaving drinking cacao and cyclical living together, becoming more and more deeply infused in both practices over time, and then learning ways to incorporate cacao *into* cyclical living practice to enhance each phase of the menstrual cycle. It's a really fun and beautiful way to interact with our cycles.Resources:Today's shownotes: Grab links to Samantha's cacao blends + offeringsBook: 4 seasons in 4 weeks by Suzanne Mathis McQueenBook: The Fourth Trimester by Kimberly Ann JohnsonClosing tomorrow Feb 22nd: Natural Contraception the Herbal Way 2026Episode 156: The Universal Mother Principles with Christine EckIf you loved this episode, share it with a friend, or take a screenshot and share on social media and tag me @herbalwombwisdomAnd if you love this podcast, leave a rating & write a review!
