Benedikt Blumhagen erzählt, wie Honig in den Bienenvölkern entsteht, warum gerade Stadtimkerei, wie in Hamburg, oft bessere Bedingungen bietet als auf dem Land, und was echte Handarbeit im Gegensatz zu industrieller Honigproduktion bedeutet. Dabei geht es nicht nur um das Produkt selbst, sondern um die Verantwortung, die mit der Bienenhaltung einhergeht – um Respekt vor dem Tier, um Artenvielfalt, Kreisläufe der Natur und die Bedeutung eines lebendigen Ökosystems. Die Bienenvölker von Herr Biene stehen auf Dächern in Eppendorf oder mitten in Eimsbüttel. Neben klassischem Honig produziert die Manufaktur innovative Produkte wie Pralinen, Bonbons, Senf und Likör – plastikfrei verpackt und mit Respekt für Biene und Natur. Honig überzeugt nicht nur durch Geschmack, sondern auch durch seine inneren Werte: Er enthält über 200 bioaktive Inhaltsstoffe – darunter Enzyme, Aminosäuren, Antioxidantien und Mineralien – und soll antibakteriell, entzündungshemmend und wundheilend wirken. Diese Wirkung ist allerdings nur dann vollständig erhalten, wenn Honig nicht über 40 Grad erhitzt wird. Der klassische „heiße Tee mit Honig“ bei Erkältung sollte also besser lauwarm sein, damit seine heilenden Eigenschaften zur Geltung kommen. In der Küche lässt sich Honig vielfältig einsetzen – etwa in Dressings, beim Backen, zum Verfeinern von Käse, in der Naturkosmetik oder auch in der Fermentation. Benedikt teilt mit uns auch eines seiner Lieblingsrezepte: ein Lachsfilet mit Honig-Senf-Kruste, das Honig kulinarisch von seiner aromatisch-würzigen Seite zeigt. Auch über die Problematik von gefälschtem Honig wird offen gesprochen. Viele vermeintliche Honige sind mit Sirup gestreckt, stark erhitzt oder stammen aus nicht nachvollziehbaren Quellen. Benedikt erklärt, worauf man beim Kauf achten sollte – etwa auf die genaue Herkunftsangabe, den Preis oder die Konsistenz – und warum regionale Produkte direkt vom Imker so wertvoll sind. Denn jeder Löffel echter Honig ist auch ein Beitrag zum Erhalt der Biodiversität. These foods are promoted as healthy, but after watching this, you'll never eat them again! Find out about the 7 foods you should never eat. 1. Granola bars Nature Valley granola bars contain bioengineered food ingredients, which means they're GMO. GMO foods contain glyphosate, an herbicide linked to cancer. Granola bars also contain sugar (probably beet sugar), seed oils, and refined starches. One Nature Valley granola bar serving contains almost 7 teaspoons of sugar! 2. Agave syrup This sweetener is often considered diabetic or keto-friendly because it's low on the glycemic index. Agave is 85% fructose, which the liver must process. The liver treats fructose the same way as alcohol—like a toxin! 3. Flavored yogurt You probably wouldn't consider flavored yogurt as junk food because it's marketed as a healthy, convenient probiotic rich in calcium and protein. At 30 grams of sugar per serving, most flavored yogurts have more sugar than a candy bar! Many probiotics in flavored yogurt won't even survive your stomach acid. Look for whole-fat yogurt, Bulgarian yogurt, or Greek yogurt without the added sugar. Kefir is an even better option and has significantly more friendly bacteria. 4. Non-dairy creamers Non-dairy creamers are often considered a healthy alternative to milk but contain unhealthy ingredients like high fructose corn syrup, glucose syrup, maltodextrin, and trans fats. Check the ingredients to ensure they don't contain soy, corn, canola, or cottonseed oil. It's best to just use regular cream or half-and-half. 5. Soy milk Soy products like soy milk can cause estrogenic effects like the development of breast tissue in men. Soy milk is not really milk at all! 6. Fast-food lettuce Dressings on fast-food salads contain seed oils, trans fats, hidden starches, and high fructose corn syrup. Fast-food lettuce is coated in a preservative called sodium bisulfite and rinsed in a chlorine wash. 7. Puffed cereals/rice cakes A chemist who worked for Quaker studied rats and noticed they would die after being fed puffed cereal. Today, I want to share six delicious homemade salad dressings that are actually good for you. It's difficult to find healthy salad dressings at the store that don't contain sugar or oils high in omega-6 fatty acids. The salad dressings I'm going to share have unique health benefits. Of course, salad has a lot of important benefits, but choosing the right salad dressing can take it to the next level. Here's how to make salad dressing at home. You will use a simple base of extra virgin olive oil, lemon juice, and apple cider vinegar for each of these salad dressings. Add this base to a 16-ounce jar and keep it in your refrigerator. Each time you have a salad, add a quarter cup to half a cup of this base to a bowl, add your spices, mix it up, and pour it on your salad. Ingredients for the salad dressing base: 1/3 cup (2.5 ounces) extra virgin olive oil 1/4 cup (2 ounces) apple cider vinegar 2 tablespoons (1 ounce) lemon juice Apple cider vinaigrette dressing: 1 tablespoon mustard 1 clove garlic (minced) 1 pinch sea salt 1 dash pepper French-style dressing: 1 teaspoon dried tarragon 1/2 teaspoon dried thyme 1/4 teaspoon dried lavender 1 pinch ground pepper Italian-style dressing: 1 teaspoon dried oregano 1/2 teaspoon dried basil 1/4 teaspoon crushed garlic 1 pinch crushed red pepper Mediterranean-style dressing: 1 teaspoon dried rosemary 1/2 teaspoon dried mint 1/4 teaspoon sumac 1 pinch sea salt Asian-style dressing: 1 teaspoon toasted sesame seeds 1/2 teaspoon dried ginger 1/4 teaspoon crushed peppercorn A splash of tamari Indian-style dressing: 1 teaspoon ground coriander 1/2 teaspoon ground turmeric 1/4 teaspoon ground cinnamon A pinch of dried cardamom

The Salad Recipes of the Podcast- The Simple Oil and Vinegar Dressing Ingredients: 3/4 cup extra virgin olive oil 1/4 cup white wine vinegar 1 teaspoon kosher salt, or more to taste 1/2 teaspoon ground white pepper (or freshly ground black pepper, to taste) Instructions: Place all the ingredients in a container and shake well. Store in a jar with a lid and refrigerate 5-7 days. Shake well before serving. Enjoy! ________________________________________ The Happy Diabetic Classic Balsamic Dressing Ingredients: 2 tablespoons honey 1 tablespoon dijon mustard 1 tablespoon honey (You can also use agave or Splenda) 1/2 teaspoon fine sea salt 1/2 teaspoon freshly crushed black pepper, finely ground 1 large garlic clove, minced or jared garlic OK 1/4 cup balsamic vinegar 3/4 cup extra virgin olive oil Instructions: In a small mixing bowl, whisk together the honey, balsamic, mustard, salt, pepper and garlic. Add the oil and whisk thoroughly to combine. Continue whisking until the dressing is fully emulsified. Store in a jar with a lid and refrigerate 5-7 days. Shake well before serving. Enjoy! ________________________________________________ The California Classic Green Goddess Equipment: Food Processor (I swear by my Cuisinart one for an even consistency) Ingredients: 1 cup whole milk Greek yogurt 1 cup parsley 1 cup mixed soft leafy herbs, dill, mint, tarragon and/or cilantro 2 tablespoon chopped chives 2 tablespoons lemon juice fresh squeezed or concentrate ½ teaspoon lemon zest (optional) 1 tablespoon extra virgin olive oil 2 teaspoons capers or anchovies 1 garlic clove ¼ teaspoon sea salt Freshly ground black pepper Instructions: In a food processor, combine the yogurt, parsley, mixed herbs, chives, lemon juice, zest, olive oil, capers, garlic, salt, and pepper. Pulse until well combined. Season to taste. Serve as a dip or toss with salad greens. Store in an airtight container in the fridge for up to 5-7 days. Yield: Makes just over 1 cup ___________________________________ Healthy and Creamy Blue Cheese Dressing This creamy blue cheese dressing takes just minutes to make and is completely guilt free! It is creamy and a little chunky... Just wonderful served over classic garden salad, an iceberg wedge, or as a snack with carrot and celery sticks. Ingredients: 1/3 cup plain non-fat Greek yogurt 3 tablespoons mayonnaise 3 3 tablespoons non-fat milk or 2% 2 tablespoons white wine vinegar ½ teaspoon salt ¼ teaspoon pepper 1 tablespoon shallot or minced onion ¼ cup crumbled blue cheese Whisk Greek yogurt, mayonnaise, milk, vinegar, salt and pepper in medium bowl until completely smooth. Add in shallot and blue cheese and whisk until desired consistency. For a less chunky dressing, you can mash the blue cheese into the dressing with the whisk or a fork if desired.
