Teasmoked brined chicken 8 boneless chicken thighs 500ml water 1 teaspoon mustard seeds 2 cloves garlic, smashed Few sprigs rosemary or thyme 20g seasalt 50g brown sugar 1 tablespoon cider vinegar Simmer the water with the mustard, garlic, herb, salt, sugar and vinegar until the sugar has dissolved. Cool completely and add the chicken. Refrigerate for a few hours or overnight. Remove from brine and pat dry50g longgrain rice 25g Demerara sugar 1 dessertspoon tealeaves Line a roasting tray with foil and scatter over the rice, sugar and tea. Mix well. Place a rack on top and add the chicken. Cover tightly with foil and cook on a high heat for 5 minutes then turn heat off and allow to rest for a few minutes. Peri Peri sauce Roast garlic 1 bulb garlic broken into cloves Oil to coverPlace in a ramekin, cover with oil, cover with foil and bake in a 180oc oven until soft. Cool and peel the garlic and place back in oil 4 red chillis 50ml extra virgin olive oil 50ml red wine vinegar 4 cloves roast garlic 1 teaspoon smoked paprika ¼ bay leaf, shredded Salt to taste Brush the chilis with oil and place in 180oc oven for 10 minutes. Cool for 5 minutes then peel and remove seeds ( keep them in if you want it hot). Blend with the garlic, oil, vinegar, paprika and bay.1 tablespoon maple syrup Place the chicken, skin side up, on a baking tray. Mix the maple with 2 tablespoons of the peri peri and brush all over the chicken. Cook for about 12 minutes or until cooked through. Remaining peri peri will keep in the fridge for a couple of weeks. Cucumber salad 1 little gem Handful mixed leaves ½ cucumber 25ml balsamic vinegar 75ml oil Salt and pepper Peel and slice the cucumber. Break the gem into leaves. Drizzle the vinegar and oil all around a bowl and season with salt and pepper. Add the leaves and cucumber, toss around and serve.

Toss gently to coat all the ingredients evenly.Return the pan to the oven and roast for another 15-20 minutes, or until the sweet potatoes are fork-tender and the broccoli is crisp-tender.Remove from the oven and drizzle the remaining sauce over the top. Toss one last time to ensure everything is coated in that delicious glaze. Through emulsifiers and polarities we finally decide on our vinaigrette boundaries even as we deny mustard its due. Matthew's Salmon Cucumber dish4 salmon fillets, about 8 ounces each, skin onSalt and pepper to taste4 tablespoons extra virgin olive oil, divided1 English cucumber, halved, seeded and cut on the diagonal into half-moons1 shallot, thinly sliced1/4 cup red-wine vinegar2 teaspoons sugar2 scallions, white parts only, thinly sliced1 teaspoon yellow mustard seeds2 tablespoons balsamic vinegar1. Preheat the oven to 500 degrees. Season the salmon with salt and pepper on both sides. Put 1 tablespoon olive oil into a 12-inch ovenproof skillet and place over high heat until oil is shiny.2. Add the salmon fillets to the pan, skin side up. Sear one minute. Flip the fillets and transfer the pan to the oven. Roast until medium rare, 6 to 8 minutes (you can check for doneness by peeking between the flakes).3. While fish is roasting, place the cucumbers in a bowl and add the shallot, remaining 3 tablespoons olive oil, vinegar, sugar, scallions and mustard seeds. Season with salt and pepper and toss well.4. Divide the cucumbers evenly among four plates. Place a salmon fillet, skin side up, on top of each portion of cucumbers. Recipe Grilled leg of lamb with wild garlic and almond pesto 4 x 175g lamb leg steaks 1teaspoon fennel seeds ¼ teaspoon dried oregano 1 teaspoon castor sugar 1 teaspoon seasalt 1 tablespoon oil Grind the fennel seeds as finely as possible and mix in with the oregano, sugar and oil. Rub all over the lamb and refrigerate for a couple of hours. Remove from fridge half an hour before cooking. Wild garlic and almond pesto 35g wild garlic leaves, washed in cold water, patted dry in kitchen paper and shredded 35g flaked toasted almonds 75ml olive oil Zest 1 lemon ( keep the juice for the skordalia) Salt and pepper to tasteBlend well and check seasoning.Carrot Skordalia 4 medium carrots – preferably local, scrubbed and cut in half lengthwise 1 tablespoon oil ½ teaspoon seasalt Juice 1 lemon 50ml good olive oil Take a sheet of parchment paper and place carrots on top. Drizzle over the tablespoon of oil and scatter over the salt. Gather into a parcel and bake in a 180oc oven until tender – about 40 minutes. Chop the carrots and blend with the lemon juice and oil and any cooking juices. Add a little water to loosen up if required. Check seasoning. To Cook Lamb Heat a large grill pan until smoking hot and add the lamb. Cook for 3 minutes then flip over and cook for a couple of minutes on the other side. Spoon some of the pesto over the top of each steak and allow to rest. Serve with the skordalia.

Add onion + rosemary to tray, place lamb on top, pour in stock + water. Traveling around, I've become aware of how Pacific Northwest rain is different from rain patterns in other regions of the US. Take Texas, for example. Texas rain pours. Houses don't have gutters there, presumably because they can't engineer them large enough to accommodate the deluges reliably. Storm water infrastructure is three times the size of what I see around here. In contrast, Oregon rain is persistent. Drizzle can last for days. It's kind of like the tortoise and the hare, I guess. This soundscape was recorded in Forest Park last year around this time, on a dead-end, unnamed trail that doesn't see a lot of use, but nonetheless features a sturdy old bench. It is a pretty sweet listening spot for this reason, and this particular time slice offers a pretty accurate sound portrait of our soft rain. Our soft power. Did you know that the Pacific Temperate Rainforest—a bioregion extending from the northern California redwoods to the coastal forests along the gulf of Alaska—can pack more carbon per acre than a tropical rainforest like the Amazon? The Pacific Temperate Rainforest is the second-most dense biomass repository and carbon sink in the world (bested only by the Eucalyptus regnant forests of Victoria and Tasmania, Australia) and it's what gives our Pacific Northwest rain its unique character (and sound). The Pacific Temperate Rainforest operates like a giant lung. Just as a lung draws in air, extracts what's vital, and releases what the body needs to stay alive, the Pacific Temperate Rainforest breathes on a continental scale, pulling carbon dioxide out of the atmosphere and locking it away in massive old-growth trunks, roots, and the deep organic soils beneath them, while exhaling oxygen and releasing moisture that cycles inland as rain. The forest doesn't just store carbon passively; it actively pumps water vapor into the atmosphere, seeding clouds and feeding rivers that sustain salmon, which in turn fertilize the forest floor when they die. Salt1 Tbs. Sugar4 1/2 tsp Active Dry Yeast2 cups Luke Warm Water1/2 cup 100% Pure Maple Syrup or honey1/2 cup Virgin Olive Oil1 tsp. Holy Water1 cup Oats – soaked in 1/2 cup hot water for 2 minutes1 cup Pecan or Walnut pieces – broken and skillet toasted 2 min1 cup Dried Cherries or Raisins – soaked 5 min in 1/4 cup hot water Directions: 1. Combine the first three dry ingredients in a large mixing bowl. Mix well with a whisk. 2. Clear a small area in the center of the dry blend. 3. Add sugar, dry yeast, and the 2 cups of warm water. Let stand for 3 minutes until yeast proofs and forms bubbles. Combine with flour mixture and liquid. This will be thick but more liquid comes later. 4. Add maple syrup, olive oil and holy water. Stir mixture until well blended. 5. Add walnuts and/or pecans and raisins and/or cherries with their liquid. 6. Add soaked oats to the flour mixture. 7. Blend everything together in one bowl. 8. Turn out onto a floured board and knead by hand for 10-12 minutes adding more flour as needed to make a moderately stiff dough that is smooth and elastic. Knead the dough by flattening somewhat and fold-in from the outside towards the center. Press down hard on the center. Rotate the bowl and repeat the process until smooth and elastic and forma “ball” 9. Return the “ball” to the mixing bowl, drizzle with olive oil, cover and let rise 1 hour. 10. Remove to a floured board and kneed several more times as above. Cut into three equal pieces. 11. Place each piece into a loaf pan coated on all sides with olive oil. Drizzle loaf again with olive oil, cover and let rise for another hour. Olive oil produces a tasty crust. 12. Slash loaf tops and bake in the middle of a preheated 375 degree oven for 40 minutes or until brown on top and bottom. Loaf should sound hollow when tapped. 13. In company with Christ,Who died and now lives,may they rejoice in Your kingdom,where all our tears are wiped away.Unite us together again in one family,to sing Your praise forever and ever. ***** RECIPES FROM RITA: LENTEN STEW INGREDIENTS: 1/3 cup olive oil plus more for drizzling1 large yellow or white onion, diced fine4 nice cloves garlic, minced1 piece ginger, 2”, unpeeled, finely chopped – a very generous tablespoon minced fresh ginger or to taste1 to 1-1/2 teaspoons turmeric1/4 to 1/2 teaspoon red pepper flakes or to taste2 cans, 14.5 oz, chickpeas, drained and rinsed if you like (I don’t rinse them)2 cans full fat coconut milk, not sweetened coconut cream1 can vegetable broth plus enough water to make 2 cups (or chicken broth for non-vegetarian) or more to tasteSalt and pepper to tasteSeveral handfuls fresh, uncooked greens, or frozen greens, microwaved a bit before adding OPTIONAL TOPPINGS/ADD-INS: Basmati, Jasmine or your favorite riceYogurtTomatoesMint for garnish or cilantro or parsleyPita, lavash or favorite flat bread (brush with olive oil, sprinkle with a little zaatar and pop under the broiler or warm up in the oven) INSTRUCTIONS: Add olive oil to large skillet over medium heat, and add onion, then garlic and ginger. Adding the onion first cushions the garlic and ginger and helps prevent them from burning. Cook until onion softens a bit.Stir in turmeric, red pepper and chickpeas and cook until chickpeas get a little crisp. They’ll just start to break down a bit. Season with salt.Smoosh the chickpeas down a bit to release some starch. If you like, remove 1/2 cup or so for garnish.Stir in coconut milk and broth, and season to taste.Bring to a simmer and scrape up brown bits. Cook until stew thickens to your liking. Mine took about 25 minutes.Stir in greens. Adjust seasonings.Serve alongside rice. Drizzle with olive oil, add a dollop of yogurt and tomato wedges if you like, and reserved chickpeas if you saved some. Spiced passata sauce Cook time: 30 minutes Prep time: 5 minutes Serves: 4-6 12-15 ripe tomatoes 2 sticks rosemary 10 cloves garlic, peeled and crushed slightly 1 tbsp flaky salt 2 tbsp sunflower oil 1 fresh chili, stalk removed and cut in half 1 tbsp honey Start by turn on your oven to 220*c Cut the tomatoes in half and lay onto a roasting tray, sprinkle over some flaky salt, smashed garlic, chili and rosemary. Drizzle with a little oil and fire into the oven to roast. Roast at for 30 minutes or until the tomatoes just start to collapse and colour. Remove and allow to cool, using a potato masher or stick blender to puree the tomatoes into a sauce. Now pass the sauce through a sieve to remove all the seeds and any skins. Place the sauce back into a pot and bring up to a simmer, skimming off any fat raising to the surface. Add honey and check the seasoning - and it's ready to bottle. Caramel pecan pancakes3 large eggs1 dessertspoon golden syrup200ml buttermilk300g plain flour1 teaspoon baking soda50ml bannoffee toffee75g chopped pecansOil for cookingWhisk the eggs, syrup and buttermilk in a bowl.Sift in the flour and baking soda. Whisk to a thick batter.Allow to rest for 10 minutes. Wipe a medium hot pan with oil and add a tablespoon of batter – don't over crowd the pan. Drizzle some of the bannoffee toffee and add a sprinkle of pecan nuts on the surface. Spread over some more pancake batter to enclose the nuts and sauce. When bubbles appear, flip over and cook on the other side for a couple of minutes to cook through. Repeat with the remaining batter.Rum candied bananas50g butter50g soft brown sugar50ml rumPinch cinnamon4 bananas, peeled and choppedHeat the butter and sugar in a large pan and spread to fill the surface. Add the rum and toss for a minute. Flame carefully with the rum, add the cinnamon and serve with the pancakes.

Blackberries are like summer's jewels and are even more precious if you're having to buy them! Make this little mini galette (small quantities of homemade pastry are quick to make and so gratifying) and you won't be sorry. Makes one 12–15cm tart Ingredients Pastry 2 tablespoons chilled butter 2 heaped tablespoons plain flour ½ tablespoon sugar 3–4 tablespoons ice cold water Filling 1 cup peeled and diced apple ½ cup fresh blackberries 1 tablespoon sugar + extra for sprinkling 1 tablespoon flour 1 tablespoon vanilla extract Juice and zest of ½ lemon 1 tablespoon butter Milk for brushing Whipped cream to serve Method To make the pastry, whizz the butter, flour, and sugar in your food processor, pulsing until it resembles coarse breadcrumbs. Drizzle in 2 tablespoons of the water and pulse again, adding more water as you need for it to come together and stay together when pinched between your fingers. Turn out, roll into a ball then flatten to a disc, wrap and chill for 30 minutes. Preheat the oven to 200°C. Line a tray with baking paper. Toss fruit with sugar, flour, vanilla, juice and zest. Set aside. Roll out the chilled pastry to a 22–24cm circle. Transfer to the lined tray. Pile the fruit in the centre, leaving a 4–5cm rim free of fruit. Carefully fold up the sides, pleating and pinching them as you go. Dot the fruit with the butter. Brush the edges with a little milk and sprinkle over some extra sugar. Bake for 35–40 minutes until the pastry is golden brown and the fruit is soft and bubbling. Serve with ice cream and whipped cream. LISTEN ABOVE See omnystudio.com/listener for privacy information.

Apple, Fig and Walnut Cake1 large Bramley apple, peeled, cored and chopped 100ml vegetable oil 1 teaspoon baking powder 100g chopped dried figs 150g soft brown sugar 2 eggs 75ml buttermilk 140g plain flour 1 teaspoon ground cinnamon ½ teaspoon mixed spice 30g wholemeal flour 75g chopped walnutsSet the oven to 180oc and butter a cake tin. Cook the apples with 25g of the sugar until soft then blend to a smooth puree. Cool. Whisk the apple puree with the vegetable oil, buttermilk and eggs. Mix the flours with the baking powder,spices, figs, sugar and walnuts. Add the wet ingredients and whisk to a smooth batter. Spoon into the tin and bake for about 40 minutes or until an inserted skewer comes out clean. Drizzle for cake 60g icing sugar 1 dessertspoon maple syrup ¼ teaspoon cinnamon 1 dessertspoon waterMix together and drizzle over the cool cake. Or if you want to have the cake with blue cheese leave off the drizzle.
