(2:30) They discuss how all kinds of jobs can be fulfilling that don't require a college degree. Mike found his path through being a chef. Many times the best education is travel and exploring cultures. Mike tells Vinnie how he got started in cooking and culinary school. (12:30) Vinnie asks about the story behind the Adventure Chef's kayaking trip up the coast of Greenland. (17:00) Mike describes his trip and the specific goals he had. Gather seal poop samples (to test for microplastics). And to learn about the Inuit ancestral way of eating. They discuss changes in how we treat various foods, especially after the development of things like refrigeration. Foods used to be preserved by fermentation, salting, etc. There is a direct link between eating processed foods with metabolic disease. Mike further shares some of the tough challenges he ran into during his adventure and experiments. (25:00) Vinnie asks a couple of questions regarding seal poop, plastics, and other environmental concerns. (28:30) They discuss more about nutrient-dense foods like meat and organ meats. (49:00) THE RESULTS Mike shares some of his results regarding health tests he took pre- and post-kayak trip. (55:00) Mike also had a wonderful experience with the Inuit people he met--they were very welcoming and very proud of their culture. He was really intrigued by the differences in the test results; they discuss the variations in cholesterol, body fat, etc. Vinnie and Mike chat about Mike's kayak and some of the other equipment he used during his trip. (1:01:00) They discuss a bit more on Mike's solutions for eating the Inuit diet; but he learned quickly it wasn't about fancy, it was about functional. (1:08:00) He also had fantastic energy, even after kayaking for 10 hours a day. Vinnie talks about his own high-fat content of his eating. (1:14:00) He also talks about changes he made in his day to get more movement in. Mike isn't sure how he's going to keep the physique and health gains he made now that he's not kayaking for several hours or eating the same way.
