In my time in and around the beer industry, I've heard too many people underestimate the Cicerone Certification Program, a worldwide standard for recognizing people who are experts in  beer sales and service. While I haven't taken it myself, I understand the rigorous studying that's required to pass the written and tasting exam to become a Certified Cicerone, just the second level of a four-part process to become a Master Cicerone. And even those who take the test seriously aren't guaranteed to pass it the first time. But don't take my word for it, let's hear from an expert. In this episode, Jen Blair, who recently became a Master Cicerone—the highest level of certification and a title just 28 people in the world hold today—shares details from her almost decade-long journey to reach this pinnacle. If you're interested in becoming a Cicerone, this episode is for you. But even if you're not planning to take these tests, you'll learn so much about what it means to explore beer, its history, and all the sensory experiences it can provide. There's a personal side to it all, too, and you'll hear from Jen about the importance of learning from your mistakes, honoring deadlines, and creating realistic schedules.  As a straight-A student, Jen thought she knew how to study for the Cicerone tests, but realized that to pass even the first level exam she had to go beyond memorization and fully master the material. Throughout the episode, Jen shares some of the shifts in mindset she had to make to cross the Master Cicerone finish line, including relearning how to learn and strengthening her weak areas instead of ignoring them, like memorizing commercial styles despite disagreeing with the requirement. Education has always been in short supply in the brewing industry, and as beer styles have changed and evolved dramatically over the course of the last two decades, making beer service and consumer advice relevant to the highly diverse market has never been harder. In this conversation, I discuss with Jen and Chris how to make beer relevant to the market, improve service and ask what breweries and venues need to do to be better. This week on the show: we're going to talk about beer and food pairing.  Our guest is the legendary Garrett Oliver who is the Brewmaster of the Brooklyn Brewery, but more importantly wrote probably the most popular book about beer and food pairing, the Brewmaster's Table.About Garrett OliverGarrett Oliver is the brewmaster of The Brooklyn Brewery, the author of The Brewmaster's Table, and the Editor-in-Chief of The Oxford Companion to Beer. He has been brewing craft beer since 1989 and is a veteran of over 1000 beer dinners and tastings in 16 countries. An original board member of Slow Food USA, he later went on to become a Councilor of Slow Food International. In 2014 Garrett was the recipient of the James Beard Award as the country's top drinks professional.  In 2020 he founded the Michael James Jackson Foundation for Brewing and Distilling (MJF), a 501(c)(3) grant-making non-profit organization that funds scholarships for technical education in the brewing and distilling fields for people of color. Launched in 2008 by American brewer, author, and beer educator Ray Daniels, the Cicerone® Certification Program is like beer's equivalent of the Court of Master Sommeliers for wine.In early 2022, Shane McNamara became the first Australian to reach the pinnacle of the program, Master Cicerone, joining a group of only 19 other individuals worldwide who have this title.The Master Cicerone exam challenges individuals to master every technical and aesthetic aspect of beer. It requires an exceptional understanding of brewing, beer, and food pairing — combining outstanding tasting abilities with an encyclopaedic knowledge of commercial beers.If Shane's name is new to you, it was to me too. He's based over in London where he currently works for the world's biggest brewer, AB InBev, in a global role overseeing the innovation, development and quality of some beer brands you might have heard of like Stella Artois, Budweiser and Corona.When I spoke to Shane he'd just gotten back from the Czech Republic, which you'd know is the home of pilsner beer, as explored with writer Tom Acitelli back in Season 8 of the podcast.So I took the opportunity to ask Shane about the Czech beer scene today.And, later on, whether he plans on returning to Australia with his new qualifications, which he says are the payoff for thousands of hours spent studying and tasting beer.

It's been too long since we've offended the public at large. In an effort to remind you all of the profundity and brilliance of our beer knowledge we have decided to discuss one hop across three styles. Make sure to take detailed notes as this episode will surely help you pass your Cicerone Certification Program.The offerings in this episode all contain mosaic hops. We start with Small and Soft from Bare Hands Brewery. This New England Style Pale Ale offers great utility and artwork that left Adam nearly speechless. Next up was was an American IPA; Pompeii from Toppling Goliath Brewing Company. Clocking in at 6.3% ABV it's not even close to one of their strongest offerings, but this one stood out with strong pineapple flavors. To finish out the episode we sampled one of Destihl Brewery's Deadhead IPA Series, Touch of Haze. Pat Fahey is the Content Director for the Cicerone® Certification Program - a globally recognized certification and education program for beer professionals. In May 2013, Pat was the youngest person to pass the Master Cicerone® exam, and has dedicated his professional career to sensory, education and development of the beer category.  We discuss his first book Building A Sensory Program: A Brewer’s Guide to Beer Evaluation which was released earlier this year via Brewers Publications. Breweries of all sizes - and homebrewers alike - benefit from having organized and regular sensory panels. Pat argues that sensory panels can be internally inclusive and that consumers perspectives can be valuable in informing decisions made at any brewery. Our conversation also touches the evolving nature of beer styles, the role they play in informing consumers expectations and the risks of overly relying on ratings websites to make decisions. Neil Witte from Cicerone Certification Program joins Steve Jaxon and Herlinda Heras today on the Brew Ha Ha podcast. He trains people to become what is commonly called a Beer Sommelier. Herlinda holds the first degree certificate. Neil Witte started as a home brewer and got his first brewery job in 1997 in Kansas City, then for another larger brewer in the same city. He worked for three years as a brewer then as a quality control manager visiting bars and restaurants making sure the beer was top quality. He took beer certification programs and did a lot of private study. Now he works for the Cicerone Certification Program as the chief trainer. Etymology, Definitions and Pronunciation of Cicerone Cicerone means "guide" in Italian. (1) It commonly refers to an Italian tour guide. "Cicerone" is Italian for the Latin name Cicero. Marcus Tullius Cicero was a great scholar, lawyer and writer of the first century BCE. His surname is still synonymous with eloquence in the Italian language. In Italian, the term Cicerone is first noted in the mid-1500s to mean a local guide capable of narrating a tour, for a fee, through the numerous monuments, museums and historic scenery of Italy. The word "cicerone" has been well established in the English language since the early 1700s, with the same meaning it has in Italian. In both languages, ever since it first appeared, it is just as easily invoked ironically or derisively, in reference to the overly florid or affected language of the worst of them. By extension, in Italian and also in English, cicerone is a common word for an expert guide to anything. As for its pronunciation, it depends on the language. In Italian it is "chee-chair-ÓH-neh" (using English phonetic lettering to render Italian sounds) with the accent on the third of four syllables. English has adopted the word with its own sound, so in British or American pronunciation, people say "SIS-er-own" in three syllables. In any flavor of English either one is correct. Online Offerings Herlinda describes how they are doing classes online in order to keep busy during confinement. They have several free introductory classes and tastings. This is a great way for people who like beer or work with beer to add to their knowledge. Their highest degree, the Master cicerone, is a two-day exam, with written and oral questions as well as tastings. He majored in Philosophy and found that the Master exam was the hardest he ever had. SESSION SUMMARY: If you've been a loyal listener of the first 29 sessions of the Breaking Brews Podcast, you've stumbled upon rants and discussions about the importance of clean glassware and the utter grossness of dirty beer glassware on more than one occasion. This epidemic rears its ugly head at pubs, taverns, and tasting rooms far too often - with servers and bartenders presenting beer to customers in glasses with bubbles all over the glass (known as nucleation points), lipstick on the rim, greasiness, even old food particles. Furthermore, some brands have posted photos featuring dirty glassware when showcasing beers in their portfolio. This is no good. No good at all. It's gotten to the point that a hashtag category has been created for the purpose of sharing snaps of dirty glasses: #dgm (or Dirty Glass Mafia if you're not into the whole brevity thing). In the season finale of the Breaking Brews Podcast (Session 30), Jason Cercone is joined by Advanced Cicerone Dev Adams to discuss the dirty glassware epidemic and how all of us, as craft beer professionals and enthusiasts, can do our part to put said epidemic to rest. The conversation starts with Dev's journey through the first three levels of the Cicerone Certification Program ©. She shares the different components of the testing, why each level is important, and various aspects you should be cognizant of if you're preparing to take any level of the certification.Dev and Jason also discuss low service standards plaguing the beer industry today. From servers rolling their eyes at customers to a complete disregard for beer knowledge, many people do not realize how poorly this reflects on a brand's reputation and, subsequently, how much less money they're making because they're not engaging their customers and providing baseline information that will enhance a consumer's experience. Dev drops some tips to help servers and bartenders improve in this area as well.From there, it's all about dirty glassware. Why is it important to utilize beer clean glassware? How does dirty glassware impact the overall beer experience? Why is this epidemic so overlooked? Why are some brands going the extra mile in regards to distribution to ensure their beer will be enjoyed the same way at a bar that it is in their taproom? Why do so many people feel it's "no big deal" to drink from a dirty glass? You wouldn't want to eat your dinner off of an unwashed plate, so why would you want to consume your beer that isn't cleaned properly, right?Dev produced a great video that walks you through the proper steps of cleaning glassware from A to Z. Her method ensures the glassware will be as clean as possible, producing proper head retention, appealing lacing on the side of the glass as the beer is consumed, and a complete lack of nucleation points throughout the body of the glass. This creates a photogenic beer and, most importantly, a beer you can thoroughly enjoy from first sip to last.As brands, your mindset has to be that every beer you pass across your bar is going to end up photographed and on the Internet.
