The German Week Melbourne has come to an end. We were able to join one of their last events, the 'Kaffeeklatsch' of the Deutsche Schule Melbourne that took place last Saturday. Coffee Cake 250g soft butter 125g castor sugar 125g soft brown sugar 3 eggs 50g chopped walnuts 225g self raising flour 50g chopped dates 1 vanilla extract Set oven to 180°c and line a loaf tin or baking tin with parchment paper. Beat the butter and sugars together until pale and fluffy. Add eggs one at a time, then fold in flour, walnuts, dates and vanilla extract. Spoon into the tin and bake for about 40 minutes or until a skewer comes out clean.Coffee and white chocolate cream 35ml espresso 275ml double cream 75g chopped white chocolate 250g mascarpone 2 tablespoons icing sugarWarm 75ml of the cream with the espresso and add the white chocolate. Stir over a low heat until chocolate is melted. Whisk the remaining cream with the mascarpone and icing sugar and mix in the chocolate mixture. Spoon into a piping bag and pipe over cool cake.

Imgur AlbumSpecial ingredients - Absolut Citron Special Equipment - Citrus Zester Ingredients -Brown Sugar Crumble - 1 cup brown sugar1 tsp ground cinnamon2 tbsp melted butterCake -1/2 cup softened butter1 cup white sugar2 eggs1 tsp vanilla2 tsp baking powder3/4 tsp salt2/3 cup whole milk2 cups flour2oz lemon vodkaBlueberries - 2 cups fresh blueberries1/4 cup white sugarZest of one lemonJuice of one lemonTo make the brown sugar crumble, mix the cinnamon and brown sugar and then pour in the melted butter and mix until you achieve a consistent texture. Set this aside until the end of the recipe.Preheat the oven to 350º. To make the cake batter, start by mixing the softened butter and sugar. I used an electric hand mixer, but you can use a stand mixer or mix by hand. Once the butter and sugar is mixed, add the vanilla, eggs, and milk and continue to mix until you have a consistent texture. In a separate bowl, mix the flour, salt, and baking powder by hand so they are evenly distributed. Add the bowl of dry ingredients to the wet ingredients and mix until smooth. Add the 2oz of vodka and mix until incorporated. Put the cake batter in the refrigerator while you prep the blueberries.Add the blueberries to a medium pan, along with the 1/4 cup of white sugar, and the juice and zest of one lemon. On medium-high heat, stir the blueberries constantly as they heat up and come to a boil. The berries will give up a lot of liquid and will dissolve the sugar, creating a syrup the envelopes the fruit. Once you've developed a good amount of liquid, remove from heat and allow to cool for 20 minutes. Add your cake batter to a greased cake pan and then carefully pour the blueberry mixture on top. Put this into the 350º oven for 40 minutes. Place a cookie sheet on the rack below the cake to catch any blueberry drippings once the cake rises in the oven. After 40 minutes, turn off the oven heat. Slide the rack with the cake out and sprinkle the brown sugar/cinnamon/butter mixture on top. Return this to the oven for an additional 10 minutes.Remove the cake from the oven and allow to cool completely.
