In the 18 months since our first podcast with True History, a lot has changed for the Toronto Lords of Lager. Adam and Matt joined Cee and Nate on the pod to catch up on the haps, including their partnership with their in-house, authentic Austrian food program (Beisl), their approach and brand voice on social media vs newsletters, their friendship with the Mellön boys, how their Canadian Pilsner Project came about, why Adam doesn't do tasting notes, how valuable their co-sign is, their Gold Star brand and why it's different from other True History beers, how they work with their maltster in the US, the difference between an Italian Lager and Italian Pilsner, their fun serving methods (including the hot poke stick), and their dope events. They got into a half dozen TH bangers - Gold Star Premium Lager, The Canadian Pils from The Canadian Pilsner Project, Something Italian Italian-style Lager, Beisl Beer Modern Vienna Lager, Mild Lockout Helles Lager, and The Governator Doppelbock. This was hilarious and informative - cheers! BAOS Podcast Subscribe to the podcast on YouTube | Website | Theme tune: Cee - BrewHeads

We're taking another style deep dive ABV-style with the pride of Munich: the Helles Lager. We try a German classic before exploring four local interpretations of the unfussy easy-drinking style, but as always, it's the variations that make it interesting. Also, Ryan is in desperate need of some Inception Pants, Craig won't even stand up for fewer than three decoctions, and we reminisce about cool record stores. And remember: puns don't provide pants. There were revelations, a developing scandal and a wild robbery that may become more significant later in the season. This is a season with characters full of secrets and skeletons in their own closet that are slowly emerging. I'll discuss that and more on this episode of Brewstilled with a Helles Lager from Flatland Brewing Company as the beer pairing.

Kitchener, ON is a tight-knit brewing scene, and one man has been a pillar of the community for around a decade now. Rob Hern launched Short Finger Brewing in 2019 after running a successful home brew shop out of the same space, and he jumped back on the pod after two years to catch Cee and Nate up. They touched on his love for his "bastard Gueuze", why he transitioned from a home brew shop to a brewery, his connection with Bebo from Third Moon, how he curates his taproom lineup, the full story behind Pulp (his legendary collab with the now-defunct Barncat Artisan Ales) and successful launch event, his Eisbock collab with the also now-defunct Half Hours On Earth, his relationship with Arabella Park, the story behind their flagship Lando, and they also talked about the Short Finger x BAOS collab for the BAOS 10th Anniversary this spring. They got into five killer beers - Lil' Sippy mixed fermentation session saison collab with Escarpment Labs, True Believer Pale Ale, Existential Risk golden sour aged in peach brandy barrels, Fresh Hell Helles Lager, and Lando (AI) variant, their neutral oak blended barrel-aged farmhouse "bastard" Gueuze. He also explains the story behind the beer's name, “Good Familiars,” and the wide range of art forms from which he draws inspiration for his beers. Independent bottle shops were one of the biggest wins from the pandemic for Ontario craft beer drinkers, and in this latest episode of The Business of Beer, we catch up with two bottle shops x contract breweries that approached it completely differently. Michael of Gather Brewery & Glassworks and Alexander of Lovebird Snack Club joined Cee and Nate to chat about the logistics and challenges of opening a bottle shop in Ontario, why it's so difficult to maneuver around the laws, the benefits and downsides of both approaches (starting a contract brewery then a bottleshop vs starting a bottleshop then a contract brewery), the limitations of contract brewing, working with the LCBO, the bureaucracy of alcohol sales in Ontario, how it works with licensees, and their future plans for their beers. Beer education is something we're passionate about here at BAOS, so it was an honour to spend some time with Beer Educator, Kim Lucas! Her mentor Michelle Tham discussed beer and food pairings and Cicerone skills on episode #110 of the Adjunct Series, and this is somewhat of an unofficial follow-up, this time with a focus on brewing. Kim curated three beers from Bench Brewing (where she currently works) that showcase three of the main ingredients in beer - their Lincoln Lager which highlights malt, their Short Hills Hazy IPA which highlights hops, and their Soak Up The Sai-sun Saison which highlights yeast. Kim even supplied us with bags of malt and hops so we can smell (and in the case of the malts, even taste) the ingredients as we drink the brews. In this episode Bob and I keep crushing lagers. This week we travel to Munich, Germany and look into the Munich Helles lager. A beer for beer lovers, the German-style helles is a malt accented lager beer that balances a pleasant malt sweetness and body with floral Noble hops and restrained bitterness. The helles is a masterclass in restraint, subtly and drinkability which makes it an enduring style for true beer lovers and an elusive style for craft brewers to recreate. The German helles reminds beer lovers that the simple things in life are usually the most rewarding and worth pursuing.   Style examples: 1.     Masthead – Augenblick 2.     Wooly Pig Farm Brewery – Rustic Helles 3.     Noble Beast Brewing Co. – Third Dimension Helles     ABV: 4.7-5.4% IBUs: 16-22 Color: 3-5 Serving Temp: 38-40F Serving Pressure: 7-12psi   Beer Representation: Wanderer ABV: 5%  IBUs: N/A Beer Description: Wanderer is our unfiltered German-style Helles Lager. A meticulous, highly technical beer brewed utilizing traditional techniques and ingredients, Wanderer is crisp, bright, and immensely enjoyable. Wanderer pours a brilliant straw gold color in the glass with a puffy, bright white foam. It carries a flavor profile of doughy malts, light straw, clean lager yeast, and just the right dash of zippy noble hops. Beers that command your attention are a wonderful thing. Beers that can fade into the background and sort of be an unspoken companion to celebratory moments in life are also a wonderful thing and deserve to be held in equally high esteem. As a crisp, highly drinkable, and beautifully executed beer, Wanderer fits this profile beautifully.   Support the show by doing your Amazon shopping through our affiliate link. Co-Founder Graham Spence and Head Brewer Kevin Freer joined Cee and Nathan for a super fun chat about their approach to beer and obsession with crispyboiz, Graham's pilgrimage to the Czech Republic via the government program, why their flagship beer is a Belgian Saison, their disdain for their uber popular dark beers, and why beer festivals aren't the greatest marketing opportunities. They got into four killer beers - King Street Belgian Saison, Hollinger Helles German Lager, Jaromir Czech Pilsner, and 1 Up NEIPA. This was a great one - cheers! There's almost nothing we love more here at BAOS than a successful contractor-to-brick-and-mortar story, so this chat with Griffin Data of Newark Brewing was right up our alley. We connected with Griffin back in 2018/2019 when they were budding contractors, and now they've opened their own brewpub in Beamsville, ON, deep in Niagara wine country. Cee and Griffin spoke about their journey from being contractors to now offering contract services to up-and-coming breweries themselves, their approach to their beers, why they chose to focus on mostly lagers and Belgian styles, how their incredible kitchen came to be, and the growth of craft beer in the Niagara region. They crushed Newark's Helles Lager, Huhh Yeah Light Lager, Oktoberfest Märzen and their flagship Dunkel. Cheers! Business Over Beer episode #81. with Loowit Brewing Company  Welcome back to part 2 of our interview at Loowit Brewing Company with Co-Owner Thomas Poffenroth, Head Brewer, Landon Smith, and Sales Manager, Jason Green.  In this episode, we dig a little deeper into the background of each of our guests, how the Loowit Brewing Company got its start and how these guys all ended up here together. Also, we get into the business of brewing, discussing self distribution versus hiring a distributor partner, the importance of supporting local, as well as how tough it can be to jump in on niche beer trends.   In the end, we learned that Loowit is gonna do what Loowit does. And, we're happy about that, because we love what they do, it's great for beer drinkers and great for our community.  Prost!   Staying true to yourself is always a good small business strategy Finding your way as a new small business owner is really challenging. For us at TH3 Entertainment (the parent company of Business Over Beer), we are still refining our business model and have gone back and forth on various strategies.  One of the temptations is to put all your focus on trends and fads. Don't get me wrong, understand the short and long term trends of your business, your industry and the broader market is a crucial piece of running a successful small business. Moreover, understanding the difference between a trend and something that's trendy, is an important distinction.   In our latest episode, Loowit Brewing Co-Owner, Thomas Poffenroth, talked about the trend curve in brewing, and how being too far ahead of the curve can be just as bad as being behind the curve. Thomas says one of his biggest fears is becoming irrelevant, a fear that so many of us small business owners can relate to, and, if you are not careful, one that can easily send you off track chasing the latest shiny objects.  So as a small business owner, when deciding whether or not to put in your hard earned time and money to ride the wave of the latest trend, the first thing to ask yourself is if you are being true to yourself. Don't change your business model if it means changing what you're all about at your core. Follow the trends that align with your business model and your mission. If the trend turns out to be a fad and dies out quickly, you will be left with a product that still makes sense and you will likely still have some demand for it within your customer base.  But if you chase a trend that is counter to what you do at your core, even if you get the timing right, you may struggle to find a market, your current customers may not want it, and the new customer acquisition costs for something that is misaligned with your business can turn the opportunity into a liability.   In the end, take Loowit's advice and keep focused on doing what it is that you do, and don't be tempted to chase a brass ring that's not the right fit for your fingers.    Angie's Mystery Beer: Loowit Brewing - Vancouver, WA Mount St. Helles, Helles Lager, 4.8 ABV, 21 IBU "A traditional German Lager made with Skagit Valley malts and NW Hop german varietal hops. In the never-ending evidence that elections have consequences, Wednesday evening the right-wing dominated Wisconsin Supreme Court ruled Governor Tony Evers’s stay-at-home order unconstitutional. Following the ruling, the Tavern League of Wisconsin told all its members to open their pubs asap. Soon social media was filled with pictures of packed bars with zero social distancing. The grand experiment has begun. Governor Evers could only say, “We’re in the Wild West now.”   Dr. Anthony Fauci - one of the few trusted voices on the White House’s coronavirus task force, testified remotely before the Senate this week. Fauci told Senators that a spike in deaths should be expected if states begin to reopen without the proper protocols and protections in place.   Public higher education is on the chopping block across the U.S. as disaster capitalist politicians use the cover of the COVID-19 pandemic to institute mass layoffs and budget cuts. The deepest cuts so far may be those at Missouri Western State University, which may make it easier for other state university systems to do the same.  Shanna Danielson, who is running for State Senate in the 31st district, got a big endorsement this week from Auditor General Eugene DePasquale. In his endorsement, DePasquale “Shanna is smart, hard-working and brings the highest level of integrity. She will be a state senator we can depend on to lead, for our families and our community.” Danielson is taking on corporate shill, Mike Regan, and is running strong on her support for working families and a state government that focuses on people first.  Pennsylvania is not immune from the deep cuts in higher education. Local faculty union presidents at Kutztown University and Cheyney University were notified that their administrations are considering eliminating adjunct, tenure-track, and tenured faculty. Of course, Raging Chicken has been covering PASSHE’s deceptive budget and accounting practices for years. As the state budget battles prepare to heat up, it does not look so good for Pennsylvania’s 14 state-owned universities.  Trump visited a medical equipment supplier in the Lehigh Valley on Thursday. His landing at the Lehigh Valley International Airport was greeted with a huge caravan of cars protesting Trump’s visit. The action was organized by Make the Road. One of the signs from the caravan summed up the message: “Trump Failed 3,943 Pennsylvanians dead from COVID.” Of course, there were also dozens of Trumpistas lining Industrial Boulevard in Upper Macungie Township. Most were not wearing masks.  And, of course, today is the big ReOpen PA rally in Harrisburg, underway as I record this. Early images look like every other Trump rally. My favorite sign so far is “Fear is a Liar.”  A 24-year-old man in Perkasie, PA - yes, my neck of the woods - punched a female store clerk in the face several times after she insisted he wears a mask in the store.  NASA researchers have identified a string of lava tubes in the Hellas Planitia area of Mars that may prove promising for a future Martian base. Lava tubes would help protect astronauts from the relentless solar radiation.  One of the largest pieces of space junk landed back on Earth on Monday. The 18-ton empty core stage from a Chinese rocket launched on May 5, passed directly over Los Angeles and Central Park in NYC before landing in the Atlantic Ocean.  Free Will Brewing rolled out its new online store and began to ship to all PA addresses. Sun Servants - that tasty Helles Lager - is back in stock and ready for shipping. I’ll have a report back on their Sweet Cherry Vanilla Mash. You can check out their story at FreeWillBrewing.store. You can order online and pick up at the main brewery in Perkasie, or have them ship it to you. Get together with some friends and order $125 or more and you’ll get free shipping too.

What's better than beer and baseball?  On this Memorial Day weekend, we celebrate these two great things. Terrapin's ATL Brew Lab is located in the Battery, home of SunTrust Park and the Atlanta Braves.  We talk to the crew from the Brew Lab about brewing beer for ballparks, creative brewing at a smaller facility vs. a larger production brewery, and the sheer joy of Fox Brothers country fried ribs.  TRUCK AND TAP'S BEERS OF THE WEEK: A bevy of Terrapin ATL Taproom beers, including an English mild, Helles Lager and Dopplebock.    HEADLINES:  The TTB has brought the hammer down on “cannabis derivatives” in beer Schmaltz Brewing Company has sold its Clifton Park, NY Brewery Zundert Trappist 8 Ale is Heading to the US Craft Beer Crowdfunding Organization “The Brewing Investors Guild” Launched in Colorado Sweetwater Plans to Convert their Tasting Room into a Bar and Restaurant Next week, we're talking to Vermont's Von Trapp Brewery. Have a great weekend, and don't forget to DRINK LOCAL. Cheers!  PS: Aaron here. I just wanted to let you all know this is my last Beer Guys Radio show as full time host. With three children and increasingly heavy workload at my "real" job, it's time to pass the torch to someone who can take this show to the next level.  I'll still be around, hanging with the crew from time to time. And I'll also be working on the marketing team at Monday Night Brewing. But after 20+ years in broadcasting, it's time to call it a career. I have truly enjoyed my time with Beer Guys, and am incredibly indebted to Tim for introducing me to the world of beer. I am happy to call Tim, Brian and Becky friends, and I look forward to what they can do with this show. Cheers! - Aaron.
