Ryan Sutton is the chief critic and editor at The LO Times, one of the absolute best sources of food writing Substack has to offer. He previously served as Eater New York's chief food critic for almost a decade, and prior to that, the New York critic at Bloomberg News. He's won a James Beard Award and been nominated for two more, and today he lets us into his mind to understand not just how one earns the title of “critic,” but what food criticism actually entails. After Father Sal and I discussed the LA Times 101 at the end of 2024, it became abundantly clear to me that there's a lot of confusion out there about what a critic's role should be. Some believe it's to put people on to new spots and to protect their dollars from the duds, while others believe it's to point out the good and especially the bad aspects of the hottest restaurant in town. The truth is, it's way more nuanced than that, and Ryan does an excellent job of breaking down the true responsibilities of a critic, not just on an individual level, but as a profession as a whole. A recent Lancet study estimates that up to 1.5 million children worldwide have lost at least one primary or secondary caregiver as a result of the pandemic. Indeed, orphanhood and grief are an essential part of the story of this pandemic, one whose impact is just beginning to be understood. In this episode we explore the connection between caregiver death and children's mental health with Laura Olague, director of Children's Grief Center of El Paso, a grantee of the Hogg Foundation. This week in Food News: Hudson Yards STINKS!!! Eater’s Ryan Sutton reviewed some of the most anticipated restaurants in NYC’s newest “neighborhood” and outside of David Chang’s Kawi, hated them all. He summarized Estiatorio Milos, a high-end greek seafood restaurant, “That’s the thing about Milos. You can have a reasonably grand meal here. You can have a reasonably average meal here. And yet the one constant is that on every visit, you feel cheated.” So he awarded it and Wild Ink both 0/4 Stars. He did award Milos Wine Bar 2/4 and David Chang’s Kawi 3/4 Stars. I wound up in the Hudson Yards Mall last weekend and went to say Hello to former radio show guest Alex Lazaridis at The Drug Store.  This place is just a giant Ode to Capitalism, and I kind of hate it just on principle. It makes sense that most of these places aren’t good, just pretty and expensive. Lizzie is a good friend of mine and taught me about Pisco in a one on one class two years ago. Pisco is technically a brandy but it is so much more than that. I believe it to be the purest expression of the grape. When you distill it, you cannot add anything to it, age it in barrels, or do anything else to impart flavor. All you can do is choose the single grape, or a blend, and allow the quality of the grapes to speak for themselves. Lizzie explains the history of Pisco, various Pisco cocktails, and all the different varietals of grapes that can be used to make Pisco. The most incredible thing about Macchu Pisco though is their commitment to the farmers that they work with. Macchu Pisco does not own their own farm or distillery so they work very closely with local farmers. They are working with female farmers and are bringing women grape pickers onto the field as well. They also pay their employees a living wage and have been working with farmers to change their agricultural practices. They ask that their farmers don’t spray their grapes with any pesticides but still pay them for what their yield will be

Harvesthas concluded in Sonoma County and vintners are happy with what they have tasted thus far. Bill Swindell gives us a quick look at what winemakers and farmers have to say about the 2015 vintage, one of the earliest on record.German agri-chemical giant Bayer has acknowledged that one of its products sold throughout Europe has caused stunted development of the berries for certain wine growers. Although the cause has yet to be determined Bayer is already taking steps to compensate growers that have suffered losses.  Danny Meyer wants to change the way employees are compensated at his thirteen full service restaurants. The most controversial part of his plan is the elimination of tipping.  Aimed at equalizing the pay differences in restaurants, between the front and the back of the house and addressing pending mandatory minimum wage price increases being proposed in the legislature, his move to emulate the European modelfor fine dining sans tipping, will have lots of restaurant owners and workers watching closely. In a very detailed piece for New York Eater, Ryan Sutton examines the pros and cons of Mr. Meyer's altruism.  Joey Casco posted a blog titled 'The Harsh, Drunken Truth on Wine Trade Tastings'. He includes a personal story that is well, let's just say very sobering. Bill and I use his blog as a springboard to offer some additional tips on how to survive a wine tasting.  The wine of the week is Luciano Saetti's 2014 Vigneto Saetti Lambrusco Salamino. Luciano farms organically and crafts his wines without the addition of sulphites. The color is medium garnet and shows a beautiful pink froth when poured. Aromas of black cherry, plum and a hint of cola are evident on the palate as well.
