On today's Good Day Health Show - ON DEMAND…Host Doug Stephan and Dr. Ken Kronhaus of Lake Cardiology (352-735-1400) cover a number of topics affecting our health. First up, Doug and Dr. Ken begin with the MIND diet and how it can help stave off dementia. The MIND diet (a hybrid of the Mediterranean and DASH diets) fights off dementia by reducing brain inflammation, lowering oxidative stress, and preventing harmful protein build-ups. By prioritizing specific brain-boosting foods and eliminating harmful ones, it can lower your risk of Alzheimer's disease by up to 53%. As beans are part of the MIND Diet, the conversation sidetracks to a focus to beans, (AKA “the musical fruit”) and their gas-producing tendencies. False rumors are that beans contain gluten or could be prepared/cross-contaminated with gluten, causing intestinal issues for those who have gluten intolerance, gluten allergies or celiac disease. The reality is that beans are naturally gluten free, but some may prepare them in ways that make them no longer gluten free. So why do beans make people gassy? Beans make people gassy primarily because they are loaded with oligosaccharides (specifically raffinose) and high amounts of dietary fiber. The human digestive system lacks the specific enzyme required to break down these complex sugars in the stomach and small intestine. Because they remain mostly intact, they travel down to the large intestine where beneficial gut bacteria feast on them.Moving on, Doug and Dr. Ken discuss the primary start to good health, and the magic is about a healthy diet and exercise. Colorectal cancer is the 3rd most common cancer worldwide and the second leading cause of cancer-deaths. After initial treatment, people are advised to follow a healthy lifestyle in conjunction with further drug treatments to try and reduce the cancer of coming back. However, a new study found a structured exercise program could be more effective than drug treatments in preventing colon cancer recurring. Shifting focus to mangoes, something to know is they are a nutrient-dense tropical fruit packed with vitamins, minerals, and antioxidants, offering a wide array of health benefits, including promoting glowing skin, supporting heart health, and aiding digestion. What researchers are more recently finding, is that adding mangoes to your diet can significantly support postmenopausal health. Research shows that consuming about two servings (1.5 cups) daily can reduce systolic blood pressure, lower LDL ("bad") cholesterol, and improve blood sugar responses. They are also rich in antioxidants that help promote skin elasticity and reduce wrinkles.Then, a discussion linked to supplements linked to liver damage that have otherwise been considered healthy. Those in question are numeric, green tea, ashwagandha, red yeast rice, garcinia cambogia, black cohosh. Are the supplements generally bad for our health, or is it more about how they're prepared or if they are synthetic as opposed to the truly healthier food-based supplements. Pete, a trucker, is sitting on the freeway stopped, along with dozens of cars and other trucks. Pete, an atheist, meets another trucker, John, a humble Christian family man. John’s truck is loaded with canned beans, which gives them a food source. But there are dozens of other cars and trucks in the vicinity, and Pete and John know they cannot feed that many people for very long. Help may not come for days or weeks-may not come at all. What do they do? Do they hoard the food, or do they pass it out to as many people as possible for as long as possible? Does help reach them in time? Do they survive?

Greg begins his interview with coffee fan, aficionado and expert Noon by exploring her background as the former president of the Specialty Coffee Association of Thailand and her current role managing Lamarzocco, the high-end coffee machine retailer.  Noon explains her deep dive into coffee quality and traces the rapid evolution of the Thai coffee industry over the past fifteen years. She points out that Thailand is highly unique because it both produces and consumes its own coffee, which creates incredibly short communication lines between rural farmers and urban cafe owners. Next, Noon breaks down the agricultural history, explaining how early royal projects replaced opium crops with disease-resistant but less flavorful hybrid beans, prompting modern farmers to pivot toward higher-quality varieties. The conversation then shifts to the different historical waves of coffee culture. Noon describes the progression from basic instant coffee to the cafe culture popularized by major chains, followed by the artisanal third wave, and finally the current fourth wave that focuses heavily on the science and exact consistency of brewing. She notes that high-end machines are crucial for maintaining this modern standard. Following the interview, Ed and Greg discuss Noon's insights. Ed admits that he is relatively new to the coffee scene and shares his mild frustration with overly expensive, pretentious coffee shops. Greg agrees, reflecting on his own habits and acknowledging that while massive chains offer reliable consistency, they simply cannot match the nuanced quality and dynamic energy of the booming specialty coffee market in Thailand.
