Step into Bar Magnolia on Sydney Road and you're wrapped in it straight away: the low golden light, the easy murmur of good conversation, the quiet thrill of something thoughtful happening behind the bar. Co-owners chef Mia Coady-Plumb and winemaker Lawrence Scanlon have created a space where classic French technique flickers with wit, soul, and a little rebellion. Mia's food, which she calls "irreverent" French, honours tradition but never feels bound by it, each plate carrying a beautiful, unexpected spark. Before stepping into Melbourne's dining scene, Mia sharpened her skills in some of Sydney's most celebrated two- and three-hatted kitchens, later moving to Melbourne to help open much-loved Town Mouse before bringing her talents to Cutler and Co, Anchovy, Lune, and Smith and Daughters, amongst others. I pulled up a stool at the bar to talk with Mia about Magnolia, about instinct and flavour, and about why a little mischief might just be tradition's best friend. We also talked about the reality of chef life and running a small business. This was an incredible chat, and I loved every minute of it.

The country mouse stuffed his mouth with the delicious cakes, drank the sweet champagne, and staggered around dizzy. He was having the time of his life with a full belly and having forgotten what it's like to have little most days or starve sometimes. The world couldn't be a happier place!Suddenly there's a commotion at the other end of the dining hall.Children, what was the commotion about?The country mouse sees his cousin dash across the table like his life depended on it and dragged him away. He turns around and to his horror sees the biggest furriest cat he has ever laid eyes on in his life in pursuit. The overfed cat is also clumsy and fails to catch them at every corner and turn. At the same time, a maid steps in with a long broom and beats the floor determined to squash them with it barely missing the mice. Finally, they reach their hole in the skirting board at the end of the hall barely missing and getting clawed by the most vicious beast that is every mouse's nightmare, the cat. “HAHA! That was close! But wasn't it worth it??” Exclaims the town mouse in glee. The country mouse is dizzy, but this time out of fear as he almost got squashed and clawed to death. This isn't something a simple country mouse can live with every day he thinks to himself and leaves the town having bid farewell to his cousin.The moral of the story is that it is better to live a peaceful life that has little and is secure than to live in a luxury that can end any moment in disaster.

At first Country Mouse is seduced by the vast array of food on offer and begins to feast on cheese, bread and fruit. He dreams of staying in the town and never moving back to the country again. That soon changes, however, when he meets the house cat. Appley Dapply's Nursery Rhymes and The Tale of Johnny Town-Mouse are just two of many wonderful stories written by Author Beatrix Potter. Beatrix Potter spent a lot of time alone as a child way out in the countryside on holidays and vacations. She loved observing animals and sketching images of them. She later wrote stories about the images that she had drawn. In 1902, Beatrix Potter published her Tale of Peter Rabbit. That was the begining of her career as the author of children's stories. She wrote more than 20 books for children including the precious story. Now you must know that a Town Mouse once upon a time went on a visit to his cousin in the country. He was rough and ready, this cousin, but he loved his town friend and made him heartily welcome. Beans and bacon, cheese and bread, were all he had to offer, but he offered them freely. The Town Mouse rather turned up his long nose at this country fare, and said: “I cannot understand, Cousin, how you can put up with such poor food as this, but of course you cannot expect anything better in the country; come you with me and I will show you how to live. When you have been in town a week you will wonder how you could ever have stood a country life.”
