While hop-forward lager may be a relatively new phenomenon in the States, New Zealand brewers have been brewing their own version of pilsner for decades using homegrown hops. Yet threading the needle in a precise style with hops that can have strong notes, such as mineral and diesel, is no small feat. This was an enlightening and encouraging conversation about how far we have come in understanding pregnancy in IBD and the advancements in IBD over the years. Dr. Glassner is a gastroenterologist with a focus in inflammatory bowel disease. Dr. Glassner currently practices at Kaiser Permanente in Colorado. She completed her residency and gastroenterology fellowship at Houston Methodist Hospital. She was also selected by the Crohn's and Colitis Foundation for a visiting IBD fellowship at Mayo Clinic in 2019. Dr. Glassner is certified in the use of intestinal ultrasound through IBUS. She is passionate about women's health in IBD and is a co-editor of the book Women's health in IBD: The spectrum of care from birth to adulthood. Beers such as Oerbier, Arabier, and Stille Nacht may not be as familiar to today's avid beer consumer, but for decades these unusual strong ales have been staples on the menus and cellars of more adventurous beer bars around the world. De Dolle Brouwers (https://www.oerbier.be) got its start in 1980, among the vanguard in a new wave of Belgian brewers who rejected the consolidation and cynical corner-cutting that had come to define the industry there. Cofounder Kris Herteleer was committed to a more natural approach to brewing, using real malt, whole hops, healthy yeast, spring water, and the highly manual mechanical tools of the decades-old brewhouse they purchased in the village of Esen, just outside of Diksmuide, in West Flanders. Oerbier was, and still is, hard to classify. It limns the space between an overtly acid-forward oud bruin and a strong Belgian dark ale, borrowing from both where and when it needs to. Yet this ambiguity fits Herteleer's approach; De Dolle isn't concerned at all about adherence to styles. Herteleer would much rather get you asking questions than provide you with easy answers. In this episode, recorded at the brewery as we sipped beers from their cellar more than 20 years old, Herteleer discusses: switching from Rodenbach yeast in 2000, and the five-year process of getting Oerbier back to its intended expression the prevalence of coloring and backsweeting in 1970s and '80s Belgian ale balancing acidity and sweetness in higher-gravity beer using a coolship, Baudelot cooler, open fermentors, a Lactobacillus reactor, and French wine barrels to produce complex, flavorful beer that's more than just “sour” using relatively high IBUs to limit Lactobacillus and Pediococcus activity in mixed-culture fermentation avoiding the crutch of spices in Belgian ale barrel-aging in wine barrels rather than spirits barrels, to avoid “dead” barrels And more. S4-E35, Ever thought about how mice seem to be hypnotized when stared at? Well, they're not, and we're here to set the record straight in the most delightful way. This was a week of sweltering heat, so naturally, we decided to crack open a few cold ones - beers that is! We clinked our glasses together in honor of some exquisite German beverages, beginning with a September Fest Golden  with 22 IBUs, and then moving on to a delectable Slice pumpkin beer.Did you know that October Fest actually happens in September? Talk about a head-scratcher! Our refrigerator is starting to look like a homage to the orange gourd with all the pumpkin beers we've gathered. In this episode Bob and I take on an interesting category. We discsuss the American Brown Ale, which in theory looks like a version of the English brown, but jacked up on hops (allegedly). American brown ale with roasted malt, caramel-like and chocolate-like characters should be of medium intensity in both flavor and aroma for the American brown ale. American-style brown ales have evident low to medium hop flavor and aroma and medium to high hop bitterness. The history of this style dates back to U.S. homebrewers who were inspired by English-style brown ales and porters. In this episode Bob and I continue our trek down the IPA road and we explore the Double IPA. American craft beer lovers are huge fans of the IPA. The quest for more of the India pale ale flavor has led them to the imperial India pale ale, a stronger version of the American IPA, which boasts even more hoppy flavor, aroma and bitterness. Imperial India pale ale is darker in color than the American IPA, substantially more bitter, and high in alcohol by volume. In this episode Bob and I switch to one of the most delicious beer styles in all the world, Kolsch. Kölsch is one of the most strictly defined beer styles in Germany: according to the Konvention, it is a pale, highly attenuated, hoppy, bright (i.e. filtered and not cloudy) top-fermenting beer, and must be brewed according to the Reinheitsgebot.   Style examples: 1.     JAFB – Kemp's Kolsch 2.     Saint Arnold Brewing Company – Fancy Lawn Mower Beer 3.     Colner Hofbrau Fruh – Fruh Kolsch   ABV: 4.4 – 5.2% IBUs: 18-30 Color: 3.5 - 5 Serving Temp: 40-45F Serving Pressure: 10-12 PSI   Beer Representation: The Brewer of Seville Kolsch and the Gang 5.1% ABV 27 IBUs   Beer Description: Fermented low (63F) and under pressure this beer produces a slight breadiness which blends nicely with the floral notes from the Hallertau Mittelfruh hops. In this episode Bob and I keep crushing lagers. This week we travel to Vienna, Austria and look into the Vienna lager. Vienna Lager ranges from copper to reddish brown in color. The beer is characterized by malty aroma and slight malt sweetness. The malt aroma and flavor should have a notable degree of toasted and/or slightly roasted malt character. In this episode Bob and I head back to Germany to drink one of our favorite styles, the Schwarzbier. Sometimes called black lagers (the name literally means black beer), they may remind some of German-style dunkels, but Schwarzbiers are drier, darker and more roast-oriented. These very dark brown to black beers have a surprisingly pale-colored foam head (not excessively brown) with good cling quality. They have a mild roasted malt character without the associated bitterness. Czech Dark Lager or Bohemian Dark Lager is an old-world style of dark lager originating in Bohemia, what is now the Western portion of The Czech Republic. The Czech name for the style is Tmavé Pivo, which translates to Dark Beer. In this episode Bob and I stick with lagers, but instead of Germany or the U.S. this time we head to the Czech Republic, and tackle the Czech Pale Lager.  The Czech Pale Lager is a hoppy, session-strength pale lager that is among the most popular styles of beer among drinkers in the Czech Republic. The guidelines give us something of a mish-mash of guidance, though. This week Bob and I wrap up our lager kick for now as we discuss the German Pilsner. Quite possibly the most iconic beer style in modern history, the pilsner captured the attention of beer drinkers across the world and inspired a myriad of regional imitations. This lightly colored, exquisitely balanced lager remains one of the most loved beers to enjoy, and one of the most challenging for the brewer to create. Pilsner is characteristically light in color and have a very short finish. The world over, pilsner -style lagers have become the standard beer for many reasons, and American craft brewers have worked hard to put their own unique spin on this classic German beer. A classic German-style pilsner is straw to pale in color with a malty sweetness that can be perceived in aroma and flavor. Perception of hop bitterness is medium to high. Noble-type hop aroma and flavor are moderate and quite obvious. Distinctly different from the Bohemian-style pilsner, this style is lighter in color and body and has a lower perceived hop bitterness. ABV: 4.4 – 5.2% IBUs: 22-40 Color: 2-4 Serving Temp: For most lagers and pilsners, 38 degrees is ideally your low point. Anywhere up to the low-to-mid 40s is fair game. “[Pilsners] are more traditionally [served at] 38 degrees, and are probably best suited there. Serving Pressure: 11-16PSI Examples of this style:  1.      Pauliner – Pils 2.     Wooly Pig– Keller Pils 3.     Lager Heads – Tacklebox Pilsner Drink representative selection of the week: Maize Valley German Style Pilsner 5.2% ABV and 30 IBU  Beer as described by brewer: Brewed with pilsner malts from Dusseldorf Germany accompanied by a touch of carafoam and wheat malts for head retention and foam stability.  The malt profile is light, clean and crisp with hints of breadiness while teetnang and perle hops lend a floral and citrusy hop character. In this episode Bob and I talk about yet another great lager style beer. This week it is the American/International Amber lager. A widely available, sessionable craft beer style that showcases both malt and hops. Amber lagers are a medium-bodied lager with a toasty or caramel-like malt character. Hop bitterness can range from very low to medium-high. Brewers may use decoction mash and dry-hopping to achieve advanced flavors. Style examples: Examples of this style: 1.     Rhinegeist Brewery – Antelope 2.     Dos Equis – Amber 3.     Terrestrial Brewing -  Erie Dusk ABV: 4.5-6.0% IBUs: 8-25 Color: 6-14 Serving Temp: For darker lagers, like Vienna-style, Oktoberfest or Marzen-style lagers, and amber lagers, you'll want to go slightly warmer, in the 45 to 50 range. Stronger lagers, like a dunkel or doppelbock, would do well at 50. Serving Pressure: 10-14 PSI Drink representative selection of the week: GLBC Eliot Ness Amber Lager 6.1% and 27 IBU.  Beer as described by brewer: Admittedly, it's a bit of a paradox to name our Amber Lager for history's most famous agent of prohibition. In April Bob and I start dissecting some of our favorite styles, lagers. In this episode we dive into the American Light Lager. A beer style that is perfect for cutting the grass, deck sitting, or watching any sporting event, the American light lager is pale, bright, effervescent, and just down right tasty. Sit back, crack a cold one, and listen as we pontificate on perhaps the most popular style of beer in all American folklore. In this episode Bob and I continue with our month of English beers. This week we decide to take on the ESB. ESB (Extra Special Bitter) ESB stands for “extra special bitter.” This style is known for its balance and the interplay between malt and hop bitterness. English pale ales display earthy, herbal English-variety hop character. Medium to high hop bitterness, flavor and aroma should be evident. The yeast strains used in these beers lend a fruitiness to their aromatics and flavor, referred to as esters. The residual malt and defining sweetness of this richly flavored and medium bodied.
