C'est le retour de votre podcast Choses à Savoir Gastronomie ! On n'allait pas vous laisser sur votre faim comme ça ! Je m'appelle Sarah et je suis votre nouvelle voix. Je débarque de Normandie avec tout un tas de questions gourmandes que vous vous posez aussi sûrement. Démarrons cet épisode par une tradition bien de chez moi. Pas de grand repas sans trou normand ! Mais qu'est-ce que c'est ? Le trou normand, c'est une boule de sorbet à la pomme arrosée avec un peu de calvados, une eau-de-vie, elle aussi à base de pommes. Ses origines remontent au XVIe siècle. Et au départ, il n'y avait pas de sorbet. On prenait un petit verre de calva, cul sec. On le servait traditionnellement au milieu d'un repas entre le poisson et la viande. Désormais, les repas sont plus léger, encore que ! Moi, je préfère le prendre après le plat principal et juste avant le fromage. À l'époque, on pensait alors que l'alcool brûlait les graisses. En fait, le trou normand a deux effets : il nettoie le palais et il facilite la digestion. C'est surtout grâce au sorbet puisqu'il est composée essentiellement d'eau, d'un peu de sucre et de fruits et il est très frais. Ainsi, il crée un vide, un « trou » dans l'estomac pendant un repas un peu lourd et gras et permet de repartir de plus belle. Vous l'avez compris, c'est le sorbet qui fait tout le boulot, alors vous pouvez prendre votre trou normand sans alcool. Et si vous n'aimez vraiment pas le calvados et la pomme, il existe des variantes notamment celle au citron. Ça s'appelle le colonel. Un sorbet au citron remplace le sorbet à la pomme. Et au lieu de mettre du calva, vous arrosez votre boule de vodka. Après, chaque terroir à son trou avec ses produits locaux. Les Lorrains prépare le leur avec de la mirabelle. Les Gascons, eux, le font à base d'Armagnac. Mais les Normands y sont tellement attachés qu'ils ont fondé une confrérie. En 1999, né le Grand ordre du Trou Normand des calvados, cidres et pommeaux. We also talk to Russell Moore, chef and owner of Camino in Oakland.
