This weeks guest is Madeleine Hayles who is a sommelier and the owner of Happy Coffee And Wine, a cafe and wine bar in the Parkdale neighbourhood of Toronto, Ontario, Canada. Mads had done several stints at classic restaurants like Terroni and higher end fine dining at Actinolite and Hop Goods Foodliner, but she found her passion working at Midfield Wine Bar. After 4 years there, Mads and several partners opened up Happy Coffee and Wine in 2019 - a neighbourhood spot focused on keeping wine diverse and affordable. The cafe and wine bar is more likely to carry a pet-nat than a barolo, but aren't necessarily a natural wine bar. More recently, Mads has gotten into winemaking. Mads has done a couple of harvests at Trail Estate Winery in Prince Edward County, and at 2Naturkinder in Franken, Germany. Currently, Mads is working on her own wine project focusing on Ontario hybrid varietals, hopefully to be released in the new year. Mads is also working on a new collaboration with Jess Maiorano, the chef & owner of Pasta Forever, a specialty pasta shop, Italian grocer & caterer on Dundas West. The new restaurant is named Zia's Place and is set to open in January 2025. Jordanne Brown is a stand-up comedian, writer, and performer based in Toronto. I first encountered Jordanne a few months ago at one of Toronto's legendary community spaces, Bar Orwell, located on Dundas West. Jordanne essentially wrapped the audience around her little finger and rocked the room, firing off one joke after another as if they were bullets shooting out of a gun. Bar Orwell was absolutely buzzin'— "bzzzz." After Jordanne's set, I buzzed up out of my seat and headed to the bar. It's time for a drink, I thought to myself, eagerly pushing my way through the one or two people in my way. As I scoped out the drink fridge, I remembered that I don't always need alcohol to have a good time, so I opted for a Coke. The bartender, who I can't remember anything about, nodded in approval, "Nice choice," he affirmed. The next thing I knew he was slamming the can down on the bar in front of me. He grasped my Coke with his left hand and slipped his right index finger under the tab, pulling back at it teasingly, as if to imply, "You want me to open this can pretty bad, huh?" I did want that. He looked down at the can and then back up at me, our eyes locked, he paused. Something felt off. Why wasn't he opening my Coke? What the f*ck is going on here? Sensing my fear and confusion, the bartender began explaining, "So, before I open this, there's something you should know..." He was being super serious, like, in a way where it made me feel like he wasn't going to give me my Coke. He continued, "There is currently no ice because we don't have a sink behind the bar." I was shook. No ice? What the—? "Damn," I muttered. I then quickly got my shit together and decided I'll just get the Coke anyway—and did. He instantly cracked it open and handed it to me just as I gave him my 5 bucks or however much it was, but I was pissed. I don't even think I said thank you. I slowly made my way back to my seat, thinking to myself, "no ice equals no tip." I sat down and sipped my warm Coke. The once buzzin' room was now filled with nothing but dread, for me at least. The legendary Bar Orwell suddenly didn't feel so legendary. She shares her passion and relationship with the kitchen and her love of community. Lesley Mattina is the baker that kids have grown up to love, in her Dundas West neighbourhood. She opened OMG Baked Goodness in 2007 at 1561 Dundas Street West and has been baking from scratch every day since. She gives us a peek into the neighbourhood bakery that all families go to when celebrating occasions together. Whenever she walks into a kitchen she feels as if it gives her a big hug. An average work week for her consists of a minimum of sixty hours. She shares her insights relating to commercial production bakeries and dispels the myth that frozen isn't as good as fresh, with her Bake At Home products, in the OMG experience. Her life and business philosophies are all about community. She lives around the corner from the OMG bakery and has an affinity for Christie Pits park, where she walked her dog. Trinity Bellwood is another favourite but is a bit wild for her these days. Dr Gelinas' office is on Dundas West in Toronto, and after years practicing at other clinics in the US and Canada she decided she wanted to launch her dream dental office, and break from tradition with a swanky space that has nothing to do with the beige medical offices we are used to. It starts with beautiful decor and amazing customer experience, but it's more than that. Dr Gelinas even recommended acupuncture as a way of dealing with my teeth-grinding problem, something I never expected a dentist to do. We often overlook dental health as part of our self-care routine and Dr Gelinas is here to remind us of why it matters.
