The famed New Orleans Po' Boy is a sandwich to beat all sandwiches. It's messy, generous, and utterly delicious: a baguette stuffed with lettuce and fried prawns (or “shrimp”) and oysters, and with plenty of punchy mayo. Makes 2-4 Ingredients For the sauce, whisk the ingredients below until combined, taste and season to suit you. ¼ cup mayo 2 tbsps. thousand island dressing 1 tbsp hot sauce (or to taste) 1 tsp smoked paprika 1 tsp Worcestershire sauce 1 tsp horseradish (optional) Squeeze of lemon Get the below sorted before you start frying: 1 long soft baguette or 2–3 smaller rolls, split lengthwise Dressing as above for spreading Shredded lettuce Sliced tomatoes Pickles, sliced Fried seafood: 200g raw prawns, peeled and deveined 6 fresh oysters, drained ½ cup plain flour ½ cup fine cornmeal ½ tsp cayenne pepper (optional but good) ½ tsp each dried thyme & oregano ½ tsp sea salt + pinch of pepper Oil for frying (neutral oil like rice bran) Method Mix the flour, cornmeal, herbs and spices and salt in a shallow bowl. Pat the prawns and oysters dry – this helps them crisp beautifully. Toss them gently in the flour mixture until well coated. Heat about 1cm of oil in a frying pan over medium-high heat. Fry the prawns and oysters in batches so they don't crowd the pan. They only need 1–2 minutes per side – you want golden, not tough. Drain. To make the po' boys, split the baguette and butter generously with butter, mayo, or the sauce you've made. Add the lettuce, tomato, pickle and then pile in the prawns and oysters. Indiana-rooted funk band The Main Squeeze never imagined they'd end up in a ballet. Joffrey Ballet choreographer Chanel DaSilva had other plans. Her new work “Wabash & You” — opening Nov. 6 at Harris Theater — is a love story set in downtown Chicago, based on her own experiences. The production invites The Main Squeeze onstage to perform live alongside Joffrey Ballet dancers in this love letter to Chicago (and to hopeless romantics). After touring the US and Europe in support of their sixth studio album, lead singer of The Main Squeeze Corey Frye called in to Vocalo to break down how the band got involved with DaSilva and the Joffrey. "Wabash & You" is part of "Matters of the Heart," the Joffrey Ballet's five-show residency at Harris Theater in Millennium Park. The two-act program also features Annabelle Lopez Ochoa's Frida Kahlo-inspired work “Broken Wings.” It runs through Sunday, Nov. 9. And a lot of it. From raw materials to finished goods, pallets to parts, every inch counts. But how and where things are stored? That makes all the difference between a safe workspace and a ticking time bomb. Storage hazards can sneak up fast. You stack a few boxes a little too high. Squeeze one more pallet in a tight spot. Before you know it, you've blocked an exit, buried a fire extinguisher, or created a toppling hazard. It happens. But it doesn't have to. A strong safety culture means staying ahead of these risks before they become problems. Here are a few ways to keep storage safe and controlled in your facility: Don't block emergency equipment. You can't afford to lose time during an emergency. Always keep exits, fire extinguishers, eye wash stations, and control panels fully visible and accessible. Not just “mostly clear”—completely clear. Keep heavy items low. Heavy boxes and materials should be placed on the bottom racks or the floor—not at eye level or higher. If it falls, it's a serious injury waiting to happen. Use proper lifting techniques and get help when needed. Gravity doesn't give warnings. Secure stored goods. Shrink wrap. Safety straps. Pallet locks. Use whatever it takes to keep stored items stable and secure. If something looks off-balance, it is off-balance. Take the extra time to fix it. That's not a suggestion. That's a safety rule. Keep aisles and walkways clear. Don't stack, store, or park anything where people need to walk or work. Blocked walkways create trip hazards, slow down response times, and cause congestion. A clean path is a safe path. Watch for pests and water damage. Leaky pipes and hidden pests can quietly ruin inventory—and your racking system. Keep an eye out for soggy boxes, rust, signs of nesting, or chew marks. If something smells off, there's probably a reason. As always, these are potential tips.
