This week we welcome Aaron Harris, Head Distiller at Green River to the Bourbon Showdown! We talk about how he got into whiskey, how he became the head distiller at Green River, the history of the brand and how Green River has been has rocking and rolling across the whiskey landscape since its re-introduction in 2022. It's a great conversation about good whiskey with the Whiskey Without Regrets on this week on the Bourbon Showdown Podcast.
Great products start with an idea, and a lot of tinkering. Edison and his lightbulb. Jobs and Wozniak in their garage. The image is familiar—a lone inventor, obsessing over details, experimenting, failing, learning, and eventually discovering something great. South Louisiana has a pretty rich tradition of entrepreneurship and invention. Consider the crawfish boat, for instance. And, when you think about it, Cajun and Creole food in general can be likened to hare-brained contraptions. We’re constantly tinkering with ways to improve recipes to make them more efficient, cheaper or more flavorful — all without losing their essence. Gumbo There’s nothing more essential in Cajun cooking than the trinity — onion, bell pepper and celery, known around here as the Trinity, and depending on your bent toward Catholicism or sacrelige, even "The Holy Trinity." Dreux Barrah is Founder and Chief Chopping Officer at C’est Tout Dried Trinity Mix. Dreux’s path to business began in his home garden with an overabundance of bell peppers. He came up with drying vegetables as a way to preserve his surplus and created a dehydrated holy trinity. Through experimentation, Dreux perfected his process, even crafting custom equipment like his flour-toasting "Rouxster." Now, C’est Tout sells not just dehydrated vegetable mixes but also fully dried dish starters for classics like gumbo, jambalaya, and etouffee. Whiskey One thing Cajuns aren’t famous for is whiskey — apart from drinking it, we don’t really make it. That is, until Philip Mestayer came along. Philip is Co-Owner and Head Distiller at Distillerie Acadian, a small-batch distillery based in New Iberia. Philip started as a weekend hobbyist, distilling whiskey with his dad and brother. Their goal was ambitious—create Louisiana’s first bourbon, a spirit more associated with Kentucky Bluegrass than Cajun prairies. What began as a passion evolved into a business, but not without a whole lot of elbow grease. Philip designed and welded much of their initial distilling equipment himself, navigating complicated federal regulations, supply chain issues, and tricky logistics. Matt brings out their bourbon, crafted from a mash bill of 67% white corn, 21% Abruzzi rye, and 12% malted barley. The flavor? A lush profile of dried and stewed orchard fruits, kissed with honey and a soft floral finish. It's the kind of pour you reach for before a perfectly seared steak—a whiskey that sets the tone. To close the show, they dive into the rye whiskey, a masterpiece made with 70% Abruzzi rye, 15% white corn, and 15% malted barley. Notes of crisp apple open the door, followed by baked cinnamon apple pie and the smooth richness of vanilla ice cream. It finishes with spearmint and spiced tea—a finale worthy of a standing ovation. Each pour, each bottle, each sip—uniquely Atlanta. This isn't just whiskey. It's Georgia's spirit, bottled with pride. This episode isn't just about tasting whiskey. Paul observed the Velvet Mesquite, native to his home in Arizona's Sonoran Desert, leftover from his woodworking and conceived to use this easily sourced, local wood to make a mesquited style of American Single Malt whiskey modeled after Scotch. Tell us a bit about yourself and your role in the industry. I'm the Chancellor of Wizard Academy, a business school for entrepreneurs. In 2015, we founded Whisky Marketing School to train and educate whisky sommeliers. In 2016, I co-founded what became the two largest whisky focused YouTube channels: the Whisky Vault and the Whiskey Tribe. In 2018 I co-founded Crowded Barrel Whiskey Company, the world's first crowd sourced whiskey distillery where I eventually operated as Head Distiller and Head Blender until October 2023. In that capacity, I also helped start the Texas Whiskey Association and served as its third President. In 2022, I reached out to both Stave and Thief and Edinburgh Whisky Academy to partner with them in offering their courses at Wizard Academy. How did you get into spirit education? I began studying wine and sprits when living in California in the early 2000's. It eventually led me to the whisky industry where I found a spirit I truly loved. I studied under various programs like WSET and smaller localized certifications before I ended up at Wizard Academy in 2013. I tend to study and analyze anything I find interesting, and Whisky was a rabbit hole that just never ended. And because teaching is one of my core drivers, I started finding small ways to share the knowledge and information I was learning. After two years at Wizard Academy, I realized that the whisky industry could benefit from a whisky education program with our focus on communications, marketing, and public speaking. And that's what led me down this current path. What do you love about teaching? Teaching is a gift. First, I love having the honor and privilege of opening doors and shining the light on new and interesting things for students. I love watching their love and passion grow with knowledge and support. I love seeing what students go out into the world and do with what they learn. But I've also found that you don't truly understand something until you try to teach it. I've learned more about whisky in the last 8 years by teaching it than I ever did by simply studying it on my own. It took head knowledge and transformed it to a deeper level of understanding. What excites you most about EWA? Edinburgh Whisky Academy has done a truly wonderful job of making courses on whisky that are both challenging, highly in depth, and at the same time accessible and practical. They are one of the best in the world at understanding how to make information meaningful beyond facts and data and taking it into the realm of practical knowledge and true understanding. And they have some of the best and most knowledgeable instructors in the world.

About Caitlin Bartlemay: Bartlemay joined Clear Creek Distillery in 2010 as a logistics coordinator and worked her way through the ranks to distiller. Thistle Finch Distillery Season 3 Episode 12 The CPP Crew (Bret, Dave & Kevin) had Arvin Alston, Head Distiller, from Thistle Finch Distillery in Lancaster, PA in studio. We find out Arvin's history and how he became a distiller and what actually is a Thistle Finch. If you're from Lancaster, PA you've seen the Distlefink, or Thistle Finch, bird on the hex signs surrounding the Amish Country. They used the English translation to keep with the heritage in the area. We learned a lot about them and totally enjoyed our conversation. If you lived in New Orleans between 1953 and 2021, you might remember Baker Maid Fruitcake. It was made here, and in its earlier years was hugely popular. But tastes change. Somewhere along the line fruitcake became relegated mostly to the holidays. In 2009, when Greg Sorensen took over his family business as its 4th generation co-owner, he reasoned if they're going to make cakes for special occasions, why make a cake people eat once a year? Every day is someone's birthday. Why not make birthday cake? That simple decision – along with a few others that pivoted the bakery toward other everyday items – has transformed Baker Maid. Today they're a wholesale business that supplies layer cakes, cupcakes, and petit fours to grocery stores across most of the eastern half of the US. The company has a staff of 70 here in New Orleans churning out cakes. On a typical workday, 20-30 of those folks are cake decorators. Here's another great New Orleans story. Luka Cutura grew up on the Northshore. His dad was a Croation immigrant who went into oyster farming, and following in his father's shrimp-boot footsteps Luka got his commercial captain's boat license right out of high school. That meant he was licensed to carry passengers. Luka started doing swamp tours for a company called Cajun Encounters. Now, Cajun Encounters is owned by Jeff Rogers. In 2016 Jeff and his wife Mary Anna decided to open a distillery and call it Seven Three Distilling, after the 73 neighborhoods of New Orleans. One of Jeff's boat captains, Luka, had spent his childhood summers in Croatia where he'd learned to brew his Croatian family's traditional Balkans fruit brandy and wine. With a few courses at the American Distilling Institute to get up to professional speed, Luka hung up his boat captain's hat and became the Head Distiller at Seven Three Distilling. Today, under Luka's leadership, Seven Three Distilling makes award-winning gin, vodka, rum, and a bourbon that's so popular they literally can't keep up with demand. When politicians, economists and pundits are fond of telling us, “The key to growing the national economy is manufacturing.” they're typically thinking of things like aircraft, automobiles, steel, electronics, and clothing. But because this is New Orleans, we do things differently. We're manufacturing birthday cakes and bourbon. Baker Maid Products and Seven Three Distilling company names might not make it into national politicians' speeches or onto economists' charts, but their contributions to the local economy are not insignificant. This week on The Whiskey Trip Podcast, Big Chief chats with Phil Brandon, Founder and Head Distiller, of Rock Town Distillery . This craft distillery located in the heart of downtown Little Rock, Arkansas produces some great whiskey that has never been done before. Phil takes the Big Man on a journey through his distilling story while also introducing him to unique mash bills that make this distillery stand out. Brandon's whiskey trip has taken him from the big hardwoods of Arkansas so that he understands where his barrels will come from in the future, to the farms of Arkansas, so he knows the hard work of the farmers who grow his grains. In the first half Big Chief and Brandon start with the Arkansas Bourbon which has a mash bill of 82% corn, 9% wheat, 9% malted barley - right up the big man's palate. The second expression they taste is an Arkansas Rice Bbourbon. Arkansas is the number one state for rice production. The rice gives it an extra sweetness. The last expression of the first half is an Arkansas Single Malt. In the second half Phil introduces Mike to their Rock Town Column Still Collection. This collaboration with Bardstown Bourbon Company will help the company expand their reach across America. They sip on the small batch and then a toasted French Oak expression – a toasted, wheated bourbon to be exact! This week on The Whiskey Trip Podcast, Big Chief traveled West to Houston, Texas to visit Yellow Rose Distilling and their Head Distiller, Michael Langan. Yellow Rose is known for their Outlaw Bourbon that has a 100 % Yellow Dent Corn Mash bill. The whiskey has changed a lot in the past 5 years since the big man first tasted it. It's gained that outlaw spice that he was looking for with its name. In the first half, Big Chief and Michael start with a sample of their Outlaw Bourbon that is still a few years from being released. At two years and barrel strength, it surprised Big Chief. In the second half Michael treats Big Chief to a special pour from a Crowded Barrel blend for The Texas Whiskey Festival that includes their Outlaw Bourbon. This blend was made up of 3.5 yr. Old Bourbon from San Luis spirits, 2 yr. old Bourbon from Shire Distilling and 4 yr. old Bourbon from Yellow Rose Distilling. At 116.1 proof this is a big, bold, beautiful Texas whiskey. This week on The Whiskey Trip Podcast, Big Chief is in the Big Easy - New Orleans, Louisiana - visiting Seven Three Distilling. The Big man chats with Head Distiller, Luka Cutura, about this young distillery named for the 73 neighborhoods of New Orleans. They discuss Luka's Croatian heritage of distilling and the bustling city's rebirth after Katrina. Big Chief can see the future is bright for Luka and is excited to see what's ahead for Seven Three Distilling. In the first half, Big Chief and Luka start out with By-Water Bourbon, a wheated bourbon with a unique mashbill of 64% corn, 26 % wheat and 10% malted wheat. They then move to the Irish Channel whiskey which is a blend of a 10-year Irish whiskey and an American whiskey finished in a cognac barrel. Big Chief gets Belgian waffles and whipped cream. In the second half, they sip on a barrel-aged Gentilly Gin and then finish the show with a By-Water Four Grain Bourbon that will be released next week. This ride on The Whiskey Trip once again features a craft distillery that also happens to be in a city with an amazing whiskey history. If you're in New Orleans you definitely need to take the tour.
