I'm Dr. Palina Louangketh, Board member emeritus with Legacies of War and I have the honor today of welcoming to the podcast our friend, Saengthong Douangdara!Saeng is a personal chef who specializes in Lao cuisine turned content creator. After earning his undergraduate degree in social welfare with certificates in Asian American Studies and Southeast Asian Studies, he pursued a Master's degree in counseling psychology. While working as a counselor at the University of California, He also taught as a chef instructor in the evenings at the School of Gourmandise. A month-long trip back to Laos inspired Saeng to start his personal chef business, Saeng's Kitchen LLC, and cook for Hollywood clientele. Saeng's work has been featured in numerous publications such as Delish, Buzzfeed, the New York Times, and LA Times. He even won an episode of the new TBS cooking competition show, Rat In The Kitchen. Saeng is one of many chefs who are part of the Lao Food Movement, a grassroots effort to center and empower Lao cuisine. When Milne launched 12 years ago, she had no idea she would become a viral food sensation! Her Instagram has 820,000 followers, Pinterest has 255,00+ and TikTok has 2.5 million. You get the idea.   Whether she's demonstrating quick recipes, sharing tips or partnering with brands, Milne is all about making cooking delish, accessible and fun.   “From a really young age [I knew] that food and cooking are really at the heart of the table, and they bring so many people together,” she says.   Everything Delish began as a creative outlet for Milne, who was substitute teaching in Jewish schools in Toronto at the time. She was the person everyone turned to for recommendations, and instead of answering everyone personally, she started an Instagram page, called Everything Delish.    Everything Delish has changed over the years; Milne is constantly pivoting and reinventing herself as certain life events happen. Welcome to Season 5, Episode 14! Our guest today is Chef Saeng Douangdara. He's a food content creator, social media star, and soon-to-be cookbook author. Saeng specializes in Lao cuisine. A first-generation Lao American, he left a job in counseling to pursue his passion for teaching Lao cuisine.  A trip back to Laos helped him reconnect with his roots and learn more about both the history and culture of Lao food, and that's when he decided to launch his personal chef business, Saeng's Kitchen and leverage social media to raise awareness about Lao cuisine. He may have started small, but he's amassed over 700K followers and millions of views on his different social media channels. We love how his work is educational, and it's resonating with others. He's been featured in numerous publications including Delish, Buzzfeed, the New York Times, and LA Times. He's even won an episode of the TBS cooking competition show, Rat In The Kitchen. Let's go back in history (cue the cheeky rewind sounds)... It's 1909, and women can't even vote yet, but Lulu Peters was a rebel with a medical degree and a dream: to teach America how to eat and maybe—just maybe—shrink her “too-too solid bod.”Fast forward to 1918, and boom! She publishes Diet & Health: With the Key to Calories—the first bestselling diet book. Suddenly, bread isn't just bread; it's 100 calories. Pie? 300. Food had become numbers. Delish.Around the same time, the industrial revolution told us, "Hey, you're basically a machine!"—and machines need fuel control. Being “super skinny” went from a rich person's nightmare to the total dream. The bathroom scale arrived right on time, gleefully offering up your daily measure of self-worth, and just like that, thinness became a moral virtue.The only way to lose weight is by maintaining a caloric deficit—that's an irrefutable fact. Rerun: Hooters, the beach bar chain famous for its flirtatious waitresses, first flung open its doors in Clearwater, Florida on 4th October, 1983. Its publicity-friendly ‘Hooters Girls' - and a chance visit by John Riggins, star fullback for the Washington Redskins - ensured the concept took off, spawning 425 outlets in 30 countries. However, more recently, Hooters was hit by rival ‘breastaurants' Tilted Kilt and Twin Peaks, and a slow generational shift away from ‘male' environments in which exclusively female serving employees are forced to wear sexualised outfits and banter with customers.
