Leo Holtzman is the co-founder of SoCal Cantina and founder of Cocktail Conjuring, Inc. Leo first started tending bar in Orlando when he attended UCF triple majoring in Theatre, Psychology and Hospitality Management. Bartending was just a means to an end until he could make it as a full-time close-up magician. Upon graduation he moved back to Miami and worked as a magician/performer for various events and companies while working a few nights a week at Cadillac Ranch. Eventually he became the bar manager of Cadillac Ranch while the performing season was in a lull. In 2012, he wanted to take his talents to Las Vegas and saw that his best opportunity was to work for the new hip and chic hotel, SLS South Beach. SLS had/has plans for a large scale resort in Las Vegas set to open Labor Day weekend 2014. He landed an entry level job at SLS as a bar back at Katsuya's Dragon Lounge mixology bar. This was his first introduction to the world of “mixology”. He learned everything from the bottom and within 6 months was the head bartender/manager and was in charge of all normal duties of the bar program including cocktail design. During his time with SLS he also took on consulting and worked various events including the Lucky Rice festival and Bacardi Legacy competition. His talents did not go unnoticed and in 2014 he partnered with Patrick Gleber, owner of Tobacco Road, to open Cocktail Collection and put his magic career on hold. Cocktail Collection was the hottest bar in Miami, featuring a rotating original cocktail menu and local artist show cases. Cocktail Collection has received numerous accolades from various mediate outlets and critics including the only 5 star cocktail lounge/bar rating on YELP in the greater Miami area. It was loved by guests and critics, a rare feat in today's hospitality market. Then without notice Tobacco Road and Cocktail Collection were demolished to make way for the new high rises of Brickell. But Leo kept on bringing his cocktails and hospitality though Cocktail Conjuring events, pop-ups and consulting for select venues including Norwegian Cruise Line and The Palms Hotel and Spa. Then out of nowhere AJ Billapando contacted Leo with an idea. AJ had remembered one night at Cocktail Collection where he had the best cocktails of his life and a surreal experience of Leo performing close-up magic for a group of him and his friends. The cocktails and experience was unpretentious yet sophisticated- something he wanted SoCal to embody. After a brief call, the two met and came up with SoCal Cantina over night. They opened a week later in Brickell and were a wild success. SoCal Cantina offers out-of-this-world margaritas as well as some classics from Cocktail Collection menu (smoke fashion anyone??). Nick Kokonas is an award winning bartender who lives and works in Chicago, IL. Over the course of his career he has played an integral role behind some of the most prestigious bars in the city; from the formerly Michelin-starred gastropub Longman & Eagle to working on the opening bar team at Danny Meyer/The Dead Rabbit collaboration Green River. He has participated in a number of the most prominent international cocktail competitions, finding success in Diageo World Class, Bombay Sapphire's Most Imaginative Bartender, and Bacardi Legacy, to name a few.In June of 2016, Nicolas became the opening beverage director for The Heritage, a restaurant just outside Chicago's city limits. While developing the menu he created a weekly rotating cocktail simply titled “Something & Tonic”, an ever-changing drink with a foundation of tonic water, tonic syrup, or liqueur bittered with cinchona.The challenge of using tonic in innovative ways provoked his interest into tonic's origins and its growing presence in modern day drinking culture. After the restaurant's opening Nicolas' cocktails began garnering attention. In the Chicago Tribune the “Something & Tonic” was given special mention in veteran food writer Phil Vettel's favorable two star review of the restaurant where he writes:"Kokonas offers a tidy list of five or six cocktails, of which the most interesting is the Something and Tonic, which changes week to week. I don't know if Kokonas can sustain this for a year, but I've managed to have three versions of this drink, and so far, so good."Moving on from The Heritage, Nick recently spent two years running a beverage program in Charleston, SC at the Southern food icon The Grocery. Laura Reidy joins the show this week from Hollywood, California. Originally from Lantana in South Florida, Laura started her hospitality career as a hostess while still in high school. Eventually, Laura moved on to serving and ultimately found her calling behind the bar. Laura's main passion is whiskey, which helped her land the Bar Manager position at APL Restaurant in Hollywood, California. Laura only recently has begun testing her creativity in a competitive manner, recently making it to the top 8 for the US in Bacardi Legacy 2020 and competing in the Woodford Reserve Manhattan Experience. When Laura's not behind the bar, she can be found working as an ASL Interpreter, acting, or hanging out with her husband and two English Bulldogs. It can be an amazing way to learn new skills and move forward in your career, but it’s not without its challenges, everything from balancing training time with your daily schedule to finding support for your cause, and some you may not even expect. Competitive bartending is definitely one of the more exciting directions you can go in this industry. My guest today is Jessi Lorraine. She has been in the industry for more than seven years at bars like Absinthe and Bon Voyage, and she’s the winner of the most recent Speed Rack competition in California. Speed Rack is an intense, all-female, high-speed bartending competition which has raised more than one million dollars to date for breast cancer research. Jessi has competed in other competitions as well, such as Bacardi Legacy, and she also manages Elda, where we recorded this interview. Jessi had a ton of amazing insights about competitive bartending and some excellent advice for anyone interested in getting into competitions. It's easy to get burnt out in this industry. So much of what we do is mere drudgery. It's repetitive and it can wear us down after a long time. It is difficult to stay inspired and creative when you work behind the bar. One way to stay inspired however, although maybe not the easiest, is variety and movement. My guest today, Suzu, is an expert at career movement. Suzu has worked in the industry since he was a child, helping out around his grandparent's family restaurant in Tokyo. Here in San Francisco, he's worked at more bars than I can count including some legendary cocktail bars like 15 Romolo, Tradition(now Zombie Village), Wildhawk, Bellota, Benjamin Cooper and, more recently, Bon Voyage. Suzu has also dabbled in brand work, competitive bartending with USBG World Class and Bacardi Legacy and more. "I have to stay active, I need to be doing a million different things," Suzu said, "Even as a kid, I was interested in the arts, but I was also playing competitive soccer, I was in the Boy Scouts, I was doing this and that all the time, and I still feel that way, I guess." By constantly moving around and staying fresh, Suzu stays inspired and creative in his career. He not only finds variety from bar to bar, but at bars like Benjamin Cooper, where we recorded this interview, the menu changes constantly and the inspiration is flowing as freely as the booze. Suzu was originally pursuing an education in visual art, but today he uses that same artistic creativity behind the bar, which also helps him stay inspired.
