Good morning from Chinatown NYC, where there are no avocados in my 42-square foot (including counters and all appliances, listen, it's like walking a gang plank) kitchen, just a COVID test in-progress and some excellent coffee from Panther Coffee, based out of Miami. The owners, Joel and Leticia Pollock, are friends from the iteration of my life after Los Angeles, we met them in Portland, from whence they decamped for Miami, to open a coffee roasting business.“Nency, Nency, can you write something for us?” This is Leticia - and here I am badly botching her Brazilian accent - asking back in 2009 that I write to the local licensing bureau explaining what coffee roasting was, the idea being totally foreign and apparently causing officials to think someone was trying to burn down the city. I did; Panther opened in 2010 and now has something like four million locations in Miami (okay, six). You should go. We are going back further today! To 1990, when my daughter was less than a year old and I saw two young women my age pushing baby strollers past my house on the street that led up to the Hollywood Reservoir. Stay to the end for a sweet addendum.Two corrections: Charlie's first band was the Plugz. (The Cruzados were second.) And toward the end I accidentally say “mash the garlic” when of course I mean, mash the avocado. Also: COVID, negative.Episode notes: Charlie Quintana, whose first and only job besides as a drummer was delivering flowers for one day in his native El Paso. He was sixteen when the band he formed and The Plugz (video) became successful. Charlie went on to become part of the Cruzados, The Havalinas and other bands, and toured and/or recorded with Bon Dylan, Social Distortion, John Doe, Cracker, Joan Osborne and, if I am not mistaken, the Gin Blossoms. I remember (though I am finding no confirmation of) this because sometimes when Charlie played in Los Angeles he would nab me some tickets, and when the Wallflowers played at the Greek Theater, lead singer Jakob Dylan announced (I am not kidding here), “This goes out to Nancy,” before launching into, “One Headlight.” (I had told Charlie I loved the song.) Maybe I'm wrong! But that's my story and I'm sticking to it.Well lookie here, I found some audio of “Meet the Neighbors.” (Or you can read it.)“Charlie Quintana, drummer for the Plugz and Social Distortion, dies at 56,” by Randy Lewis (Los Angeles Times)“Taking My Ex Back In (for His Own Good),” by Nancy Rommelmann (New York Times Modern Love)Guacamole, adapted from Charlie Quintana* 5 ripe avocados* Salt* One-half yellow onion, chopped small* 2 - 3 jalapenos, chopped small, leave some seeds* Handful of cilantro, chopped* Juice of 2 - 3 limesMash the avocado and salt. Going through the performance of the album itself f and other hits Ye blessed upon the crowd that night. I  MISS THE OLD KANYE. Warming up for the holiday's the topic of Christmas movies and shows came about and the hype was real with a long list of favorites and classics. Talked on, now passed, the joke of a stimulus package. Have some comfort food and get the new beignets from Popeyes or get a coffee from Panther Coffee, Brothers and Brawlers, or Pasión del Cielo. Bert updates us on the crypto scene as Bitcoin reached an all time high of $23K+ and drops a bit of knowledge for the people. The WML stylist Lennox made a special appearance and is sure to take your hearts. The only things that kept this podcast from going on any longer were curfew and empty stomachs. Threefold Cafe, Coral Gables’ newest all-day breakfast spot, serves up a unique combination of Australian dishes with a Florida twist. Opened this Summer by two Melbourne transplants, Teresa and Nick Sharp, they offers diners a taste of their native Australia dining philosophy with fresh local food. Chat Chow TV sat down Teresa to find out more about the restaurant, its extensive coffee offerings and some of the restaurant’s top dishes. The pair relocated to Coral Gables after Nick was transferred for work. Missing Melbourne’s “off the charts” coffee the duo decided to open Threefold Cafe. All the coffee is sourced locally from Panther Coffee with all the baristas professional trained on-site by their coffee “Yoda” from Panther Coffee. The menu encompasses their love of breakfast featuring dishes made with plenty of free range eggs, Zak the Baker bread and lots of creativity. Some top sellers according to Teresa are the “Pope Benedict” served on top of hash browns instead of English muffins; the “Smashed Avocado” bread and the “Not So French Toast” — a savory take on a classic breakfast dish. If the aroma doesn’t convince you, the gentle roar of the pre-WWII Probat Perfekt Roaster will — Panther stands for Coffee. Period. And its mission is evident in everything husband-and-wife team Joel Pollock and Leticia Ramos Pollock put into their place. To begin with, every cup of coffee Panther serves is roasted on site, in small batches, each of which have their origin in farms personally-selected by the Pollocks for taste as well as and individuality. Both Joel and Leticia benefit from longstanding relationships with coffee producers throughout the world, and these friends and colleagues not only possess generations of knowledge and passion, but they produce some of the finest lots of coffee available anywhere. After the selection of green coffee beans (using a professional technique known as “cupping”), Joel uses his 20 years of experience to roast them, achieving correct development and caramelization of the sugars present within the coffee bean, without the conversion of these precious caramelized sugars into carbon, which can result in an ashy or smoky taste. Great care is taken to expose the magnificent natural sweetness and the most subtle flavor nuances often lost in the roasting process. Furthermore, Panther fields a team of extensively- and continuously-trained baristas to showcase these wonderful coffees and the people behind them. There’s good reason why Panther has become the go-to spot in Miami, and why its coffees and expertise are now being implemented from here to New York City; that’s because a Panther cup of coffee is just how great coffee is meant to be enjoyed.
