Learn how Off Color Brewing's yeast-first focus makes its beers distinct from the more common hops-focused breweries in the craft beer industry.Off Color Brewing co-founder and head brewer John Laffler shares the science behind his yeast-first brewery and how it stands apart from other more hop-focused breweries. He discusses the revival of forgotten beer styles, focusing on esoteric brews crafted before the Bavarian Purity Law and highlighting his brewery's reputation for challenging conventional tastes with unique beers. He also explains his brewery's foeders and delves into the sustainable and artisanal brewing approach of Off Color, which prioritizes specialized production over mass market expansion.John also shares the story behind several of Off Color's beers, including their wildly popular Apex Predator saison, their native fermented witbier “Critters” with its delectable rosé-like acidity, and their playful reinvention of Miller High Life. Plus: how the innovative Miscellanea project experiments with wild yeasts to find “evolving” flavors, why Off Color's website is so amazing for beer nerds, and the sandwich you have to try along with your next British brown ale.About Off Color Brewing: A craft beer brewery in Chicago, Off Color first began operating with a focus on brewing forgotten styles of beer, particularly those made in Germany before Reinheitsgebot (i.e. the Bavarian Purity Law) was proclaimed in the late 15th century. We navigate the serious stuff but end on a hopeful note about ways to resist and stay engaged in these challenging times.
Brett from Long Island called in to McMonigle again last night and C-Mac wanted him to say, ‘you were right'. But was he right about the Commanders/Lions? We talked about each of us going 1-3 in last week's playoff games. A caller said ‘C-Mac' sounds like Francesa sometimes. Gio thinks Sal Licata wants Francesa to adopt him. Jerry returns for his final update of the day and starts with Aaron Glenn from a few weeks ago as he was asked about potentially being a head coach. Dan Campbell talked about losing his coaching staff to head coaching jobs. Dan Quinn talked about being underdogs yet again. Patrick Mahomes was asked about refs giving him special treatment. John Minko was on the call as St. John's beat Xavier at MSG. The Moment of The Day: vasectomies and enlarged prostates. In the final segment of the show, Gio tells a behind the scenes story that happened at the very end of yesterday's show. It involves sponsors and Eddie playing a drop about circumcision.

Welcome to the Chicago Beer Pass: Your ticket to all the great beer events happening in and around Chicago. On this episode of Chicago Beer Pass, Brad Chmielewski and Nik White are pretending that winter isn’t right around the corner by drinking Little Wings, a pilsner from Horse Thief Hollow. Horse Thief Hollow is always one of those breweries the guys try to make it out to, but time got away from them this year. But it’s great that you can pick it up in cans. As the guys knock back a couple of cans, Brad shares his recent adventures with his family in town, where he hit up Metropolitan, Burning Bush, Adam’s Street, Eris, and Off Color. Nik was able to hit up Half Acre for the latest Benthic release. With Goose Island’s Black Friday this week, it really means stout season is here. If you don’t pick up any bottles, try to make it out to one of the brewpubs or bars to try some of these big stouts.Having issues listening to the audio? For episode 300 we have a stacked panel in to discuss one of the most precipitous rise and falls in modern craft beer - The American Wild / Sour AleNo punches are pulled as we discuss the origins of these beers, why they became the darling of the craft beer world, and their fall from grace - all with input from people who were there to experience it first hand. Plus we talk about why this fall might ultimately be a good thing, and reasons to feel optomistic about the future of some of the most complex and beautiful beers ever created. A couple weeks ago we took our fine selves down to Atlantic Station in beautiful Atlanta, GA for the Georgia Craft Brewers Fest. The event is sponsored by our friends at the Georgia Craft Brewers Guild and showcases over 60 of our state's awesome breweries. One of the highlights of the festival is the collaboration competition. Brewers team up with each other, or maybe with a local restaurant or charity, and brew a collaboration beer to be served at the event and judged by a panel of esteemed judges. In that spirit we focused on collaboration chat in this episode and, since one of the collabs was a malt liquor, we decided to chat a bit on that as well. In the first half of the show we sit down with John Doss and Jay Harris from Southern Brewing Co. who partnered up with Akademia Brewing for Eagle Fang malt liquor. We talk about why you collab, what you get out of it, and veer a bit into lager talk. (Spoiler: We'll be doing a deep dive lager episode in the future.)Next up we talk with Craig Mycoskie from Round Trip Brewing and Matt Curling from Variant Brewing Co. We've known Craig for a couple of years and we've known Matt from way back in our homebrewing days. We've brewed together a handful of times and went up against each other in homebrew comps. Matt's brewery is now one of the best in the state. Grab some Variant if you get the chance. We carry on with collab talk with Craig and Matt and get into some talk on Pilsner variations, overcoming language barriers, Rauch IPAs and Craig's brewing background.Free Spirit Charitable CollaborationOf all the collabs we talked about on the show, this one is the most special. The beer is brewed in memory of Britney Fox Watts as a collaboration between Small Dreams Foundation and Terrapin Beer Co. You should definitely head to the website and learn more. Thanks for listening to Beer Guys Radio! If you're ever filling out some job application and you come to the race question, this might help if you're in the unfortunate situation of needing to check the White box. Sorry pal, but here's how you make the most of it. Just draw in that little sad-face symbol right there next to the offensive word White to declare your shame, remorse and instability for having to be that way, ‘ya pig. And whatever you do, don't even think about writing in “not my fault” or some jive ass deal like that. It damn sure is your fault so start drawing the “I'm Sorry” face and learn to like it!
