Talking wild yeast and craft malt with Sceptre Brewing Arts Sceptre Brewing Arts has had an interesting life. Originally opened in 2017 as Oak Brewpub, it quickly closed. Then it reopened... then closed again. After closure #2 the owners of Atlanta's Argosy beer bar scooped it up to open Sceptre. What a ride.  Trevor Jones knew the owners from Argosy. He's brewed with Atlanta Brewing Co. (Red Brick Brewing at the time) and Orpheus. Sceptre's beers use 100% craft malt and, when possible, craft malt sourced from the Southeast. We chat about Sceptre's first year, what's coming up from the brewery, their collaboration with ATL Beer Gang to brew Black is Beautiful, craft malt, and wrangling wild lager yeast.  Good times. Off Color Brewing was founded with a goal of brewing forgotten beer styles and swears they'll never brew an IPA Off Color Brewing co-founder John Laffler has remained true to his word.  Despite the hotness of trendy IPAs,  he's yet to offer one at his brewery.  Instead you'll find sahti, chicha, and kotbusser or slightly more familiar styles like gose, saison, and wild farmhouse ales.  In addition to beer Laffler enjoys bourbon, honey and bees, and he loves the interplay of yeast and bacteria.  Before starting his brewery he spent time at Goose Island and had a hand in crafting many of their most famous beers, like Bourbon County Stout and King Henry.  He does offer up one beer that might be considered a trendy brew, Dino S'Mores is an adjunct stout with graham flour, marshmallows, vanilla, and cocoa.  Trendy or not, it's delicious.  As we talked with Laffler he sipped a bottle of Miller High Life.  It's no secret that he's a fan of the beer and even brewed a collaboration with Miller. a Wild Ale built on a base of High Life.  As mentioned, he has a passion for bees and honey and uses honey in his beers, although Illinois law prevents him from brewing mead due to his licensing. Off Color Brewing offers a variety of unique and tasty beers like Sparkles Finds (some) Trouble (Hibiscus Gose) and Yuzu Fierce (Yuzu Berliner Weisse. A Brief History of Off Color Brewing (ahem) - At some point John and Dave were born. They did other stuff for a while and then they figured out they were better at making beer than at the other stuff. So that's what they do now. They met while both studied at the oldest and most respected brewing school (of the two...and by the brewers that went to the one) in the US, the Siebel Institute, in 2008 and the brewery was envisioned while they both interned at Metropolitan Brewing afterwards. After cutting their teeth at larger breweries, the two somehow convinced enough otherwise-very-smart-people to invest enough money for them to buy some big shiny things to make their own beer in. So that's what they do now. The end. I stepped foot in the MouseTrap for the first time.  The place was great, nice light refreshing beers and a side of Dark Matter coffee and great atmosphere.  But the reason I was there was to talk to a man who stays just about as true to himself and the integrity of his beer as possible in this industry.  John Laffler, co-founder of Off Color Brewing.  We talked about everything from the current state of things, to how he came up, his time at Goose, bee keeping, and the spark that led them to think up such an Off Color idea.  Let's open up a production brewery, but not make an IPA, or any other beer we don't want to.  John was honest real for every second of this conversation, and I thank him for that.  We need more true originals. On Endangered Species Day Eve Kelly, Patrick, and Ryan convened at the Science Club in Washington, DC to record a special LIVE episode of Science... sort of!   We featured two guests, the first was Steven Sowell from the Baltimore UnderGround Science Space (BUGSS!) to discuss citizen science, being watched by the FBI, and other challenges associated with setting up a private lab for anyone to come use. BIOHACKING! DIY SCIENCE! CHEESE!   Kelly's drinking something... red. Patrick is having an Exile Red Ale from Evolution Craft Brewing Company. And Ryan nerds out over his Apex Predator from Off Color Brewing, "a third-trophic level beer" which amuses him but nearly starts a fight with Kelly.   Our guest was Michelle Thaller, the Assistant Director for Science Communication at NASA's Goddard Space Flight Center and occasional contributor to Transistor, a science podcast from PRX.
