Linda attended a cooking demonstration that Paul conducted and one of the techniques used was a Reverse Sear for a piece of beef. The result was incredibly tender, cooked mostly in the oven, in a small amount of time on a cooktop. And, cooked just the way you like it. In this episode Linda has made Zucchini Slice following the gift of some home grown zucchini's from a friend. Given that those who love Zucchini Slice will tell you that their recipe is the best, Paul was asked about the technique of drawing moisture out and if it would make a noticeable difference. Paul had some useful tips including adding salt to the grated zucchini and then washing thoroughly before use. This technique is also useful for cooking with egglants (aka aubergine). A listener had written in asking about the bread he'd baked not turning out as he'd hoped. Paul had tips on what happens when your dough is over-proved and how to get it back ready for baking.
