Things aren't always great he tells us and some of the creative juices he's had in the past are hard to get flowing. Still, there is work to be done and so he soldiers on. As per usual audio problems abound, Casse is nowhere to be found and Holl is breaking in a new wing on his fourth vacation house. But, we have beers and Laffler is tasting along with us as well. Off Color Brewing was founded with a goal of brewing forgotten beer styles and swears they'll never brew an IPA Off Color Brewing co-founder John Laffler has remained true to his word.  Despite the hotness of trendy IPAs,  he's yet to offer one at his brewery.  Instead you'll find sahti, chicha, and kotbusser or slightly more familiar styles like gose, saison, and wild farmhouse ales.  In addition to beer Laffler enjoys bourbon, honey and bees, and he loves the interplay of yeast and bacteria.  Before starting his brewery he spent time at Goose Island and had a hand in crafting many of their most famous beers, like Bourbon County Stout and King Henry.  He does offer up one beer that might be considered a trendy brew, Dino S'Mores is an adjunct stout with graham flour, marshmallows, vanilla, and cocoa.  Trendy or not, it's delicious.  As we talked with Laffler he sipped a bottle of Miller High Life.  It's no secret that he's a fan of the beer and even brewed a collaboration with Miller. a Wild Ale built on a base of High Life.  As mentioned, he has a passion for bees and honey and uses honey in his beers, although Illinois law prevents him from brewing mead due to his licensing. "If we’re just going to come out and make the same beers as everybody else, what’s the whole point of this?" says Off Color Brewing Cofounder John Laffler. I stepped foot in the MouseTrap for the first time.  The place was great, nice light refreshing beers and a side of Dark Matter coffee and great atmosphere.  But the reason I was there was to talk to a man who stays just about as true to himself and the integrity of his beer as possible in this industry.  John Laffler, co-founder of Off Color Brewing.  We talked about everything from the current state of things, to how he came up, his time at Goose, bee keeping, and the spark that led them to think up such an Off Color idea.  Let's open up a production brewery, but not make an IPA, or any other beer we don't want to.  John was honest real for every second of this conversation, and I thank him for that.  We need more true originals. This week’s episode is with one of the country’s best and most-loved brewers. But unless you follow the industry closely, you probably don’t know him. He won the Brewers Association’s Russell Schehrer Award for Innovation in Craft Brewing in 2016 in recognition of his outstanding work at Allagash as their brewmaster, as well as the many committees and teams he serves on for the association itself. So much of what makes the Brewers Association a progressive, impactful part of our everyday drinking lives isn’t in the marketing campaigns or politics, but in the incremental analysis, research, goal-setting, and internal lobbying for quality, technical education, and investments in agriculture. These are the rails upon which the future of craft brewing in the U.S. will run. And Jason is working at the heart of so much of it, both through the association, but also his own brewery in Maine. Jason was in Chicago for Allagash’s Saison Day in which he brewed a collaboration beer with John Laffler of Off Color. So we set aside some time in the morning after their brew day and a night on the town in Chicago. And to his credit, despite his travel-weariness, not to mention this being probably the most boring part of his trip, Jason still showed up. I was delighted. I learned a ton.
