"I've been spending the last week or so in the Pacific Northwest and this is the first of several shows that I'll be bringing you from Washington and Oregon. It kicks off at Chuckanut, the brewery founded by Mari and Will Kemper and recorded at their brewery in Burlington, Washington, south of Bellingham where they long operated a pub and restaurant. This production facility is largely dedicated to lager, with a few ales thrown for good measure, but mostly lagers. They'll expand upon what brought them to this town, across from the airport in a minute and expansion plans for what is lovingly referred to as South Nut. And we'll talk about the intersection of clean and wild beers with their brewery neighbors Ron Extract and Amber Watts who run Garden Path Fermentation, a temple for all things drinkable from beers to wine, mead, and more. While it may seem, at first glance, little to connect them aside from the larger beer industry, there are actually strong ties."-John Holl This Episode is Sponsored By:New Holland BrewingDragon's Milk began as a single barrel experiment over 20 years ago at New Holland Brewing Company and has since grown to become the best-selling American-made stout. Today I'm joined by Kale Divelboss, brewer with Chuckanut Brewery based in Washington state. We dive into a range of things from him getting into craft beer - and a psychic telling him when he was going to move - wild, to business and music. This was a fun episode. So before we jump into the conversation, I wanted to share that after this episode comes out, I plan to take a hiatus from the show for a bit. I'm not sure how long, but I recognize the space I'm in right now and that means I need to pause a few things I do and reset my focus on the things that need it most. I expose in this episode, more than I have before, that I'm working on a brewery project which is the primary thing that needs my attention. I recently started working again after taking 6 months off and the transition has revealed a familiar pattern. I have this habit of trying to maintain multiple things on my plate and give them appropriate attention, but it's not realistic at this point. The caveat to where I'm at is that I enjoy all of the things I do, but it's a great reminder that there is only one of me. I only have 100% of myself to give to the projects I keep on my plate, which means not every thing is getting the appropriate proportion of the Megan pie. So… I'm going to take a moment for myself, honor the transition I'm going through, brainstorm ways to manage my schedule differently and see how I can more efficiently use my time and resources to continue to work on the projects that matter to me without having the pressure of keeping up with everything. I don't see this show going away ever, I think it's a great time to evaluate how I present this show to you and consider options whether it means the format of the show, or platform that I send it out to the world or whatever.. I'm also open to ideas that you can email or message me. Mari and Will Kemper love lagers, but the locals haven’t always loved their lagers back. When they returned to the Pacific Northwest and opened the doors to Chuckanut Brewery (https://chuckanutbreweryandkitchen.com) in 2009, craft fans at the time wondered why they didn’t just make IPAs like everyone else. But they had a focus and determination to brew the finest quality craft lagers they could (despite their small size), and 24 GABF medals later, their approach has been validated many times over. In this episode, they discuss: Building a brewhouse and developing the ideal process for lager brewing Optimizing the mashing routine for full attenuation Treating lager with sensitivity and reducing stresses throughout the brewing process by reducing transfers Taking a size-specific approach to brewing and fermentation Asymetric boil heating and better whirlpooling Producing great lagers in cylindroconical usnitanks Middle cropping yeast Extremely slow crashing with automated tank temperature control Lager filtration Spunding and finishing lagers A former chemical engineer in his days before brewing, Will Kemper tackles brewing problems with an analytical gaze, dissecting and understanding the purpose before building a process. Here, he offers a glimpse into that clever problem solving approach. The locals today love and embrace their lagers, and a new generation of lager brewers has trained under the Kempers' tutelage. But the Kempers aren't resting on their laurels—there's more lager to brew, and more minds to change. *This episode is brought to you by: * G&D Chillers (https://gdchillers.com): As the brewing industry’s premier choice for glycol chilling, G&D Chillers has set the standard on quality, service, reliability and dedication to their customer’s craft. They need more flavor. Extract alone is a weak flavoring agent and can leave a chemical aftertaste. But there's a better way. The craft concentrate blends from Old Orchard are packed with REAL FRUIT FIRST, no added sugars, and just enough natural flavor. Breweries are turning to Old Orchard concentrates for seltzer with more body, color, and aroma. Turn seltzer skeptics into supporters with seltzer that drinks like a beer. In the first of three conversations from a trip to Bellingham, WA we interviewed Mari and Will Kemper of Chuckanut Brewery and Kitchen. Join us for a free-flowing conversation about their more than 25 year career in craft brewing and learn more about Will's important contributions to the industry as a whole. Mari and Will are legends in the craft beer world, particularly here in the PNW, who are quietly making some of the best lagers in the nation.
Founded in 2008, Chuckanut is the second oldest brewery in Bellingham and one of the oldest in Washington. This isn’t Will are Mari Kemper’s first rodeo: Chuckanut Brewery takes all that they have learned and makes it work hard as their medal wall shows. They consider themselves the parents of many local breweries who got their starts brewing here. They specialize in lager beers, recently opened a new production brew house, and earlier cracked the top 25 largest breweries in Washington. I couldn’t be more excited to talk to the folks behind so many award winning beers. It’s obvious that the know what the are talking about and put great care into everything they do.
