This is a malt centric episode at the intersection of brewer curiosity. In a moment I'll be talking with Chris Cates of Little Animals Brewing, Brent Manning of Riverbend Malt House, and Andrew Zinn of Leveller Brewing.A year ago, Cates visited Belgium and came back inspired. After visiting through some of the worlds best breweries, drinking classic and carefully crafted saison, he wanted to make a beer that not only paid homage to those beers but to also impart a sense of place from Eastern Tennessee. After trying a few recipes that didn't yield the results he wanted, Cates reached out to Riverbend Malt House in neighboring North Carolina to help him create a pilsner malt that would mimic those from Belgium. The idea, he said was to a local malt “tailored for diastatic and mixed fermentations, with higher protein and beta-glucans and built in minerality and buffering capacity.” Riverbend achieved this by creating a water profile that was rich in minerals that was used during the malting process. Manning of Riverbend says the results yielded a malt that resists ph drop slightly better than usual, and allows for additional laxtic acid and potential ester precursors. We'll weave the whole story from start to finisih as Cates and Manning join the show with Andrew Zinn of Leveller Brewing, who has also been brewing with the malt. Are you ready for an extra long Oktoberfest?The official Oktoberfest celebration in Munich is 18 days long this year, an extra 2 days over the typical 16 to include German Unity Day.If you're celebrating in America that doesn't matter because we start celebrating in September and run all the way through October, and sometimes November. Because if there's a drinking holiday we're going to stretch it out as long as we can.To get the party started we headed to Der Biergarten in Atlanta for the firs day of Oktoberfest. The celebration included a whole roasted pig, an official "first" keg tapping, oompah music, and plenty of beer.We talked with Austin Edwards, head brewer at STATS Brewpub (STATS and Der Biergarten are both part of the Legacy Ventures family) and Jay Toxey, the Southeast Regional Manager for Paulaner USA. This episode will specifically be talking about self-harm experiences and prevention. Lane has lost family and friends to suicide, and, as you'll hear, even had ideations himself. He credits the volunteer he spoke with after dialing 988 for saving his life. Not everyone knows about the number and the service and Lane wanted to raise awareness and to shine light on the importance of mental health and saving lives. The 9-8-8 beer initiative helps breakdown barriers and bring suicide prevention to the forefront of conversations. Lakefront Brewery released its beer, Save A Weiss, earlier in September. Sebastian Pobots Anfänge in der Musikindustrie bis hin zu Lizenzeinnahmen Sebastian Pobot begann seine Karriere als Musikproduzent und Komponist Mitte der 90er Jahre. Neben zahlreichen Auszeichnungen für seine Soundtrack-Beiträge, wie zB einer „Silbernen Palme in Cannes“ und dem „Bayerischen Filmpreis“, bekam er für seine Songwriter Tätigkeiten goldene CDs im In- & Ausland, eine Echonominierung, die „Goldene Stimmgabel“, „RSH Gold“ und weitere Auszeichnungen. Nach dieser kreativen Phase, wechselte er ins Unternehmer Lager und war dabei nicht minder kreativ. Er entdeckte das breite Feld der Copyrights und Lizenzen. Ursprünglich initiiert von einer Geschenkidee, stellte er fest, dass für einige vergriffene Hörspiel-Titel auf eBay teils horrende Summen bezahlt werden mussten. Inspiriert davon folgte eine offizielle Lizenzanfrage beim WDR für den Kulttitel aus den 70er Jahren von Henning Venske „Als die Autos rückwärts fuhren“. Nach einer langen Recherche- und Detektivarbeit, die für das Rechte-Clearing notwendig war, folgte eine überraschend erfolgreiche Veröffentlichung - erfolgreich genug, um diese Idee zu skalieren. Für seine Recherchefähigkeiten und das Gespür für die richtigen Titel wurde ihm der Deutsche Hörspielpreis „Ohrkanus“ verliehen. Es folgten Lizenzierungen und zahlreiche VÖs in Kooperation mit bekannten Brands wie „Captain Future“, „Batman“, „Sherlock Holmes“ oder „Star Trek“, und die damit notwendig gewordene Gründung seiner ersten GmbH „Highscore Music GmbH“. Lizenzeinnahmen: Übernahme um mehr Marktanteile zu besitzen Als die Firma regelmäßig Erfolge feiern konnte, kaufte Pobot das bekannte Hörspiel-Label „Maritim Verlag“, dessen Releases ihn schon als Kind begeisterten. Durch weitere Zukäufe, seine eigenen Inhalte, die Hörspiele von Maritim und klug gewählte Kooperationen, entstand der größte Hörspielkatalog. Er umfasst über 5000 Katalogtitel mit einer sechsstelligen Einzeltrack-Anzahl, die beim Streaming der entscheidende Faktor ist. Maritim war der allererste Katalog, der seine kompletten Inhalte für das damals noch sehr unbekannte Medium „Streaming“ öffnete. Anfangs belächelt von der Konkurrenz besitzt Maritim inzwischen einen kaum einholbaren Vorsprung und besetzt so nach wie vor meist einen Großteil der Startseiten mit seinen new releases! Lizenzeinnahmen machen es möglich Pobots Arbeitsweise unterscheidet sich bewusst von denen der Major-Plattenfirmen. Flache Strukturen ermöglichen eine größtmögliche Wendigkeit. Entscheidungen werden auf eigenes Risiko hin gefällt, man versteckt sich nicht hinter Gremien. Bootstrapping ist das Motto – Pobot arbeitet grundsätzlich ohne Investorengelder, um „keinen Druck zu haben und sich nicht ständig rechtfertigen zu müssen“. Im Nachhinein erwies sich als elementarer Vorteil, dass der Maritim-Verlag durch die Übernahme einen kompletten Neustart erhielt. Somit musste man, im Gegensatz zu alteingesessenen Konkurrenten, den alten „Ballast“ nicht mit sich tragen wie zB ein großes physikalisches Lager, Festanstellungen und große Büroräumlichkeiten. „Das einst so angestaubte Verlagswesen, erhielt plötzlich einen frischen Start-Up Glow Up“. Dazu gehörte auch, dass von Anfang an auf die damals neu aufgekommenen Vertriebswege Download und Stream gesetzt wurde. Ab da wurde Sebastian Pobot häufig als Berater angefragt, um dieses Prinzip auch bei anderen Labels anzuwenden und deren alteingesessene Strukturen zu digitalisieren. So lag der Entschluss nahe, eine Holding zu gründen und seine Erfahrung gegen Firmenbeteiligungen einzutauschen. Lizenzeinnahmen und Beteiligungen Die Silberscore Beteiligungsgesellschaft mit Sitz in Tirol hält inzwischen mehr als ein Dutzend Beteiligungen wie zB den Softwareentwickler „Affect“, zahlreiche Musikverlage, aber auch Content-Zulieferer wie die Hamburger Firma „All Ears GmbH“, den schwedischen Produzenten „Audio Quants AB“, das Berliner IndieLabel „Staatsakt Rec. GmbH“ und das Kölner Comedy Kultlabel „WortArt“. Beim Marketing wurde ebenfalls von Anfang an digital gedacht: Social Media statt Print, Playlisten, Startseiten und Instore Marketing statt konventioneller Werbung. Wegen dieser Faktoren vermutlich erweist sich Maritim als Fels in der Brandung. In der Rückschau wurde sichtbar, dass Maritim während der Pandemie den gleichen Effekt verbuchen konnte, wie auch Netflix oder andere Streaming-Anbieter. Auch hier führte das Unterhaltungsbedürfnis aller zwangsläufig Daheimgebliebenen zu zweistellig prozentualen Zuwächsen. Erwähnung sollte vor diesem Hintergrund auch der Youtube Kanal von Maritim finden, der derzeit fast 120.000 Follower hat. Auch hier weicht Pobot von der üblichen Kultur und Vorgehensweise großer Verlage ab, indem er Inhalte jeden Samstag Abend kostenlos zur Verfügung stellt. Während man im „Apple Store“ eher eine zahlungskräftigere Zielgruppe erreicht und über Portale wie „Spotify“ die breite Masse, so fokussiert man sich über die kostenlosen Angebote auf Youtube bewusst auch auf die Discounter-Fans. Sebastian Pobot lebt in München und Budapest, er hat schon drei erfolglose Versuche unternommen, sich in den Ruhestand zu begeben… Dein größter Fehler als Unternehmer?: Auf die falschen Leute gehört zu haben... We are still in Lund and we are just down the street from Purgatorio. Torgets Taperia is a bistro with it's own on premise brewery. It's in the center of town and a great spt to people watch. They had scores of their own beer to sample. We got excited about this find. We tried three different beers. First up is Summer Ale. This is a pale ale that didn't live up to our expectations. Next is Ode to Hopes. This is an IPA but we were confused. It tasted more like a British Mild Ale or a Brown Ale. We completely missed the hops. Then we tried Emperador. At 8.2% ABV, we didn't have high hopes for it but it was a pleasant surprise. This is a classic stout with slightly burnt notes of liquorice and toffee. We really enjoyed it. Out to Washington this week for an update on the 2023 Hop Crop and to hear how the timing of the harvest impacts flavor and aroma. Eric Desmarais and Alexandra Nowell of CLS Farm in Yakima is here to share their insight. Mid-September means the hop harvest is in full swing in the Pacific Northewest, and to get insight on what is happening with the harvest I'm so pleased to be joined by Eric Desmarais, the 4th generation owner of CLS Farms in Yakima and Alexandra Nowell the technical brewing advisor to the farm. They've been busy taking stock of all that's happening amid the acres and running sensory and talking with brewers. They've also been looking at the calendar and taking stock on the aromas and flavors that the hops present when they are picked. It's something that gets a good amount of attention these days. Earlier this year they hosted a seminar titled "Finding the Edges: The Intersection of Art and Science Hop Picking Windows," and were joined by Tom Nielsen of Sierra Nevada, and Stephanie Conn of VGF Farms. The seminar explored the diversity of hop aromas that can develop based on when a variety is harvested and in this conversation they will share details on that and what they have additionally learned this season. How does harvest time impact the flavor of the hops? One example that CLS found that harvesting El Dorado towards the end of September brings out its tropical and candy aromas whereas early harvested El Dorado has more citrus and melon character. It's a fascinating subject and science.

We're on the road and made it to Lund. It's a short 10 minute train ride from Malmö and the second largest college in Sweden. Lund has never been a beer town. Well, that's changed in the past couple of years. Where COVID has been hard for a lot of places, Lund seems to have thrived with new beer bars. Purgatorio is a joint effer with wild ale brewery Brekeriet. We love them and going to their bar is a real treat. We start with Brekeriet Sommarlager. This a light slighly funky lager. We loved this and they gave us free fries to go with it. We will be back for sure. Fruktstereo is a Malmö brewery specializing in ciders and fruit beers. Brutulaijs Noveau 2022 is a cider that drinks like a red wine. We assume it's based on the French young wine called Beaujolais Nouveau. This cider is extremely drinkable and makes you feel a little fancy while you do it. There's no denying when “spooky season” comes around that pumpkin beers will be available. A popular autumnal seasonal, pumpkin beers are still a dominant force in “seasonality” in beer. Today we talk to two breweries who brew pumpkin beers with an eye to how they're made, why they are a conversation starter and their lasting impact in the world of craft beer.Guests Chad Henderson is a NC native and original team member of NoDa Brewing Company. He has been the head brewer for the Charlotte based brewery for the company's 12 year existence and is also Co-owner.
