Speyside's Dallas Dhu has been a historic site since it closed in 1983, left intact the way workers left it on the final day of production. Now, there are plans in place to revive the venerable distillery, which is owned by Historic Environments Scotland. HES has signed a deal with Murray McDavid owner Aceo Limited to resume production at Dallas Dhu while maintaining it as a historic site. We'll talk with ACEO managing director Edward Odim on this week's WhiskyCast about the challenges — and the responsibilities — in taking on the revival of Dallas Dhu. In the news, the Black Bourbon Society has launched a boycott of Molson Coors products, while Pernod Ricard is bringing all of its U.S. brands under one umbrella.

Paul Pacult has made a name as one of the OG whiskey/spirits writers in the US. His books, including Kindred Spirits, Buffalo, Barrels, and Bourbon, and American Still Life, have won multiple awards and gone through multiple printings. He is the founder (with his partners) of the Ultimate Spirits Competition, which is sunsetting later this year, and an otherwise esteemed taster with a legendary regimen for evaluating spirits.  Paul is also simply an interesting guy to talk to. The collapse of Washington's Skagit Valley Malting last month left distillers and brewers alike searching for new suppliers of malted barley. The craft maltster had more than 270 customers when it closed unexpectedly, including Seattle's Westland and Copperworks distilleries. Pat Dunlop, Adam Bradshaw, Dan Rampling, and Emily de Korte tasted the Bernheim 7-year-old Straight Wheat Whiskey from Kentucky, Penderyn's Madeira Finish Welsh single malt, the Glenglassaugh Revival single malt from Scotland, and Nikka's Coffey Malt from Japan.

No, we're not tasting Australian Bourbons...we have Australians tasting Bourbons this time around! Lilith Morgan and Chris Tatzenko make the long trip from Australia to the U.S. each year for the Kentucky Bourbon Festival, and stopped by the WhiskyCast studio during a side trip to New York City. Colton Smith joined them to taste four Bourbons: the Four Roses Al Young 50th Anniversary Limited Edition Small Batch, the 2o17 Old Forester Birthday Bourbon, the 2017 Angel's Envy Cask Strength limited edition, and a special bottling of Weller 107 for Julio's Liquors in Massachusetts that blends together two barrels of Bourbon.

We're back with a new name, but with the same goal of opening up whisky conversation as regular whisky lovers taste, rate, and debate whiskies from around the world! This month, we're in Houston, Texas at Reserve 101, one of the city's best whisky bars, to taste the Brenne 10-year-old French single malt, the Glen Grant 18-year-old single malt, and Sonoma County Distilling's Cherrywood Rye from California. We should note that our panel was recorded before Hurricane Harvey devastated many parts of Houston and the Texas Gulf Coast. Fortunately, the bar and our panelists - Reserve 101 owner Mike Raymond, bartender Christa Havican, and Houston whisky writer Nath Pizzolatto - all made it through the flooding safely. However, many of their friends and neighbors were less fortunate, and we'll tell you how you can support the region's recovery efforts, too.

There's an old saying that wisdom comes from the mouth of babes. That was proven true with this month's panel, when 6-year-old Maggie DeYoung  told her father John that talking about whisky to the world "was a great responsibility" and generously offered to help her Dad in any way that she could. John and his wife Jay make up half of our tasting panel this month, along with Jill-Ann and Robert Mark. What's more...they nosed and tasted this month's whiskies blindly, and weren't told until they had finished each whisky what they were evaluating. This month's whiskies are variations on the traditional peated single malt Scotch: Bowmore's Devil's Casks, the lightly peated Cù Bòcan from Tomatin, and Laphroaig's 2013 Cairdeas Port Cask Finish.
