Tariffs, tariffs, tariffs. It's the word on everybody's lips this week and, as you'd expect, every food media outlet in the country published some sort of breakdown of what this means for restaurants and the food industry at large. Father Sal and I sift through the noise to distill what this means for LA restaurateurs and diners alike. Also on this episode, we issue a correction from last episode, we recap a beefy meal at the newly opened Matu Kai in Brentwood, and we dive deep on Meghan McCarron's piece for the New York Times' tracking how the decline of middle class restaurants - think Red Lobster, Chili's, Outback Steakhouse and the like - speaks to a worrying trend in American dining. In Chef's Kiss Big Miss, there's the closure of an iconic Greek restaurant, the launch of a questionable celebrity (Glen Powell) sauce brand, and the announcement of a brand new Vince Vaughn flick that hit a little too close to home for yours truly. Helpful links:Jaya Saxena and Bettina Makalintal on tariffs https://www.eater.com/24401316/trump-tariffs-effects-on-food-spices-explained-burlap-barrel-natoora-tuk-tuk-snack-shop-interviewThe LA Times' Patrick Comiskey on tariffs and wine https://www.latimes.com/food/story/2025-04-07/will-tariffs-kill-mid-priced-winesThe NY Times' Eric Asimov on tariffs and wine https://www.nytimes.com/2025/04/10/dining/drinks/wine-tariffs.htmlMatu Kai https://www.matusteak.com/Meghan McCarron on the decline of casual dining chains https://www.nytimes.com/2025/04/04/dining/middle-class-restaurant.htmlPapa Cristos closing https://www.latimes.com/food/story/2025-04-06/papa-cristos-closing-dupars-chili-johns-struggling-la-old-restaurants-in-troubleGlen Powell BLT https://www.delish.com/food-news/a64410917/glen-powell-blt-recipe/Molly Baz vegan burgers https://pdx.eater.com/2025/4/3/24398516/portland-oregon-vegan-fast-food-restaurant-face-plant-open-molly-bazScott McTominay and tomatoes https://www.nytimes.com/athletic/6234877/2025/04/03/scott-mctominay-man-united-napoli-italy-tomatoes/–Go check out The Lonely Oyster in Echo Park! https://thelonelyoyster.com/

Today on The LA Food Podcast presented by Rusty's Chips… how are influencers transforming LA's restaurant scene? What does a legendary San Bernardino restaurant have to do with political polarization? And why did one Little Tokyo mochi manufacturer inspire a long-form feature in the New York Times? Father Sal is with us to discuss all of the above, beginning with a deep dive into Eater LA's four-story package on the dreaded “i” word - influencers. Are they adding something valuable to the overall conversation? Or are they scammers that everybody from restaurants to consumers should be wary of? As always, we have the definitive, unquestionable, and unchallengeable answers, for you dear listener, so get excited, cuz this conversation is Lox Level 9.9. In Part 2, I caught up with the iconic Dominick DiBartolomeo at The Cheese Store of Beverly Hills. While The Cheese Store has been in business since the 60s, the latest iteration on Santa Monica Blvd is making waves that have the LA's culinary nerds abuzz with excitement. Dom and I talk about all things cheese and sandwiches, we learn what his favorite cheeses are right now, and which cheese he would eat if he could only pick one to consume for the rest of his life. He tells us the crazy lengths he goes to to source his incredible product, and how he goes about forging relationships with LA's best chefs. Talking to Dominick felt like talking to a long-lost relative, and that's not just cuz we're both Italian. He's a true gem of a human being, and I can't wait for you to brie this conversation. I mean, hear this conversation.  As always please consider leaving us a rating or a review wherever you listen to podcasts. Buckle up—today's episode was inspired by something that got me really worked up this week: "I think home-baking is one of the stupidest things anyone can engage in," says Rick Easton of Jersey City's Bread and Salt. This episode is about shoulds and supposed-tos, baking at home, and the ways we devalue certain kinds of labor. Whether or not home-baking is your thing, you'll recognize the way value is narrowly defined by culture and, I think, gain new language for the worthiness of work that doesn't fit the capitalist mode.Footnotes: "Leave the Baking to the Professionals" by Hannah Goldfield, New Yorker Bread, and How to Eat It by Rick Easton and Melissa McCart "On Bread" via From the Desk of Alicia Kennedy "What could 'food is political' mean?" via From the Desk of Alicia Kennedy King Arthur Baking: Old-Fashioned Oatmeal Loaf Breadhead by Greg Wade History of Low-Carb Diets on Wikipedia "I love bread!" First Story: “The Dream Eaters” by A.M. Dellamonica Mo Cottonsmith had just turned sixteen when she started Lopside Fashions, with cash she stole from a neighborhood fizz dealer. The money wasn’t enough to sustain a business, but Mo counted on getting lucky. She believed in making her own luck, too: thanks to a roving copcam, her first creation just happened to debut on all the morning news shows. The dress was daffodil yellow with simulated dewdrops on the bodice and a chainmail hoop skirt. Mo’s pal Juanita Jones was modeling, and the footage showed her fighting off a couple of deviants. A.M. Dellamonica has recently moved to Toronto, Canada, after 22 years in Vancouver. In addition to writing, she studies yoga and takes thousands of digital photographs. She is a graduate of Clarion West and teaches writing through the UCLA Extension Writers’ Program. Dellamonica’s first novel, Indigo Springs, won the Sunburst Award for Canadian Literature...
