For nearly a decade, the LA Chef Conference has been the gathering of Los Angeles chefs and industry professionals. After a one-year hiatus, the conference returns this October 6 in its new home at Redbird and Vibiana in Downtown LA. Chef Neal Fraser, owner of multiple restaurant concepts in Los Angeles, started his career in the kitchen at age 20. Fraser touts an impressive resume that includes a degree from the Culinary Institute of America and an honor roll of kitchen credits such as Wolfgang Puck's Eureka and Spago, Checkers Hotel under Thomas Keller, Joachim Splichal's Pinot Bistro, Hans Rockenwagner's Rox, and the highly revered Boxer. Currently, he and his business partner/wife Amy Knoll Fraser own and operate critically acclaimed Redbird and high-volume special events and performing arts venue Vibiana.

I focused on a bartender, a drinks program, and a restaurant that has made an incredible impression on this city in recent years. Bartender, Tobin Shea, my guest for this week’s episode, has been making an impression on LA pretty much since he landed from rural Pennsylvania 20 years ago now. We talked about his journey from college bartender to the Los Angeles rock, club and cabaret scenes, and into the craft cocktail world he now helps to lead. Tobin now heads one of the most inventive bar programs in Los Angeles. As Bar Director of Redbird restaurant, an architectural gem in downtown LA owned by celebrated chef Neal Fraser and wife, Amy Knoll Fraser, Tobin has helped to create one of the most exciting cocktail menus in the city. A cocktail collection of 31 different drinks, titled The Plain Truth About the Best Seeds is inspired by the first growing season and harvest from their recently opened garden. And is designed to mimic the vintage Burpee Seeds catalog with beautiful illustrations to match the inventive and delicious cocktails. The cocktail recipe this week is Tobin Shea’s lower alcohol cocktail on The Plain Truth About the Best Seeds cocktail menu at Redbird: Chrysanthemum. Chrysanthemum 2 ½ oz. Dolin Dry Vermouth ¼ oz. Bénédictine ¼ oz. Pernod Absinthe 2 dashes orange bitters In a mixing glass add all ingredients and ice. Stir until chilled and strain into a chilled cocktail glass. Garnish with a lemon twist and enjoy. Let's Do Lunch! traveled to the city of brotherly love to the Seventh Annual Great Chefs Event where 50 of the world's greatest chefs gathered under one roof to cook for over 1,000 guests all in the name of charity. Host Robin Milling sampled dishes and spoke with famous chefs from New York such as Drew Nieporent of Tribeca Grill, April Bloomfield of The Breslin Bar and Dining Room, and Chef Bill Telepan of Telepan. She spoke with Los Angeles chefs Neal Fraser of The Strand House and The Hungry Cat's David Lentz. The live auction featured a Vetri Dinner for 6 with Danny Meyer and David Swinghamer that sold for $19,000 to two separate bidders, in a tied bidding war, and a five-day, four- night gastro-tour of Piemonte Italy for six with award winning chefs Jeff Michaud & Marc Vetri that sold for $35,000. One million dollars was raised to benefit Alex's Lemonade Stand Foundation, trying to find a cure for childhood cancers.
