Hailing from the small town of Taree in New South Wales, Benjamin Cooper has been Executive Chef at beloved Southeast Asian restaurant Chin Chin for the past 13 years. He has worked with several of Australia's most celebrated chefs, flexing his skill and knowledge in kitchens across Melbourne and the UK. Originally aiming to pursue a career in economics, Benjamin ended up completing a culinary apprenticeship on a gap year — and never looked back. The early days of his career saw him head to the UK, where he worked with head chefs at renowned restaurants including Nobu London, Bluebird in Chelsea and Smiths of Smithfield. Cooper's passion for authentic techniques and high-quality ingredients grew as he worked with Australia's best-known Thai cuisine chef, David Thompson, at Nahm within London's The Halkin — the first Michelin-starred Thai restaurant in Europe. Returning to Melbourne, Benjamin worked as Head Chef at fine-diner Ezard and esteemed Thai restaurant Longrain, both stints cementing his love of fresh and fiery flavours. In 2011, Benjamin joined restaurateur Chris Lucas to launch Chin Chin, where his now trademark big, brash flavour combinations had diners lining up down the street from day one. An icon of Melbourne's food scene, Chin Chin arguably kickstarted the city's trend of dining with energy, colour and music from its location on Flinders Lane. Benjamin's passion, understanding of ingredients and knack for experimenting with flavours and texture combinations has redefined Southeast Asian cuisine in Australia. It's helped drive Chin Chin's incredible success within the country's hospitality scene, not just with the restaurant's original Melbourne location, but also its second outpost in Sydney's Surry Hills (opened in 2017) and the addition of Club Chin Chin at GMHBA Stadium (2024). In this week's episode of Sake On Air we dive further into the world of Shochu and Cocktails as we are excited to have had the chance to talk to Christian Suzuki-Orellana, aka ‘Suzu', the founder of Kagano Pop-Up, General Manager & Bartender at "Wildhawk" as well as a participant of the immensely popular Netflix show, “Drink Masters”. Among his many achievements, he has been nominated for best US Cocktail Bar and Bartender of the Year in 2022 and is currently traveling all over the world to serve up some finger-licking delicious Cocktails that are often inspired by his childhood and teenage years living and working in Tokyo in his grandparents' restaurant. So when our friends and sponsors at the Japan Sake and Shochu Makers Association told us they had invited him and a delegation of inspiring mixologists to Japan for a special Shochu tour and workshop, we could not believe our luck. While taking a gap year to consider his future Benjamin Cooper's (Chin Chin) world was turned upside down with the passing of his mother. Forever inspired by her cooking, he landed a part time job in the industry and soon fell in love with life in a commercial kitchen. Every year thousands of clinical pearls are published in the emergency medicine FOAMed space. But how do you make sure you get the right content in front of your residents? On this episode of EMRA*Cast, Drs. Benjamin Cooper, Jonathan Giordano, Catie Reynolds, and Tom Fadial discuss their journey developing ECG Stampede, a gamified medical education platform aimed at helping residents master the foundations of electrocardiography triage and interpretation.
It's easy to get burnt out in this industry. So much of what we do is mere drudgery. It's repetitive and it can wear us down after a long time. It is difficult to stay inspired and creative when you work behind the bar. One way to stay inspired however, although maybe not the easiest, is variety and movement. My guest today, Suzu, is an expert at career movement. Suzu has worked in the industry since he was a child, helping out around his grandparent's family restaurant in Tokyo. Here in San Francisco, he's worked at more bars than I can count including some legendary cocktail bars like 15 Romolo, Tradition(now Zombie Village), Wildhawk, Bellota, Benjamin Cooper and, more recently, Bon Voyage. Suzu has also dabbled in brand work, competitive bartending with USBG World Class and Bacardi Legacy and more. "I have to stay active, I need to be doing a million different things," Suzu said, "Even as a kid, I was interested in the arts, but I was also playing competitive soccer, I was in the Boy Scouts, I was doing this and that all the time, and I still feel that way, I guess." By constantly moving around and staying fresh, Suzu stays inspired and creative in his career. He not only finds variety from bar to bar, but at bars like Benjamin Cooper, where we recorded this interview, the menu changes constantly and the inspiration is flowing as freely as the booze. Suzu was originally pursuing an education in visual art, but today he uses that same artistic creativity behind the bar, which also helps him stay inspired.
