Https://www.vinnietortorich.com/2021/02/wood-fire-cooking-great-meat-anya-fernald-episode-1781 PLEASE SUPPORT OUR SPONSORS ANYA FERNALD Anya has been on the show once before. She is the woman behind Belcampo! Check out her instagram here: https://www.instagram.com/anyafernald/?hl=en Anya had her first "wow" moment with cooking meat in Sardinia when her host cooked her a sausage. The next, she saw a woman cook on the street. Since, she has really cultivated her love for outdoor cooking. So much wellness can be gained through food. This ranges from health benefits of what you eat and the power of a family meal. WOOD FIRE COOKING Using a wood fire is Anya's preferred method of cooking. Skill cooking is great because you really take it all in. You can smell it, hear it, see it when it's on the grill, you can feel the heat. With wood fire, you have to pay more attention. It's a whole new level of cooking that is particularly satisfying. If you're a foodie, learn all the different ways to cook something. This is a wonderful way to stay outdoors. It's beautiful in the ways that it's simple and interesting in the ways that it is complex. Anya now teaches others how to cook this way. MEAT VILIFICATION MOVEMENT There is definite movement against meat for environmental reasons.  Meat farming can be environmentally sustainable. There are ways to farm (which Belcampo focuses on) that are simply not bad for the environment. We need ruminants to save the soil Responsible farming is the future.  How do we get more Belcampos and Polyfaces? Hopefully people invest more in this high quality, regenerative meat. On this episode I speak to Darren Doherty. Darren is one of the world’s most well-respected farm planners. He has developed a design system called the Regrarians Platform, which incorporates ideas and from existing frameworks with Darren’s own innovations. The platform was greatly influenced by people such as PA Yeomans, whose scale of permanence forms the basis of Darren’s framework. Darren’s approach also draws on Allan Savory’s work in holistic management and Bill Mollison and David Holmgren’s insights from permaculture. Darren has worked around the world in many different kinds of climates and also has extensive experience regenerating landscapes in Australia. Darren and his family have also produced an award-winning film called Polyfaces, which profiles Joel Salatin and his family on their innovative farm in Virginia. You can stream it at polyfaces.com. I wanted to talk to Darren about his own history, and also get his thoughts on the bushfires in Australia, and how we can try to mitigate them in the future. We don’t spend a lot of time specifically discussing the Regrarians Platform itself, so I encourage you to look up Darren’s lectures on YouTube, or go to regrarians.org to learn more about it. At some points, we do get a little bit into the weeds, but even if you’re not familiar with land management or farming, I think you’ll still find Darren’s insights on those topics interesting.

Today we had the great pleasure and honour to host a true hero in the space of regenerative farming , and a whole lot more besides! Master land steward, farmer rights activist and soil regenerating extraordinaire Joel Salatin. Joel Salatin is the leader of the super entrepreneurial and eclectic, Polyface Farm, which once sporting 4 meter deep erosion gullies, has become a benchmark for what is possible in highly synergistic and nature respecting agriculture. Joel Salatin is arguably one of todays most famous farmers. An outspoken activist for farmer's rights and direct farmer consumer relationships. Prolific author and blogger, I've posted links to a great selection of Joel's books and his blog. Both a true leader and a team player Joel is an active advocate for a truly engaged and deep connection with the earth and each other, Joel tackles the modern day ecological issues with a very personal and highly effective approach that combines science, eco intelligence, business savvy and spiritual connection. Joel is featured in the movies Fresh, Food Inc, American Meat, Farmageddon, Whats With Wheat and the Regrarians collaborative biography, Polyfaces. I really felt a special connection with Joel, and it was at times an emotional meeting, not least due to his expression of love for the Jewish people and his thoughts on the importance of establishing a deeply connected, ecological sound and sacred farming in Israel. Eternally positive, I felt somewhat underneath my discussion with Joel the feeling of receiving from an elder. Joel is a man who has talked the talk and walked the walk, and has really developed a deep intuition and understanding of the harmony in natural cycles and the dynamic of production systems. Joel brings a dignity back into a space that is, pretty much bankrupt of it from all sides. This is the first of many more and deeper connections between Joel Salatin and EcoIQ. Jon Moore reporting! Well at long last the voice is back, sort of and I have some thoughts to catch up on and some housekeeping too. Housekeeping first. I heartfelt thanks to Angry Genghis for the review on iTunes. Really, thank you so much. I might point out though that I'm not in New Zealand but in Australia. The wonder of the interwebs is the dissolution of borders and the possibility of direct conversations across the globe. If anyone is doing interesting things out there and would like to be interviewed, drop me a line at: podcast@worldorganicnews.com. Now let's turn to the news! I’ve had time to think these past few weeks and there has been one stand out idea stuck in my mind the few weeks. Soil carbon! The post from millennial mutt entitled: The Call of the Farm: The Polyfaces Vision for a Better World explains how we can reverse the excess carbon dioxide accumulated in the atmosphere by returning it to the soil. This has the added benefit of increasing the fertility of the soil. Why, I hear you ask, is there a need to place carbon in the soil? More correctly, back in the soil? Well, I’m sooooo glad you asked. When the Second World War ended, there was an industry designed to pull nitrogen out the atmosphere. There had been a huge demand for this Nitrogen as part of the munitions industry. These people pushed for the use of this nitrogen as a fertiliser. Nitrogen is one of three key macro elements necessary for plant growth, Phosphorus and Potassium being the other two. Now the application of synthetic Nitrogen has the effect of destroying humic acid and the fungal communities under the soil surface. The deal with artificial fertiliser is this: Increased short term production for 1 to 2% loss of topsoil. Seems like a good system to start with but, but in the end what happens is basically hydroponics in subsoil. The process also releases soil carbon to the atmosphere both in the production of the synthetic Nitrogen and in the application to soil. So a return to organic farming, regrowing soil structure, humic acid, fungal communities and tree cover are relatively simple to introduce and effective. The UN argues only smallholder organic farming can feed the world anyway so let’s get to it! I’ve included a link to an ABC Science page back in 2007 regarding a soil carbon conference in Orange, NSW. This idea is nothing new, the problem seems to be most climate activists are focused upon urban and industrial CO2: coal fired power stations and motor vehicles. If they look at the bush it’ only to point the finger at factory farms. As I think I’ve made clear before, they and I are on the same page with factory farms. But the “simplicity” of returning soil carbon seems to have passed the urban types by. This is a shame. Polyface Farm, Virginia, USA is run by a contrarian individual: Joel Salatin. I have links to his site and the Wikipedia page in the show notes. He’s been walking the talk for decades so it is possible. In the same way Permaculture, Natural Farming and Biodynamic methods all work and are productive, we have a way forward. It’s under our feet. And that brings us to the end of this week’s catchup podcast. If you’ve liked what you heard, please tell everyone you know any way you can! I’d also really appreciate a review on iTunes. This helps others to find us. Thanks in advance! Any suggestions, feedback or criticisms of the podcast or blog are most welcome. email me at podcast@worldorganicnews.com. Thank you for listening and I'll be back next week as usual.

We've appreciated for a long time that we are what we eat. Slowly and surely, we're starting to appreciate that our landscape reflects what we eat too.   Today I’m chatting with THE Joel Salatin from Polyface Farm. Polyface Farm’s mission is to develop emotionally, economically, environmentally enhancing agricultural enterprises and facilitate their duplication throughout the world. Joel has been dubbed the “world’s most innovative farmer” by TIME Magazine. For almost six decades his farm in the Shenandoah Valley in Northern Virginia USA has used no chemicals and feeds over 6,000 families and many restaurants and food outlets within a 3 hour ‘foodshed’ of his farm. His farm is in the redemption business: healing the land, healing the food, healing the economy, and healing the culture and I can’t tell you how excited I am to be chatting with Joel today. In this Part 1 of 2 episodes you’ll gain an understanding of: What regenerative farming is. How animals have a vital role to play in healing marginal land. Why we should care about where our food comes from.
