Wie siehst du die Zukunft von Deutschland, wenn das so weitergeht? Du hast ja gesagt, es wird bezahlt, bezahlt. Es ist eigentlich schon gar nicht mehr zu bezahlen, sondern es wird weiter bezahlt. Ja, wir haben jetzt noch drei Jahre, um gewisse Reformen hinzubekommen, in Sachen Infrastruktur und Attraktivität des Standorts. Ich habe gestern wieder gelesen: In Groß-Gerau verhindert die Gemeinde einen US-Investor, der 2,5 Milliarden in ein Rechenzentrum stecken wollte, weil das Haus ein bisschen zu hoch ist. Da sieht man das immer wieder: Das möchten wir nicht in Groß-Gerau. Diese Dekadenz müssen wir ablegen und uns der Realität stellen. Wir brauchen einen unglaublich dynamischen Arbeitsmarkt. Sorry, Friedrich Merz hat recht, wir müssen länger arbeiten. Es geht gar nicht anders. Immer weniger arbeiten, mehr verdienen, bezahlt ja keiner. Es muss jetzt wirklich ran an Strukturreformen. Und ich stelle immer mehr fest: Viele Bekannte gehen. Ich habe noch nie so viele Menschen in den letzten drei Jahren gesehen, die in die Schweiz oder nach Dubai gegangen sind. Das gab es schon immer, aber jetzt wieder in einer ganz anderen Masse. Uns mittelständischen Unternehmern hat man sogar eine Wegzugsbesteuerung verpasst. Man hat uns quasi eine steuerliche Fußfessel angelegt. Ich will gar nicht gehen. Ich bin in Deutschland als Unternehmer groß geworden. Ich habe dem Land viel zu verdanken und würde auch gerne viel zurückgeben. Aber die Umstände sind schon extrem herausfordernd. Der Julian Backhaus hat gesagt, der Staat vergisst, dass nach wie vor die Unternehmer das Licht am Brennen halten, natürlich in Kombination mit den Arbeitnehmern. Wenn das Volk über Unternehmer redet, meint er immer Apple oder Großkonzerne. Aber 90 Prozent des Mittelstands sind kleine Unternehmen mit 10, 20, 30 oder 40 Mitarbeitern. Und die sind von einer Krise in die nächste gegangen. Erst gab es die Pandemie, dann die Ukraine-Krise, dann die Probleme im Automobilbereich. So hangelt man sich von Krise zu Krise. Das Geld wird immer weniger, aber man erwartet Transformation, Digitalisierung, KI und immer mehr Geld für die Arbeitnehmer. Der Mittelstand leidet und braucht jetzt Kapital, aber genau das hat er in den letzten Jahren verloren. Was mich auch erschüttert hat: Ich habe mal eine Frau kennengelernt, und als sie fragte, was ich beruflich mache, sagte ich: Ich bin Unternehmer. Da wechselte ihre Gesichtsfarbe und sie fragte: „Ach, Unternehmer, bist du auch einer, der Menschen ausbeutet?" Ich habe gesagt: Was ist denn das für eine Einstellung? Ich gebe Menschen eine Chance. Meine älteste Mitarbeiterin ist seit 38 Jahren bei mir. Das wäre wohl kaum so, wenn ich sie ausbeuten würde. Wir verfangen uns in Stereotypen. Und seit Corona sind die Lager extremer geworden. Die Debatte findet kaum noch statt. Ich bin jemand, der sehr gerne debattiert. Ich kann mich mit allen hinsetzen, von links bis rechts und erstmal reden. Das ist der Grundpfeiler unserer Demokratie. Aber genau das funktioniert heute immer schlechter. In der Pandemie hat man gesehen, wie schnell Menschen sich wegen Sachthemen hassen können: geimpft, nicht geimpft. Diese Dynamik war erschreckend. Und heute wird man sofort in eine Schublade gesteckt. Wenn ich solche Dinge anspreche, sagen viele direkt: AfD, AfD. Dabei habe ich damit nichts zu tun. Aber ich sehe Fehlentwicklungen und spreche sie an. Ich bin für Multikulti und Willkommenskultur, aber mit Vernunft. Wir haben viel mehr Schubladendiskussionen als echte Lösungen. Während wir Rekordinsolvenzen in Deutschland haben, diskutieren wir über Begriffe und Nebenschauplätze. Wir haben eine völlige Verschiebung der Realitäten in diesem Land. Und das ist das, was ich an Philipp so schätze: Er bringt die Dinge auf den Punkt, mit klarem Menschenverstand und viel Herz. So Leute braucht das Land. Philipp, du bist ja Vater geworden von einer wundervollen Tochter. Wie ist das für dich als Unternehmer? Es ist gut, dass es so gekommen ist. Es ist ein bewusstes Vaterwerden. Ich habe heute mehr Ruhe, mehr Geduld und setze andere Prioritäten als mit 23. Mit der Kleinen macht mir das wahnsinnig viel Freude. Mit meiner Großen habe ich auch ein sehr gutes Verhältnis. Aber damals war ich 23, hatte zwei Diskotheken und war ein absoluter Vollgas-Typ. Ich konnte damals aus mangelnder Lebenserfahrung gar keine Prioritäten setzen. Umso dankbarer bin ich, dass meine Große so toll geworden ist. Generally speaking, there's some correlation between brewery scale and lager quality, and while there are plenty of exceptions to every rule, there's no denying that honing lager beers into the best versions of themselves requires repetition, time, and access to the best ingredients. But over the past few years, an ever-increasing number of very small craft brewers have found success in the major competitions not despite their size, but because of it. Ferndale, Michigan's Urbanrest firmly sits in that group, and their recent gold medal in the American Pilsner category at GABF is further proof that careful process and thoughtful beer design aren't dependent on scale. The beer itself, Kaiser, started as a Franconian-inspired kellerpils, but over the years has morphed into what they now call American pils. And funny enough, it contains only Vienna-style malt from small craft maltster and none of the pils malt that most would expect. But that's not the only way they've strayed from the classic narrative. Fritz Family founder Cory Buenning brewed from the mid-90's through the mid 20-teens for Wyoming craft beer pioneers Snake River, but the itch to do his own thing was strong, and after returning to Colorado after a few years in Kentucky, he leased the old Bootstrap brewery in Niwot, installed a new brewhouse and cellar, and got to work making the beers he wanted to make—a variety of primarily lager beer, brewed thoughtfully and carefully. Years later, the brewery has developed a strong following among locals, but is also a favorite hangout for the area's brewers, and you'll often find brewers from neighboring breweries at the Fritz bar for a post-shift beer. The eisbock story is a fun lore of beer myth, a hapless brewery employee left a barrel of doppelbock outside during a snowstorm in Germany and some of the beer froze, concentrating flavor and thus creating a whole new beer style. While the roots of this story may not wholly be true, it's a fun addition to a beer style made by distillation processes at its most base level.These beers are rare in the United States as you need special licenses to make them but in Europe, the rules are a bit different and in some European countries, these beers, not just eisbocks, have taken on a life of their own.
