Deutschland und das Bier. Das gehörte immer zusammen. Doch der Befund am Tag des Bieres: Das einst so beliebte Getränk steckt in der Krise. Die Nachfrage sinkt. Der Export und der Absatz im Inland gehen zurück. Brauereien schließen und der Craft-Beer-Trend ist auch dahin. Dafür hält sich aber der zu alkoholfreiem Bier. Egal ob Pils, Weizen, Helles, Kölsch oder Pale Ale. Beliebt sind die isotonischen und mineralischen Eigenschaften der Getränkemischung aus Hopfen, Malz, Hefe und Wasser. Für die auch ohne Alkohol das Reinheitsgebot gilt. Für das erste alkoholfreie Bier vor etwa 50 Jahren mussten sich die Hersteller noch rechtfertigen und wurden belächelt. Heute sieht das mit rund 800 verschiedenen Marken ganz anders aus. Was vielleicht daran liegt, dass insbesondere junge Menschen ihre Beziehung zu Alkohol hinterfragen. Sicher ein Grund, warum die Brauereiwirtschaft jetzt auf Alkoholfreies setzt. Denn die Frage ist: Wie sieht die Zukunft des Bieres aus? Darüber sprechen Bierbrauer Wolfgang Koehler, Holger Eichele vom Deutschen Brauer Bund, Alkoholforscher Helmut Seitz und Christoph Then von der Initiative “No Patents on Seeds”. The New England IPA (NEIPA) or Hazy IPA has come to dominate the beer landscape with most breweries having at least one (or sometimes entire portfolios) devoted to the beer style. But how did this happen? In 2013, a small group of breweries in New England, all of which were quite tiny at the time, began to brew a beer that took what we knew of as IPA (bitter, clear) and turned it on its head, creating a thickish, orange colored beer with tons of hop flavor but not a lot of bitterness. The world took notice and all of a sudden, the NEIPA was a worldwide phenomenon. Baltic Porters, a beer famous in Eastern Europe, is a unique brew for sure. Born out of the love and thirst for English porters in the 18th and 19th centuries, Eastern European and Northern European brewers took their own access to local ingredients and made a new style out of the original porter and in this, fundamentally changed the way we think about dark beer. For one, most of the Baltic porters are made with lager yeast, a sharp contrast to other porters in America and England brewed with ale yeast. Farm-to-glass breweries are a truly phenomenal experience as a drinker, so it was such a pleasure to chat with some folks who are doing one of the finest in the province. Phil and Gail of GoodLot Farmstead joined Cee and Nate to talk about their journey from leaving the city to buy a farm, starting to grow hops and learn about beer to becoming a full-fledged brewery, why sustainability is important to them, their approach to beer and why they focus on all-Ontario ingredients, the difference between organic farming and regenerative farming, how they've crafted their impeccable beer garden experience, their phenomenal food program via chef Phil DeWar of Soulyve, and the collaboration between the Caledon breweries. They got into some of GoodLot's amazing brews - Farmstead Ale Pale Ale, Philsner Pilsner, Highfalutin English Special Bitter, Yonder West Coast IPA, Stones Throw East Coast IPA, and Pippa Porter. They share the different beer trends that were emerging in their very different parts of the country, with hops being a central part of one brewer's background and almost completely absent from the other's. Cameron also discusses his time in the military and in the tech world and what compelled him to move with his wife to Chicago, where he had never lived before, and open a brewery with his sister. Cameron also explains how hop contracts work and why they're so brutal for brewers to work with. What is an English IPA and what is an ESB? Timothy explains the concept behind the “Extra Special Bitter” and how they developed an English Pale Ale in order to make a certain style more palatable – and marketable – for customers. Katherine brings up a conversation about whether the Western palate really is designed to handle hops (is it?) and Brian explores the idea of a person's palate changing as they grow older. What is hoppy and what is earthy?
