Today we will be hearing from a trio of fermentation rockstars, Lauren Price, Charlotte Crott and Lauren Houston, the women behind the Sacramento, CA Mindscape Fermentations. When this talk took place back in Spring of 2022 their brewery was still about a month away from opening and their goal with this talk was to provide a comprehensive resource and roadmap for future folks who would be looking to start their own brewery, something they themselves wish they had had. They start with concept, future growth model planning & of course the inevitable financing discussion! Their openness and honesty here is something you just don't hear many folks being willing to share. They then walk us through each step they took from asking friends for money, figuring out how to deal in commercial real estate, hiring an architect and engineers. equipment buying, brewery layout, permitting and licensing, contractor bidding and so much more! And as a former small business owner myself the advice they give for what you can considering DIYing and what you should pay a professional to take care of resonated quite a bit. Today we will be hearing from Jesse Bousard, who at the time was the Executive Director of the Craft Maltster's Guild & Hannah Turner , director of barley, malt and brewing quality lab at Montana State University. Jesse introduces us to the craft malt guild, shares craft malts origin stories and then emphasizes why craft malt is so important and impactful. Hannah then gives us a lesson on how to read and understand the info given on a COA, certificate of analysis. Many of our attendees received a couple malt samples from Mainstem Malt in WA state and Admiral Malting in California and you will hear them do some sensory analysis on those. As you will hear a bit at the beginning there were some fairly extreme technical issues with getting this session up and going. Jesse ended up being fairly rushed in her presentation and then you will hear a few audio drops when Hannah is giving her presentation but regardless of tech issues Jesse and Hannah both give us some really great education here on THE foundational ingredient in beer…..malt! Today we share this super popular WIBS 21 session titled How to Build A Recipe. Featuring Cat Wiest and moderated by Tyler & Laurie of the Brewd ‘up podcast. We unfortunately had some technical difficulties with our moderators intro so it may sound a bit harsh as we jump right in here with Cat but we do get to hear from Tyler and Laurie towards the end of the talk so all is not lost. Cat tells us a bit about herself and how she came to brewing and then dives right in to dropping the knowledge. First thing in designing your recipe is to ask yourself what your goal is. Do you have a flavor profile in mind? Are you trying out a new technique? Refining a known recipe? What inspires you? Cat then walks us through her recipe for her aspirational red ale. Things get a bit technical as she gives us equations to figure yield and grist percentages, IBUs and isomerization, mash profile and temp considerations and she answers lots of questions along the way. She opens this talk with the Obama beer summit and quickly get to know this talented and impassioned film maker. As she reveals her journey to beer and the genesis of her documentary project, This Belongs To Us, we hear how important it was for her to find black beer culture and what a revelation that was for her.She shares her belief that beer needs new stories, fuller, truer and more nuanced and expansive and in the end who is telling the story matters most of all. She closes with a plea for craft brewers the world over to step back for just a second from the hectic day to day operation of your small business and self reflect and think about what your beer's story is. We are very excited to share with you the first in a series we are calling WIBS On the Run. My wife and I were lucky enough to get to travel to Ireland this past September and thru our friends at The Beer Ladies podcast we were able to meet up with Claire Dalton of Dungarveen Brewing Co in County Waterford. She gave us a tour of the facilities along with a taste right out of the barrel of a special collab they are doing with Blackwater Distilling who are local to that area as well. We are so happy to share this WIBS 2022 session from BJCP National Beer Judge and Master Cicerone Nicole Erny. She is a beer professional from Northern California with a focus on sensory and education. For the past 13 years, she's built her career from beertending at a specialty beer bar to consumer-facing beer events to education and exam development with the Cicerone Program to sensory education, quality program development, staff training and consulting for breweries. In 2011, she became the fourth person and first woman to earn the title of Master Cicerone®. She currently works in the quality team at Faction Brewing Co and has fun as beer buyer for a small restaurant group. In this talk she shares with us some of the science of aroma, taste and flavor. She also walks us through the physical process of beer assessment and then hones in on the mental aspects as well. Our brains love to trick us into making snap judgements and confirmation bias can very much affect what we perceive. And she also touches a bit on how the challenges women naturally face in the industry can knock down our confidence and willingness to trust our own perceptual instincts. When you hear a master cicerone and overall beer badass like Nicole Erny admit she faces imposter syndrome on the regular you know that all us women are not alone in those feelings. This episode features a very special WIBS 2022 roundtable discussion with three women who are creating real action for real problems, especially as it pertains to authentic representation of BIWOC folks in the beer and greater craft fermentation industry. With their critical eyes trained on not just inquiring about what the local brewery is doing to increase access but zooming out to see the overall socio economic structures that remove access for so many. With the help of Angi Thomas moderating together they ask the question what is authenticity? What does access mean and how can we explore the many different ways access is denied and can be created? These are some very impressive women ya'll and we were beyond thrilled to not only have them participate in the 2022 Women's International Beer Summit but to also be one of the organizations that received 5% of all ticket sales from WIBS 2022. LIsten in to this fascinating and very insightful talk by the curator of the Smithsonian's American Brewing History Initiative, Theresa McCulla. In this talk she discusses the integral role women have held in brewing beer from the very beginnings right through to the birth of the craft beer movement. Theresa McCulla, Ph.D., is Curator of the American Brewing History Initiative at the Smithsonian Institution's National Museum of American History, where is she building an archive of the history of homebrewing and craft beer in the United States. Previously, she worked for Harvard University Library, Harvard University Dining Services, and the Central Intelligence Agency. McCulla earned a PhD in American Studies and an MA in History from Harvard University, a Culinary Arts Diploma from the Cambridge School of Culinary Arts, and a BA in Romance Languages from Harvard College. Join us for our very first podcast episode! This talk was given at the 2022 Women's International Beer Summit where Linda joined us live via the magic of the internet from Oslo, Norway where she is a brewer at Eik & Tid, a commercial raw ale brewery. Linda van Loon was born and raised in the Netherlands where she fell in love with the world of yeast, bacteria and fermentation. After obtaining a degree in Life Sciences she started a career in brewing, with a focus on mixed fermentation. It was at Nevel Wild Ales where she learned about making beer in a more sustainable and local context.This interest in a more authentic way of brewing led her to Norway: to the land of kveik and raw beer. Since 2020, Linda has been working for one of the few commercial raw beer breweries in the world, Eik & Tid, where she works with raw beer and the re-use of spent grains. She is also a beer judge at the festival for traditional Norwegian brewing: Kornølfestival. And chapter leader (and co-founder) of Pink Boots Benelux and Norway (soon!).
