Show notes from Host John Holl:"Wine Enthusiast Magazine released its Top 50 Beers of the Year list earlier this week. I'm the contributing editor for beer in those pages, and you should give it a look if you haven't already. In thinking about the list and all the beers I was lucky enough to taste on the blind panels this year I wanted to bring together some brewing industry folks – those who are on the list - for a chat about the year that was and where they see the current state of beer. The panel includes:- Lisa Allen, the head brewer of Heater Allen Brewing - Jude La Rose of Hop Butcher for the World - Matthew Steinberg of Exhibit ‘A' Brewing - Cambria Griffith of Radiant Beer Co. This quickly turned into a fun back and forth between them, sharing stories about shared experiences and unique challenges, and a shared fondness of baked goods. Thanks for listening."This Episode is sponsored by:NZ HopsNZ Hops, the co-operative of Master Hop Growers are a passionate collective of farms dedicated to innovation and sustainability. If you’ve had a beer from Placentia, California’s The Bruery at a festival or in their taproom over the past half-decade, there’s a good chance that Andrew Bell designed it or brewed it. The longtime innovation brewer has developed a reputation amongst industry peers as one who has tried just about anything that can be legally added to beer—from powdered cream cheese to obscure spices and fruit in every form imaginable. In mid-2020, he joined former Bruery colleagues Jonas Nemura and Cambria Griffith to launch Radiant Beer (https://www.radiantbeer.com) in Orange County, and now he’s tackling a new type of innovation problem—designing a brewing program and identity from scratch. In this episode, Bell discusses lessons learned from brewing more than 300 new beers per year, including: setting and adhering to stylistic guard rails breaking down familiar flavors like oatmeal raisin cookie, and rebuilding them in beer using sub-threshold spicing to build flavor that evokes an emotional connection the challenge of scaling ingredients up from the pilot batches to production batches processing nuts and improving their extract efficiency pasteurizing for safety and to improve flavors the ways that different fruit-processing methods (purée, juice, dehydrated, fresh) affect flavor expression brewing “clean” beer with wine grapes managing ultra-high-gravity fermentations with unusual yeast brewing low-bitterness West Coast-style IPAs with high aromatic and tropical elements subtle spicing in traditional styles like witbier And much more. If you’ve ever brewed with a new ingredient and suffered spectacular failure, welcome to Bell’s world. Through a long process of research, ingredient sourcing, and brewhouse testing, he’s figured out ways to make difficult ingredients work—and also found ingredients that he’ll never use again. In this episode, he delves into both the success and the failures, with tips that anyone can use to achieve better outcomes with difficult ingredients. *This episode is brought to you by: * G&D Chillers (https://gdchillers.com): As the brewing industry’s premier choice for glycol chilling, G&D Chillers has set the standard on quality, service, reliability and dedication to their customer’s craft. Cheers and new beers, tap heads! We're very excited to welcome Andrew Bell, Jonas Nemura, and Cambria Griffith to the show. They are the team behind the brand new brewery in Anaheim, CA, Radiant Beer Company. Andrew is the director of brewing and was the Innovation Manager at The Bruery. Jonas ran operations at The Bruery as well as Chapman Crafted. Cambria is the director of marketing and has worked with The Bruery, Offshoot, Golden Road, Figueroa Mountain, LA Beer Week, and more!We talk about everything from opening a brewery (especially during a pandemic) to their favorite terms for being drunk.Jonas talks about what it means to lead operations. In contrast, Andrew talks about the challenges of opening an already constructed brewery and the speed at which this project came together. We find out if they're crazy for opening during a pandemic. Cambria discusses the challenges of attracting people during difficult times. Andrew discloses (sort of) some of the collaborations he's working on, and they talk about how they'll stand out from other local breweries. After some discussion, we find out that the last project that everyone worked on together was Offshoot Beer Co. It also gets revealed that Cambria is a level two certified cicerone. We get down to the necessary details and find out what Andrew's focus will be when it comes to making beer. Finally, we wrap things up with a round of Rapid Fire questions and find out that Cambria loves cheap beer and tacos but can't come up with a good word for being drunk, while both Jonas and Andrew are not a fan of macro lagers...to say the least.A huge thank you to the whole Radiant Beer crew. We're so excited to try their beer in (hopefully) just a few weeks. Make sure you check them out at www.radiantbeer.com and @radiantbeer on the main socials. Find them at 1566 W.
