Using a groundbreaking process that transforms compounds like CO₂ and elements like hydrogen into rich, animal-free fats that can mimic what animal fat does, this California-based startup is rethinking how we produce and consume one of the most essential ingredients in food. In this episode, I sit down with Kathleen Alexander, cofounder and CEO of Savor, to dive into the science behind their innovative fat production, why alternative fats could be the next big breakthrough in food tech, and how their approach could help fight climate change while making all types of foods, including plant-based meats and dairy, taste even better. So far the company has raised more than $30 million in venture capital, including from Bill Gates, and is now gearing up to start selling its new fat in restaurants and bakeries within 2025. Today my guest Kathleen Alexander, Associate Professor of Wildlife in Virginia Tech's College of Natural Resources and Environment, and I discuss One Health and her work at Virginia Tech and in Botswana. “One Health” is the notion that the complex problems facing our local and global communities can only really be addressed with an approach that encompasses societal, animal, and environmental components in an integrated manner. It is no longer enough to evaluate the health status of an individual in isolation. We must engage the complexity of the systems- land use, disease and other complex changes occurring in our water and air, with consideration as to where the patient lives, interactions with animals and other humans, water and food, and household responses. A new solution is being tested against birds getting stuck in airplane engines or picking a farm field clean. John Swaddle says the “sonic net” is like a digital audio scarecrow, and it doesn’t disturb people or harm the birds. Plus: In the 1940s, a Swiss chemist took a close look at the burrs in his hunting dog’s fur and noticed the hook and loop phenomenon. That led to the development of Velcro. Brook S. Kennedy uses the same method of nature-inspired design for his own inventions, including the Macronaut, a smart phone-compatible magnifying lens he designed to help us zoom in on the wonders of natural phenomena all around. Later in the show: If you’re poor in Botswana, lions and elephants aren’t cool wildlife—they’re threats to your crops, your herds, and your family. But protecting a robust wildlife population is high priority for a country whose wealthy and middle classes rely on tourism. Kathleen Alexander is working in Botswana to bridge the gap between conserving wildlife and helping impoverished communities. No doubt about it, this Ebola frightening. This outbreak has already claimed thousands and it isn't over and the outlook by the W.H.O. and C.D.C. and the news can be confusing. Today, Dr. Kathy Alexander, of the Virginia Tech Bio-informanics Team and part of the global effort in modeling the analytics and massive interactions between the biosocial and technical to map and be pro-active to adapt and find effective measures that improve human health, habitat and well being. Kathy gives us perspective on the scope of Ebola and provides us with very direct and simple ways each of us can help. Wildness still holds many surprises, and the biggest lesson we are learning from this outbreak is, that what we do in our personal lives does eventually come round and connect to the larger picture, that Our Wild World has everything to do with us, and that we have everything to do with what happens ‘out there'.
