One of Adam Bricker's favorite things about being a cinematographer is the opportunity to collaborate with different filmmakers, try something new and make each project the best it can be. His most recent project is the HBO Max comedy series Hacks, which just earned him an Emmy nomination for best cinematography. Adam was given the scripts for the first two episodes, and loved the pilot script, which opens with a long Steadicam single shot following behind the main character, Deborah Vance, played by Jean Smart, for two minutes, until her character is finally revealed in the dressing room vanity mirror. Adam knew it's a rare thing to find a half-hour comedy with that level of cinema, and he was excited to shoot the show. Hacks takes place in Las Vegas, about a legendary comedian who is losing relevance and fading from the spotlight. Adam and show creator Lucia Aniello used vintage Las Vegas movies and photos as a reference point, as well as films such as Soderberg's Behind The Candelabra and Judy with Renée Zellweger. Adam likes to set the look based on how the viewer is supposed to feel, and he makes notes in his scripts about what emotions should be felt in each scene. Most of Hacks is filmed on tripods and dollies, but for the verbal duels between characters Deborah Vance and Ava, her young comedy writer/protégé, Adam chose to shoot handheld, which gives those scenes more energy and naturalism. Lighting on the show goes from naturalistic, when Deborah is at home or when Ava is in Los Angeles, contrasted with vintage glamorous stage lighting when Deborah performs her comedy act. Adam grew up in Chicago and attended film school there before attending the USC summer cinema program, which inspired him to transfer to USC and continue studying cinematography. After college, Adam began taking as many jobs as he could, and planned to work his way up through the camera department, before a DP mentor suggested he buy a camera and take as many cinematography jobs as possible. He and a group of friends invested in a Red One digital camera, and Adam shot dozens of music videos and low-budget films. The Netflix series Chef's Table has taken Adam all over the world. As one of the primary DPs of Chef's Table, Adam and show creator David Gelb have established the artistic look of the modern cuisine documentary, which has since been imitated by countless other food shows. When the show began, Adam had never shot a documentary before, so he had a more cinematic approach to the show, only using prime lenses and no zoom lenses. For him, it's been a dream job to explore new places, eat amazing food at excellent restaurants and work with good friends on the crew. Ross Girard is Executive Vice President of Production at Campfire, a film and tv production company, where he oversees physical production for a slate of premium scripted and nonfiction projects. A graduate of Emerson College, his background spans music videos, commercials, scripted and nonfiction features and series, with premieres at both the Sundance and Tribeca Film Festivals. Ross recently produced the Emmy-nominated Netflix Original Series, SPECIAL. He is currently producing other Campfire projects for Warner Brothers, Netflix, FX, CNN, and HBOMax. His career began at Partizan Entertainment where he headed production for the digital division. He produced content for clients including Target, Dolby, Wrigley, Absolut Vodka, Nokia, NFL, Pergo, and Fidelity Investments. In music videos, he’s worked with artists including Usher, Daft Punk, Justin Bieber, Macy Gray, The Strokes, Enrique Iglesias, Kanye West, Fun., Band of Horses, Bloc Party, Maren Morris, and Superfruit. At City Room Creative, an entertainment advertising agency founded by the filmmakers of JIRO DREAMS OF SUSHI, Ross served as Executive Producer and built a physical production department from the ground up. Notable projects include the AOL original web series and production of the 2015 Tribeca Film Festival Selection, A FASTER HORSE, a feature documentary about the Ford Mustang directed by David Gelb, for which Ross was the Co-Producer. Ross also served as Head of Production at Joinery, a commercial production company, where he oversaw physical production, including a campaign for Alliance Française De Singapour which won 3 Gold and 2 Silver Lions at the 2017 Cannes Festival. What makes this week’s episode extra special is that I got to work with Ross on HYSTERICAL, the documentary I produced for Campfire last year that focused on female comedians. It’s a rare opportunity to interview someone who was technically my boss and discuss the most successful way to navigate that dynamic from both sides of the aisle. We dig into transitions, particularly the challenges of going from commercials to film, the responsibility of producers to intentionally hire diversely, and what it’s like to be a head of production. In this episode of The Darkroom Podcast we spoke to the creator and director of Chef's Table, David Gelb, at his production studio Supper Club. We jump back into David's early passions for theatre and acting in high school and how his father's life in the classical music world became a steady inspiration for him. Having built a small team of friends to go shoot with in high school and college, David has a knack for finding and building talent, allowing him to work on a multitude of projects including Supper Club's latest non-fiction programming deal with Disney. David stepped into the spotlight in 2011 with his documentary Jiro Dreams of Sushi; highlighting the story of the “world's greatest sushi chef” Jiro Ono at his 10 person restaurant located in a Tokyo subway station. We hear how David took a camera and shot almost the entire movie by himself with a translator at his side and ultimately how his production methodology would set the stage for Chef's Table. We get a unique chance to hear about Anthony Bourdain's impact on David's work and how both Street Food and Chef's Table are a homage to Bourdain's legacy. As Netflix's first documentary series, Chef's Table has been a massive hit for the streaming platform and has now become the longest running original series after its renewal for seasons 7 and 8. The title of this episode is what has sushi and the property industry got in common?. This relates to a documentary that I have watched a couple of times now called 'Jiro dreams of sushi'-you can internet search it and its easy to find. Jiro Dreams of Sushi is a 2011 American documentary film directed by David Gelb.[2] The film follows Jiro Ono (小野 二郎 Ono Jirō), an 85-year-old sushi master and owner of Sukiyabashi Jiro, a Michelin three-star restaurant. Sukiyabashi Jiro is a 10-seat, sushi-only restaurant located in a Tokyo subway station. Jiro Ono serves a tasting menu of roughly 20 courses, for a minimum of 30,000 Japanese yen ($281 USD). So what has this got to do with construction and property ?? Jiro essentially is a small business owner. He is an investor and developer. He has worked hard training as an apprentice becoming highly skilled He has created a plan for himself and his business and created a business plan and saved money, he has probably gone to the bank to get a loan. He has invested by hiring a lease on his shop and fitting it out with furniture and kitchen equipment. He has hired staff and signed contracts for gas and electricity. He has gone to the market and bought all his ingrediants. He has gone to work every day and supervised the production of all his products. He has no doubt endured a couple of lean years as his business has found and retained customers and his reputation has grown. He has faced the choice of should he expand his business and lose quality or just keep the one outlet and retain the quality. He works daily on improving his product and his service. So this is very comparable to the construction industry. You can apply this to anyone in the industry. • home-buyers • serial investors • property developers • building contractors • architects • quantity surveyors • structural engineers • building surveyors My point is that this the way we should all be approaching our business in construction. We should all be taking care to build ourselves and our business in this image. The interesting thing for me is what is after this however. I think a lot of people would be happy to have a successful business. But other people will look at Jiro and ask why he didn’t expand. Even if the quality would decrease it would be still be great sushi. That’s the challenge of every business. And for me personally the guy has spent all his time working. Did he not want to travel or blow off steam or change careers. Did he not personally develop. Because people change over the years. Surely he should have been able to develop systems that could teach people how to be as good as he is. This is what I am interested with this podcast is how can we created businesses that are great and that the best at what they do but also that let us have the freedom to grow and expand as people. Where do you even begin when listing Dan Barber's achievements? You could point out that he's the award-winning chef behind the Blue Hill & Blue Hill At Stone Barns restaurants in New York. Or note that Time included him in their list of the World's 100 Most Influential People (with a write-up by Ferran Adria, no less). Or name-check the fact that he advises President Obama on nutrition. He's also the author of The Third Plate, a fascinating book that any food-curious person should read (it was definitely one of my favourite books of last year, but probably way more importantly, it just won a James Beard Foundation award). He also features in the new show, Chef's Table, by David Gelb who made Jiro Dreams of Sushi. It will probably be the next Netflix show to completely derail any good intentions you have to get anything productive done. (The series also features his “lost brother”, Ben Shewry of Attica.) In this podcast, I talked to Dan Barber about The Third Plate – the fascinating people he features in the book and how he ended up writing an unlikely page-turner about soil, agriculture and other key influences on how we eat, and what should feature on the menu of the future (such as "rotation risotto"). He also talk about how he's a "wheat nerd" (he has created his own signature wheat); whether dealing with the President means encountering a lot of Secret Service agents, and how eating sustainably means we need to rethink our attitudes about abundant yet unpopular ingredients – a belief he's really taken on with his wastED pop-up. Eric Kayser is a fifth-generation baker who has been described as the "the world ambassador of French bread". He has more than 110 stores worldwide, with recent openings in Mexico and Thailand, and his accolades stretch across many borders, too: he's been awarded Best Baguette in New York and Best Croissant in Tokyo. In this interview, I chat to him about his early interest in experimenting with flour; having to abandon romantic dates to fulfil his baking duties; what it was like trying to maintain his culinary skills while on military service and how far he has travelled with starter. Eric Kayser is also the author of a new book called The Larousse Book of Bread, so we chat about his recipes and how he has responded to the backlash against gluten. Steven Hiroyuki Aoki (born November 30, 1977) is an American electro house musician, record producer, DJ, and music executive. In 2012, Pollstar designated Aoki as the highest grossing dance artist in North America from tours. Steven Hiroyuki Aoki was born in Miami, Florida, and grew up in Newport Beach, California. He graduated from Newport Harbor High School in 1995, where he was a player on the varsity badminton team. He is of Japanese descent, the third child of Rocky Aoki and Chizuru Kobayashi. His father was a former wrestler who also founded the restaurant chain Benihana. He has two older siblings, sister Kana (who is sometimes called by her middle name "Grace"), and brother Kevin (owner of Doraku Sushi restaurant). His half-sister is model and actress Devon Aoki. Aoki attended the University of California, Santa Barbara and graduated with two B.A. degrees, one in feminist studies and the other in sociology. In college, he produced do-it-yourself records and ran underground concerts out of his Biko room in the Santa Barbara Student Housing Cooperative, which was located in Isla Vista, a section of residential land adjacent to UCSB. As a concert venue, the apartment became known as The Pickle Patch. Aoki was also involved in student activism at UCSB, being the founder of a Revolutionary Anti-Imperialist League chapter on campus. By his early 20s, Aoki had built his own record label, which he named Dim Mak - a reference to his childhood hero, Bruce Lee. In March 2010 Aoki released "I'm in the House", a collaboration with Zuper Blahq-alter-ego of The Black Eyed Peas singer will.i.am. The song charted at No. 29 in the UK Singles Chart in its first week of release, and later entered the UK Dance Chart and the UK Indie Chart, peaking within the top five in each chart. The song was featured on an Episode of MTV's Jersey Shore, as well as in the feature film Piranha and the trailer for Think Like A Man. Producer-songwriter Lucas Secon confirmed in a May 2010 interview with HitQuarters that he and Rivers Cuomo had recently worked with Aoki on a single. Aoki's first solo album, Wonderland, was released January 2012 and features guest vocalists and musicians Lmfao, Kid Cudi, Kay, Travis Barker, will.i.am aka Zuper Blahq, Wynter Gordon, Rivers Cuomo, Lil Jon, Chiddy Bang, Lovefoxxx of CSS, Big John Duncan (former guitarist of the punk band The Exploited), and others. On October 11, 2013, Aoki collaborated with Linkin Park on the song "A Light That Never Comes" that was included on the remix album, Recharged, 18 days later. Several remixes of the song were added on the January 2014 digital download EP A Light That Never Comes (Remixes). "A Light That Never Comes" was used in films such as Expendables 3. Aoki finished in 6th place in the 2013 America's Best DJ competition-a vote and promotion to find out the country's most popular DJ conducted by DJ Times magazine and Pioneer DJ. In May 2015, it was announced that Relativity Productions had acquired the rights to distribute the documentary I'll Sleep When I'm Dead in the United States. Filmed during the making of his Neon Future double album, the film is focused on Aoki and delves into his family history, lifestyle, music, and his business. It is co-produced by Matthew Weaver and David Gelb, who together had previously worked on the 2011 documentary Jiro Dreams Of Sushi. Among the executive producers are Ryan Kavanaugh and Tucker Tooley. In February 2018, Aoki announced the release of his five-track EP titled 5OKI, the follow up to his 2016 EP 4OKI. The EP would feature him collaborating with other producers to produce a "cross-genre" track collective. "I'm really putting an emphasis on EDM and I'm putting an emphasis on cross-genre collaboration. For EDM itself I'm making a big statement of re-claiming it as something [that's] really important to me - kinda like giving back to my community," stated Aoki prior to the EP's release. The tracks were released at a weekly interval over five weeks from 23 March to 20 April, with "Mayhem" featuring Quintino releasing on 23 March 2018, followed by "Pika Pika" with Loopers, "It's Time" with Laidback Luke, "Anthem" with Hardwell, and concluding with "Moshi Moshi" with Vini Vici. On May 18, 2018, Aoki released new single "Pretender" featuring AJR and rapper Lil Yachty. In June 2018, Aoki remixed Rita Ora's hit single "Girls" featuring Charli XCX, Bebe Rexha and Cardi B. Later that month, alongside Italian DJ Marnik, they released their version of "Bella Ciao", which garnered controversy. The new dance music version of the track was deemed inappropriate and insulting by many. On July 20, 2018, Aoki released new single "Lie To Me" featuring singer-songwriter Ira Wroldsen. Jiro Dreams of Sushi is a documentary film by Mr. David Gelb that follows the daily life of 85 year old Jiro Ono who is widely considered to be the world's greatest sushi chef. The film is an intimate look at Jiro's philosophies on work and life and his insistence on absolute perfection when making sushi. The film also explores the secondary characters that all contribute to the restaurant, from the fish seller at the Tsukiji Market, to the restaurant staff who struggle to meet Jiro's high standards to the relationship between Jiro and his eldest son, who is patiently waiting in the wings to take over the restaurant once his father retires.
This week on A Taste of the Past, Linda invites filmmaker David Gelb and editor Brandon Driscoll-Luttringer to talk about their new film, “Jiro Dreams of Sushi”.
