The First Craft Distillery St. George Spirits launched the craft distilling movement in the US. No, that's not an overstatement. Starting with brandies and eau-de-vies, adding whiskey in 1997 and various liqueurs, gins, and other spirits along the way, St. George has steadfastly led the way while remaining true to its roots and creating ever-more-interesting things to drink. I'm joined by Master Distiller Lance Winters and Head Distiller Dave Smith, both long-haulers at St. George (Lance from 1997 and Dave from 2005) who have introduced the world to St. George Spirits' Baller American Single Malt, NOLA Coffee Liqueur, and Bruto Americano, among many many others. The Bruto, by the way, has become my go-to aperitif, replacing Campari and Aperol with a more intense flavor and body. More than anything, this interview delves into the ethos and process of St. George, how this continuously innovative distillery both keeps up with the times and leads by example. They may not be the biggest, but there's no doubt they are one of the most important. This week we welcome Lance Winters to the show! The Master Distiller at St. George Spirits, Lance is a recent inductee into the Whiskey Hall of Fame and one hell of a whiskey maker. He and Jesse sit down and go through how he went from being a nuclear engineer to spirits maker and the struggles he faced early in his career when introducing his vision for American Single Malt to an industry that hasn't always been so accepting of spiritual change. They also talk art, books and the philosophy of being true to your craft. The US craft distillation movement has come a long way in recent years, especially for gin. No longer seen as the lesser of the white spirits, US gin is contributing not only to the conversation but also to the glass. Unlike many other spirits... I'll start that again. Unlike many other spirits, gin is in the unique position to be able to capture the true sense of place through the use of local botanicals. It is a liquid that can express the essential character and spirit of a particular locale.One such gin that is embracing the flavours that be found on its doorstep is St. George distilleries Terroir Gin expression. Lance Winters is the master distiller and president of St. George Spirits in Alameda, California. In this episode of The Craft Spirits Podcast, Winters reflects on 25 years of distilling at St. George. The distillery was founded in 1982 by Jörg Rupf, considered by many to be the godfather of craft distilling in America, and Winters joined the team in 1996. What started as a distillery devoted to eau de vie eventually branched out to make Hangar One Vodka, absinthe, gin, whiskey and more. After the 2010 sale of Hangar One to Proximo Spirits, Rupf retired and Winters assumed majority ownership of St. George. In early February, Winters spoke to editor in chief Jeff Cioletti when he was just shy of hitting his 25-year anniversary.

In the culinary world, many of the people making things, and many of the people consuming things, are chasing memory. It could be granny’s Sunday lunch or a specific time or a specific experience or place, but it’s always a chase, because food and beverage can’t replicate memory, nothing can, it can only be a doorway to an edge of something familiar you can’t name. That’s what amaro is for me, those bottles of bitter Italian liqueurs that once sat dusty at the back of a bar and are now one of the hottest categories in spirits. At its best, amaro is weird in a wonderful way and reminds me of old dusty bookshops and overgrown gardens behind abandoned houses, deep corners and quiet places and faded photographs -- the feeling of things I use to come across when I researched folklore and ghost stories. Somehow this spirit triggers that for me, like an open switch, and Bruto Americano by St. George Spirits is one of my favorites. Lance Winters is the Master Distiller of St. George and the man who created Bruto, and his inspiration was light years away from my experience, but still, like an artist and a patron, we met in the middle and had a great discussion during BevCon. If this is all a little too lofty and esoteric, then take heart: I misuse the Italian plural of the spirit category immediately after Lance compliments me about it, we are chatting in a hotel room while his wife Ellie perches on the bed and listens in, and we share an amaro in a coffee cup. It’s a fancy but no so fancy discussion about inspiration, creation, and appreciation.
The first salon talk took place before The Interval was officially opened, when the back bar and much of our signature decor weren't fully installed. It was an opportunity that couldn't be missed: the launch of the first book by Adam Rogers, articles editor at Wired; Proof: The Science of Booze is the 10,000 year history of alcohol. And so, as William Faulkner says: 'Civilization begins with distillation.' The subject was perfect for our new Long Now bar; but the talk was even more fitting because Adam had been instrumental in helping realized our vision for The Interval. He connected Long Now with both Jennifer Colliau (our Beverage Director and the mastermind of our cocktail menu) and Lance Winters of St George Spirits (whose artful distillations fill the bottles of our "bottlekeep" ceiling). You will hear both of those stories in detail during this talk, as well as the tale of picking wild juniper on Nevada's Mount Washington to use in the gin Lance crafted for The Interval. Adam's presentation also includes his close encounter with the 10,000 year-old “Mother Eve” of booze and a remarkable anecdote about a Japanese chemist who nearly changed history by applying sake techniques to American whiskey in the 19th Century, in the process he filed some of the first biotech patents ever. So the launch of Proof made for the perfect premiere to our “Conversations at The Interval” lecture series. Yet another reason to thank Adam Rogers. If you've been to The Interval (or just watched our other videos), you can see how early it was—not only is the Otto chalkboard nowhere to be seen, the back bar has yet to be built. Jennifer led our very first bartending team that night, though she also stepped on stage to tell the audience a bit about our gin. For an organization that is all about time, this event encapsulated a remarkable moment in our history: as the lively project we call The Interval became manifest. Cheers to you, Adam! A couple of weeks ago, we credited San Francisco's Anchor Distilling with being the birthplace of the American craft distilling movement in 1993. While Anchor was one of the early pioneers, the real birthplace was just across the bay at St. George Spirits, where Jörg Rupf started making eau de vie, whiskey, and other spirits in his Holstein still in 1982. Jörg retired several years ago, and his protégé Lance Winters is now the president and head distiller at St. George. We'll talk craft distilling history with Lance Winters on this week's WhiskyCast In-Depth, and how he aced his job interview with Jörg with a bottle of homemade whiskey.
