Alex Jump (Instagram) is a founder and the senior manager of operations for Focus on Health. Prior to this, she led Death & Company's Denver bar program. I wanted to kick off the year with this conversation with Alex for two reasons. One, many of us use the beginning of the year to reset our lifestyle and dietary goals and the no-and-low segment of the drinks business is thriving. Now more than ever, there are great flavors to take the place of alcohol or many wonderful ways to drink it but pull back on the ABV. Second, beyond our physical bodies, Alex's work has encompassed taking better care of ourselves holistically, which we also are prone to reflect on as one year closes and another begins.A few other things* Alex said that if you are a bar or restaurant and you are not offering a nice array of alcohol-free options - beer, wine, cocktails, etc. - you are leaving money on the table.* Life happens at work. While we need to show up and get our work done, we can't expect that we can always just “check it at the door”. * Most of the alcohol-free spirits are not goig to have as rich of a texture as traditional spirits. Using a richer syrup or foamer will help make up for the density it lacks.* Alex used the term “compounding” during our discussion about NA products. I've heard it but admittedly couldn't have defined it. This means addings flavors after distillation. You can read more here if interested. Kate and Suzu both competed in the hit Netflix reality competition series, “Drink Masters.” As you'll quickly notice in this discussion, they also happen to be great friends. Kate's award-winning bar is in Albuquerque, New Mexico. She's been named by Drinks International as one of the industry's "Top 100 Most Influential Figures in the World." My guest on this episode is Julie Reiner: you may know her from any one of the New York bars she's opened since 2003: Flatiron Lounge, Pegu Club, Clover Club, and most recently, Milady's. She's written cocktail books, judge cocktail comps around the world, and won numerous accolades for her bars and herself. Or if you've just come into the bar world, you might know her from TV and the Netflix show Drink Masters, which debuted in October last year to much success.Drink Masters is a competitive bartending show — like Masterchef for bars — and it's really the first of its kind — I do remember seeing a show about Diageo's World Class comp on TV once, but I think it was an ad more than a show. Drink Masters is a new thing, and when it came out there seemed to be two takes: one, that it all molecular and foams and airs smoke and mirrors, and that it wasn't real bartending — and the other, that it was great to see bartending get this kind of exposure. For what it's worth, I've been watching it recently, and I think it's a net positive — I mean, it's very American in tone, as I say to Julie in this chat, but I think it's pretty genuine and I'd like to see more of it.So I talk to Julie about the show of course, and what that experience was like behind the scenes. But I also talk to her about how she makes decisions on which opportunities to pursue, about the qualities she has that have set up her up for this remarkable career, what it takes to open a bar now as opposed to 10 and 20 years ago, what makes a great bar and more.

Meredith Barry grew up in the hospitality world, watching her dad and soon following her own path that eventually led her behind the bar in her hometown of Chicago. She remembers the first time she got the chance to serve customers, and she fell in love with the industry, an industry that isn't always the easiest. Now, as the owner of Platypus in the Grove, she strives to take the decades of lessons learned and teach a new generation. She came to St. Louis for a job at the Angad Arts Hotel and soon fell for our city and the culinary scene. She's passionate about crafting cocktails and beverage programs and has long loved to crest mocktails, and zero-proof cocktails, a trend that Meredith says has thankfully exploded in recent years. With a stint on Netflix's reality series Drink Masters, she's helping shine a spotlight on the St. Louis hospitality scene, one she strives to help make better, one beverage at a time.

Meredith Ann Barry was immersed within the hospitality industry at an early age, her father placing her to work in the country club that he managed some time ago. Although she held many roles throughout her time there, the excitement of creating drinks for others to imbibe seduced Meredith. From the humble beginnings of mini bottles and Island Oasis Pina Coladas, to creating craft cocktails at one of the top bars in the city of Chicago it has always been about giving a genuine experience. Meredith believes in the power of acting, speaking, leading, and being consistent in expectations, commitments, and passions to those around her—whether at home or in the work place. Meredith is forged in the heat of passion for the love, respect, validation and commitment to every individual who walks through the door. In Chicago, Meredith has worked at Ombra, Sable, and Volume 39. She was the national champion of Compass Box's Scotch Competition in 2018 and an national finalist in the Gra'it Grappa Competition in 2017. When the Cocktail Doctors meet a world renown mixologist, the only thing to do is make him drinks. This weeks guest is Kate Gerwin who joins us from Albuquerque, New Mexico. Kate is a widely celebrated bartender and hospitality consultant, is well-known in the drinks industry for being the first woman and first American to win a global bartending championship for Bols Around the World Bartending Championship in 2014, but this is just one of her many worthy accomplishments. In her more-than-20-year career, Gerwin has been named by Drinks International as one of the industry's "Top 100 Most Influential Figures in the World" (2019 & 2022), she has worked as a certified advanced master sommelier for some of Napa's top wineries, consulted on the TV docuseries Bar Rescue, taught at the Le Cordon Bleu campus in Scottsdale, Arizona and the New England Culinary Institute in Montpelier, Vt. And we'd be remiss not to mention, as she puts it, her "favorite crowning moment:" being inducted into the Tales of the Cocktail Dame Hall of Fame, which celebrates the contributions of hard-working people to the spirits and cocktail industry. But it is her new distillery and cocktail bar, Happy Accidents, that she is most passionate about, specifically for the industry changing work they are achieving with a new “distillery bar” concept, enabling them to operate on whole new “post pandemic” level. Buying bulk spirits directly from distilleries, distilling in house, and acting as a blending facility, they have open the door to a myriad of possibilities and profits, enabling them to operate a more equitable company for their staff. Living wages, benefits, profit sharing and partnership are only the tip of the iceberg for this 100% bartender owned, industry changing operation which puts “staff first” in all operational decisions. They offer over 70 cocktails on the menu, all of which have base spirits uniquely designed for the cocktail itself. The bartenders have the freedom to adjust not only a spirits flavor profiles and ingredients, but even the proof of the spirits that they select for their libations. Not only is each cocktail carefully curated, but the spirits themselves are designed by each bartender to compliment the intended result. Full control from still to glass.
