    Melissa Lopez is the James Beard semifinalist chef behind Barra Santos, one of the buzziest restaurants in recent memory to grace Los Angeles. Barra Santos is a tiny, sardine-tin of a restaurant in Cypress Park serving up thoughtful, super high-quality Portuguese fare.     Ryan Sutton is the chief critic and editor at The LO Times, one of the absolute best sources of food writing Substack has to offer. He previously served as Eater New York's chief food critic for almost a decade, and prior to that, the New York critic at Bloomberg News. He's won a James Beard Award and been nominated for two more, and today he lets us into his mind to understand not just how one earns the title of “critic,” but what food criticism actually entails. After Father Sal and I discussed the LA Times 101 at the end of 2024, it became abundantly clear to me that there's a lot of confusion out there about what a critic's role should be. Some believe it's to put people on to new spots and to protect their dollars from the duds, while others believe it's to point out the good and especially the bad aspects of the hottest restaurant in town. The truth is, it's way more nuanced than that, and Ryan does an excellent job of breaking down the true responsibilities of a critic, not just on an individual level, but as a profession as a whole. We try to make sense of the noise, and ask ourselves is there any hope for the house that Richard Riordan built? Secondly, Silver Lake lesbian bar The Ruby Fruit just added controversy to its menu. The bar has been fighting for survival since the wildfires took a massive hit to their bottom line.     We finally made it to Jordan Kahn's Vespertine in Culver City, which reopened after a hiatus in the Spring of 2024, and earned not one but two Michelin Stars just a few months later. If you've heard people talk about VesperVespertineine, then you know that it elicits strong reactions. Some people can't get enough of Chef Kahn's otherworldly creations, with Michelin describing his food as “visually stunning” and “daringly inventive.” Others, however, walk away deeply confounded, scratching their heads like entire world in the wake of the Luka Doncic trade.     The Palisades and Eaton fires have been raging for more than a week now. Restaurants and food vendors have played a huge role in the relief efforts, stepping up in a big way to feed first responders and evacuees.  Father Sal and I discuss a couple of excellent articles on restaurants in the midst of the wildfires, and we speak with three people who've experienced the fires from different perspectives: First is Matthew Schodorf, the co-owner of Cafe De Leche whose Altadena location was completely destroyed by the Eaton fire. We talk to Matt about how they're navigating the situation and what we can do to help.  Second is Liz Gutierrez of Fiorelli Pizza in Venice, one of the first operations to spring into action to help first responders and evacuees.     What does the year of our Lord 2025 have in store for LA restaurants?     Michelin held its 2024 California Guide Ceremony earlier this week, and it's fair to say that LA restaurants fared rather well. Jordan Kahn's Vespertine earned back its 2 stars, Holbox, Uka and Meteora earned their first, and LA also dominated the list of new Bib Gourmands. But, like I ask my therapist on a weekly basis, what does it all mean? The review had been building for weeks, if not more than a year, and its Kendrick-style intensity left all of Los Angeles talking. Father Sal is with us today to dive deep into the situation, including what led to it, what the review got right and wrong, and how Victor Villa and others in the LA food community responded. We attempt to answer the essential questions - was Bill's criticism fair? Did he go too far, was he too mean? And what does it mean that Bill's opinions on these tacos, seems to be so far removed from that of other key voices in the food world including Bill Addison, LA Taco and even Michelin Bib Gourmand.     Santiago Lastra is the chef of Michelin-starred restaurant KOL in London. He visited in LA on the heels of the World's 50 Best ceremony in Las Vegas, where KOL was named the number 17 best restaurant in the world. He stopped by the City of Angels for a special collab dinner with Vespertine's Jordan Kahn, and I'm really honored he made time to grab lunch with me at Gilberto Cetina's Holbox, the 2023 LA Times Restaurant of the Year, located at Mercado La Paloma.  This is truly a one-of-a-kind episode, dear listener. Chef Lastra tells us his frankly wild story, from growing up in Cuernavaca, Mexico to becoming known globally as a nomadic chef hosting pop-ups all over the world. He tells us about working with Rene Redzepi on Noma's famed pop-up in Tulum, how he developed his style as a chef who blends Mexican techniques and traditions with hyper-local ingredients, and he walks us through what a meal at KOL actually looks like. Personally, I was deeply moved by Santiago's passion and philosophy around food and hospitality. Oh, and did I mention that Chef Gilberto Cetina was serving us lunch while we spoke? Chef Gilberto makes multiple cameos in the episode to chat with Santiago and to explain the incredible dishes he's bringing to the table.
