If you’ve been out and about in Charleston,SC, then most likely you’re familiar with Home Team BBQ. But since it’s a place with multiple locations (including outside the state), those spots are  almost always busy, and they probably have your game on the TV and your favorite beer or spirit in the glass, it’s easy to bypass the idea behind it all. And the idea was simple. Chef Aaron Siegel trained at the Culinary Institute of America then cooked in fine dining kitchens for many years, and he wanted to apply his culinary training to comfort food and barbecue. And what happened was a Gamechanger, and I’m not just talking about that Home Team frozen drink. Aaron himself had to learn to build a business beyond just the food.

Tales from the pits, a Texas BBQ podcast featuring trendsetters, leaders, and icons from the barbecue industry

Justin and Jonathan Fox grew up all over Texas and brought their love of Texas barbecue with them when they settled in Atlanta, Georgia. They began tinkering with cooking the familiar flavors of central Texas in their backyard near the turn of the century and soon began to contemplate how to take it to the masses. The Fox brothers began throwing large backyard parties and eventually started providing catering services in addition to serving at their friends and eventual business partners bar.  When an opportunity arose to open their own place in 2007, they jumped on it and were well on their way. Fox Bros Bar B Q opened on Dekalb Avenue and began bringing their brand of barbecue to Atlanta full time. With an extensive menu of Texas BBQ staples alongside creative items like their chicken fried pork ribs, Fox Bros Bar B Q has been a staple in the Atlanta dining scene for over a decade. There are now Fox Bros outlets inside of BMW Stadium as well as outside the Atlanta Braves ballpark, and the future continues to look bright for Justin and Jonathan.    In addition to being successful restaurateurs, the Fox brothers are also extremely active in giving back whenever they can. Their joint venture with Home Team BBQ, Foxeria Del Sol, helps to raise money for Hogs for the Cause, a charity that provides financial assistance for families that are battling pediatric brain cancer. They've raised over $400,000 in the past five years for this cause. Good folks championing great causes and making memorable barbecue, Fox Bros Bar B Q is a business we should all be happy to support.   Catch Fox Bros. online at: http://www.foxbrosbbq.com/   Instagram: foxbrosbarbq Twitter: foxbrosbarbq Facebook: FoxBrosBarBQ   Original location: 1238 Dekalb AveAtlanta Ga 30307 Hours: Sun- Thurs 11am-10pm Fri-Sat 11am-11pm   Que-osk, fast service walk up: 120 Ottley Drive Atlanta, GA 30324 . Episode 62 - euphoria Greenville, SC 2017 Max & Matt hightailed it to euphoria in Greenvile, South Carolina to catch up with legends and rising stars of the culinary world. The conversations had there were not only euphoric, they were historic. Leading off was a 2009 James Beard Award nominee for best chef in the southeast, Mr. Bruce Moffett. Bruce has three restaurants in Charlotte, Barrington, Good Food on Montford & Stagoni. We talked about his upcoming book “South by North,” his influence on elevating the Charlotte food scene, which oh by the way he won a Pegasus award for! We did have to end the conversation when Chef Bruce began professing his love for the New England Patriots all while explaining why his son was a Carolina Panthers fan. Then, Matt & Max knelt at the feet of BBQ royalty Sam Jones as he joined us with Matthew Register of Southern Smoke BBQ. Sam and Matt dug deep into the pit of BBQ, we discussed regional differences, wood preference and of course vinegar versus tomato based sauce. We also got the official story of why National Geographic named Skylight Inn BBQ the capitol of BBQ in America and why Sam Jones BBQ is the evolution of that. Plus we get insight into Sam’s life and what its like to be the crowned prince of BBQ. Taylor Garrigan & Aaron Siegel of Home Team BBQ then stopped by our studio to educate us on how to evolve from a fine dining chef to a BBQ pit master and thus create a powerhouse BBQ franchise in multiple states. Taylor and Aaron also explained why their version of BBQ is upholding the integrity of BBQ while still being able to push it to new heights. Up and comer Chef Trey Bell of Larue Elm & Rue Bar stopped by to chat about what’s happening in Greensboro, NC. Trey also schooled us on how to run a traditional French kitchen in these modern times. To top it off, we exchanged home cooking favorites with the organizer of Lambstock, Mr. John & Sharon Park AKA Hungry Asian & Mrs. Hungry Asian. It's our longest single episode, but it's a great listen filled with history, technique & laughs. LINEUP: Bruce Moffett of Barrington's Stagioni & Good Food on Montford Sam Jones of Skylight Inn BBQ in Ayden, NC Matthew Register of Southern Smoke BBQ in Garland, NC Aaron Siegel & Taylor Garrigan of Home Team BBQ in Charleston & Aspen Trey Bell of La Rue Elm in Greensboro, NC Food Mavens John & Sharon Park aka @HungryAsianRke & @MrsHungryAsian
