The Pinberries taste like Pineberries! A recent addition to the McIlhenney line-up and a new favorite in the tasting room. Pineberry West Coast IPA is an intensly pine-forward beer that almost does a 180 on your palate with a berry-like finish. It's truly a beer that will wear your elbow out as you'll want to experience that flip over and over again.
Episode 171 of the Taproom Podcast: host Mike sits down with Shanleigh Thomson (aka @shan.ferments) for an in-depth conversation about her brewing journey — from agriculture and protein chemistry to Diageo, UC Davis Master Brewers, roles at BSG, Yakima Chief and Roy Farms, and her work teaching brewing programs at Washington State University and UC Davis. The episode covers hop terroir and Terroir Tuesdays, sourcing and supply-chain challenges, fresh‑hop practices, international brewing curiosities (including New Zealand harvests), and the role of education in the craft industry. Shanleigh also shares stories from regional beer scenes, festival life (CBC, World Beer Cup), and how the brewing community supports innovation and resilience. Listeners will hear Shanleigh's beer preferences (West Coast IPAs, dry‑hopped pilsners, ESB), chats about style evolution and naming, practical tips on reading ingredient sourcing, her current curiosities (hangover aids like ZBiotics, low‑ABV yeast developments), and lighthearted segments on travel, guilty pleasures, and situational beers. Key takeaways: the value of transparency in sourcing and malt/hop origins, why community and education matter in craft beer, and a rallying call to support local breweries — plus what to expect from upcoming Taproom episodes and festival appearances.
How do you build a 3-time GABF-medal winning craft brewery from scratch in 10 years with no investors, and one brewer with no sense of smell?Brandon and Amanda Wright, co-owners of Werk Force Brewing Company in Plainfield, Illinois, trace the 10-year arc of how Chicago Brew Works — the homebrew supply shop they opened in 2012 — evolved into one of Chicagoland's most influential breweries, with multiple GABF medals to show for it. They cover what it's like to build a brewery as a married couple, the next big beer trend, the whole-bean coffee technique behind their stout series, and how Brandon brews award-winning beer without a sense of smell. 0:00 Intro0:45 Welcome to Werk Force Brewing in Plainfield, Illinois2:53 How Werk Force Started as a Homebrew Supply Store in 20123:27 From OfficeMax to a Winery to Homebrewing Full-Time4:45 Brando's House of Awesomeness (And Why Amanda Said No)5:32 How They Started Chicago Brew Works on a Kitchen Table5:59 Building Chicagoland's Biggest Homebrew Supply Store8:37 Why Werk Force Never Took an Investor9:06 Where the Name Werk Force Comes From11:16 What's It Like to Run a Brewery With Your Spouse?15:28 Designing the Taproom (No TVs, Communal Tables)17:07 The Six Degrees of Werk Force Brewing19:15 What Was Werk Force's First Beer?19:55 Why You Can't Call This West Coast IPA Pineapple Express21:57 How West Coast IPAs Have Changed in 12 Years24:10 The Next Big Beer Trend: Under 4.5% ABV25:42 Really Decent: A 3.9% All-Malt Lager27:04 Beer Break27:47 Welcome Back: Meet Brandon's Brewing Team29:36 How Werk Force Won 3 GABF Medals in 2 Years32:38 What Are the Best Bourbon Barrels for Aging Beer?34:44 Where Sleepy Bear Got Its Name35:39 Polar Bear: A Two-Year Bourbon-Barrel Coffee Stout36:24 How Werk Force Designs Sleepy Bear Labels39:16 The Whole-Bean Coffee Trick That Avoids Off-Flavors40:57 How to Decide on Sleepy Bear Variants Each Year44:15 Brian Doesn't Have a Sense of Smell45:37 How Brandon Brews Award-Winning Beer Without Smelling It48:24 What's the Hardest Part of Brewing Without a Sense of Smell?50:18 Does Werk Force Use AI to Design Recipes?53:26 What Makes a Great Oktoberfest Beer?56:08 Marzen vs. Fest Beer: What's the Difference?56:52 Inside the Barrel Den: Werk Force's Event Space58:09 What's Next for Werk Force Brewing?59:43 Final Four: The Beer They'll Never Brew Again62:00 Brandon and Amanda's Off-the-Clock Beer Picks62:33 Final Four: Best Food and Beer Pairing65:11 Final Toast: Calm Down, Have a Beer, Hit the RoadAbout Werk Force Brewing Company: A three-time GABF medal winning craft brewery in Plainfield, Illinois, known for the Sleepy Bear barrel-aged imperial stout series, classic West Coast IPAs, and lower-ABV lagers. In this BeerTalk episode, we head to Belgium — to Leuven, one of the country's true beer hotspots — and step into a place that instantly sticks in your memory: Bart Delvaux's taproom brewery in Kessel-Lo, where beer culture meets bike culture in the most Belgian way possible. Bart shares how it all started with homebrewing in a basement, then took a surprising turn during a work relocation to Chicago — and a bicycle crash that (ironically) led him straight into the world of American taprooms. What began as a setback became the spark for a new life: returning to Belgium, building a brewery, and creating a space where locals and visitors can drink fresh beer on draft, right next to the kettles. We talk about Bart's crossover brewing philosophy — from an easy-drinking cream ale and a smooth, low-ABV tripel, to a bold West Coast IPA, plus monthly specials that range from refreshing sour gose to stouts with chili, tonka beans, and other twists. Bart explains why they don't bottle, how they keep quality and freshness in their own hands, and why the taproom experience matters just as much as the beer itself. One highlight: Bart's obsession with creating beers that surprise you — like a white stout that looks like a pilsner but drinks like a stout, built through careful ingredient testing (and a lot of patience). And yes, we also get into hop water, food collaborations (tacos + jalapeño gose!), and the warm, supportive way Leuven's brewers work together...
The IPA gang is back together with some special guests for this star-studded episode recorded in front of a live audience of brewers at Union Transfer in Philadelphia. Vinnie Cilurzo of Russian River, Kelsey McNair of North Park, and Evan Price of Green Cheek are joined by Ben Edmunds of Breakside and Oregon State University's Tom Shellhammer—this year's recipient of the Brewers Association Recognition Award—for a ranging conversation. Among the topics they cover: managing sulfur in hop-forward beer, evolving dry-hopping techniques, thiols and mercaptans, and reducing the dry-hop load for better beer—plus, they take questions from the audience. This episode even features a first for the podcast—a Pick 6 speed round, in which Vinnie Cilurzo asks Tom Shellhammer to share six beers that inspired him. Scotty Hargrave didn't invent extra-pale ale—he reinvented it, giving the style the definition it had lacked before. Tinkering away on his homebrew kit in New South Wales, he developed the recipe for what would become Balter XPA—a beer that took off and popularized what has arguably become Australia's signature beer style. It's also a beer that also has inspired certain American brewers, including Craft Coast cofounder Blake Masoner. Craft Coast XPA medaled at the 2024 and 2025 World Beer Cups and is now a core beer at their two brewpubs/taco stands in San Diego's North County. In this episode, Craft Beer & Brewing executive editor Joe Stange—interviewing them for a feature article in our upcoming issue—gathers Hargrave and Masoner for a trans-oceanic dive into the details of what makes a great XPA. With its lean malt base, full-spectrum hop character, soft mouthfeel, and addictively dry finish, it's a simple beer that may not be so simple to execute. Among the topics they discuss: why they believe in Australian base malt for XPA the importance of hot-side hop additions—from first wort to whirlpool—and “spreading out” those IBUs water chemistry and the trick of achieving both soft mouthfeel and a crisp, dry finish how brewing XPA has improved the West Coast IPAs at a medal-winning West Coast brewery the wider value and benefits of learning how to nail a challenging style And more. In this episode of Matt Likes Beer, the Philadelphia Months series rolls on with a West Coast IPA that leans heavily into pop culture. Matt cracks open “You're an IPA, Harry” from Second Sin Brewing—a beer packed with wizard-themed branding, even if the host himself isn't exactly a student of the Harry Potter universe. What follows is a classic Matt-style journey: part beer review, part self-aware ramble, and part unexpected deep dive into theme park memories and media coverage days. From reminiscing about covering events at Universal Orlando Resort to accidentally gaming a Harry Potter trivia challenge, this episode proves that even a non-fan can find themselves surrounded by magic. On the beer side, Matt evaluates this American/West Coast IPA through a BJCP lens, breaking down appearance, aroma, flavor, and mouthfeel. Expect notes of lemon candy, pine resin, and a firm bitterness, along with thoughtful critique on balance, stylistic accuracy, and a slightly distracting mineral edge. It's a beer that smells fantastic, drinks a bit lighter than expected, and sparks a conversation about what makes a classic IPA shine in a world full of hazy and experimental variants. Final score: 38/50 — a very good beer with a standout aroma and a few quirks worth discussing. Whether you're here for the beer education, the storytelling, or just to hear someone admit they barely know anything about Harry Potter, this episode has a little something for everyone. Cheers!

Since being founded by Adam Henderson in 2020, Azvex Brewing Company has gone on to become of the UK's most respected producers of hop-forward pale ales and IPAs, fruited sours, and imperial stouts. And head brewer Jack Walker has played a huge part in that journey. Known and respected across the land, Jack has helped create a wealth of fantastic beers at the Liverpool-based business. And for that reason, we invited him to speak at our Brewers Lectures in Newcastle last month. In his latest talk, Jack walked us through his approach to the production of the brewery's delicious West Coast Pils. He outlined the team's approach to defining the style and water profile employed, to the mash, boil, bitterness as well as yeast and fermentation. Jack described their dry-hopping regime and whether these beers should be hazy or not while concluding that these beers are an evolution of the West Coast IPA and a style still finding its feet.

Mike and Herbie dig into his path from homebrewing and touring with bands to commercial brewing, winning awards, and pivoting through COVID to grow Lucky Luke's three locations. The conversation covers brewing philosophy and techniques (yeast management, tank scheduling), favorite hops and styles (Simcoe, Eldorado, HBC 630, Dulcita; lagers, West Coast IPAs, hazies), balancing creativity with consistency, and industry trends like lower‑ABV session lagers. They also discuss community-focused initiatives — local music, food trucks, fundraisers, disc golf collaborations — and brewery identity (tap handle tools, song‑inspired beer names). Highlights include stories from memorable brew days and events, Herbie's favorite beers and guilty pleasures, his Mount Rushmore of influential breweries, and why craft brewers should engage their neighborhoods to build sustainable brands. Expect a friendly, wide‑ranging chat about beer, music, pizza, and life in the brew house.
There's no better feeling than having no expectations for a brewery visit and being blown away. That's exactly how Cee felt after visiting Thirty Eight O Six during a recent trip to his motherland of Australia. Nestled in the South Eastern suburb of Berwick in Melbourne, Co-Founders Lachie (Brewer) and Zac (Chef) have turned their industrial unit into something you'd be more likely to find in hipster city neighbourhoods like Collingwood or Fitzroy. The fellas jumped on the pod to chat about their connection to Berwick and how proud they are to bring their idea to life where they grew up, how Lachie went from an electrician to a full-time brewer and business owner, Zac's harrowing story of losing a pinkie during the build of the brewery, how they connect with their neighbours (shout out Bermuda Coffee Studio!), their lineup of beers and why they have so many core brands, the popularity of Pale Ales and Xtra Pale Ales in Australia, their approach to their food program and why it's so exceptional, Cee's incredible experience at the brewery with the food, why they attract such a diverse crowd, why they chose shared tables for the taproom, and where they plan to take it from here. They got into five 3806 bangers: Hazy Pale Ale, West Coast IPA, Hazy IPA, Pale Ale, and Oat Cream IPA. This was such a gem - cheers! Steve Holle spent decades in real estate investment before walking away at 55, moving back to his Kansas City hometown and opening KC Bier Co. — one of the region's most distinctive breweries. Now 12 years in, Steve sits down with Nigel and Nick to talk about the brewery's German roots, the Reinheitsgebot purity law it follows, and why imported Bavarian malt changes everything in the glass. He also breaks down the realities of running a craft brewery today: tariffs on German ingredients, a softening wholesale market, and why the tasting room model is quietly winning. Plus — a second KC Bier Co. location is coming to Lenexa, Kansas, complete with a beer garden, live music stage, full scratch kitchen, and yes, an off-leash dog area. Three mystery beers round out the episode, including a Krampus winter warmer and a West Coast IPA that earns some genuine praise from a certified beer judge.
Here we go with "the big show" the West - West Coast IPA from Harland Brewing created for the SanDiegoBeer.News Awards. A fantastic example of how the West Coast IPA has come from a piney-reinous amber IPA to a bright-citriusy light bodied crusher!

This week on The Best of B Team, we're throwing it back to our episode with Jeff, owner and founder of Bike Rack Brewing Co.Imagine the sun on your shoulders, a cold pint in hand, and a reason to show up, this conversation lives where small batches meet big community energy. We crack open a limited summer release designed for poolside afternoons and talk about why keeping it scarce pushes people off the couch and out to the farm to taste it fresh. From the first sip, the strategy is clear: let the beer be a moment, not just a product, and pair it with simple, smart marketing that moves people to gather. We share how a decade in craft beer turned our taproom into a home for local artists, funding albums, pressing vinyl, and turning Friday nights into rehearsal halls for a 90s cover band. Partnerships aren't a slogan for us; they're a map. When your front door lines up with a neighbor's venue, you dream up VIP-only drops and collaborations that feel earned and close to the ground. That same “build with what's near” mindset led us to a tight, fast food menu: wings done right and a giant pretzel that keeps tables happy without stealing space from tanks in a production brewery. There's also the truth about the leap. Home brew praise is kind, but scaling demands process, fermentation control, and a willingness to rewrite plans that once felt perfect. We talk through the gap between optimism and execution, the risk of leaving safe jobs, and the grit it takes to keep learning. On the board, a balanced lineup leads the way: a West Coast IPA named after local trails, hazies for modern palates, and approachable ABVs that invite another round. Along the way, you'll hear the laughter, the near-misses, and the simple rules we live by: make beers that fit your place, keep the menu sharp, and let community be the headline. If this story of small-batch creativity and hometown loyalty hits home, you need to see the full episode! Follow the show, share it with a friend who loves craft beer, and drop a review with your favorite taproom pairing, we're taking notes for the next collab.Watch the Full Episode: https://www.bteampodcast.com/bike-rack-brewing-co-crafting-bentonvilles-beer-scene/
Episode 26 of Matt Likes Beer features Electric Mainline, a West Coast IPA from Grimm Artisan Ales, a Brooklyn-based brewery Matt knows primarily through retail purchases rather than firsthand taproom experience. With limited personal history to draw from, the episode leans heavily into technical judging, exploration, and education, making it one of the most analytically driven installments of the season. Matt opens by exploring Grimm's extensive and stylistically diverse beer catalog, noting the brewery's wide-ranging output across IPAs, lagers, stouts, sours, and mixed fermentation beers. While researching Grimm live during the recording, Matt discusses the brewery's dual-level taproom layout, contrasting its polished upstairs space with a more industrial downstairs brewery setting—an aesthetic that strongly appeals to his personal tastes. Before judging begins, Matt reads the brewery's own description of Electric Mainline, which declares the beer a West Coast IPA featuring Luminosa hops, supported by Mosaic, Citra, Columbus, and Simcoe. With the style clearly defined, Matt evaluates the beer strictly as BJCP Category 21A: American IPA. Appearance is a standout, with the beer pouring a brilliant, unmistakable yellow, a large, persistent white head, and excellent lacing. While visually striking, Matt notes an interesting guideline quirk: BJCP color descriptors list medium gold to light amber, making pure yellow technically outside the expected range—an example of how modern IPAs sometimes outpace written standards. Aroma earns a full 12/12 score, delivering expressive notes of orange zest, mandarin citrus, lemon brightness, subtle pine, and a faint grainy malt backbone. Matt explicitly follows advice from a fellow judge—“don't fear the 50”—choosing not to deduct points where the beer fully delivers stylistically. Flavor presents a more mixed picture. While citrus character remains vibrant and layered, bitterness is strongest on the tongue rather than in the finish or aftertaste, falling short of the firm, lingering bitterness expected in a classic West Coast IPA. Malt presence is detectable but subdued, leading Matt to score flavor at 14/20. Mouthfeel is spot-on, with a medium body, high carbonation, and smooth texture earning a perfect score. Overall impression balances enjoyment with technical critique, resulting in a final score of 39 out of 50, placing Electric Mainline solidly in the “Excellent” range—even with noted flavor shortcomings. With no one-star reviews available, the episode transitions into a long-form educational soapbox prompted by a conversation with a non-judge friend: Why do Double and Triple IPAs often taste sweeter than regular IPAs? Matt breaks down the concept using brewing fundamentals, explaining fermentable versus non-fermentable sugars, increased body, alcohol's impact on sweetness perception, and why higher-ABV IPAs inevitably drift away from the crisp bitterness drinkers expect. The episode concludes with a preview of upcoming IPA-focused discussions and reinforces one of the show's core missions: helping everyday beer drinkers understand why beer tastes the way it does, not just whether it's “good” or “bad.”
Adam Bosch from Parliament Brewing is back on Brew Ha Ha with Herlinda Heras today to talk about the Cheesesteak Competition on March 21. Adam has been on the show several times, the most recent was this episode last September. Chris Amadio from Mamadios food truck, is in the studio. They were the people's choice winner at last year's Cheesesteak competition. First, they are drinking Capital Letters, a new West Coast IPA that they started brewing last year. The hops are Riwaka, Citra and Nelson. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. Visit their website for up-to-date Pliny the Younger 2026 information. This is their third year of the Parliament Brewing Cheesesteak competition. Apart from the five cheesesteak vendors, they will have four bands and a dj, plenty of seats, tables and chairs, tents and parking. The cheesesteak vendors will be Mamadio's, Lila's Streetside Eats, The Spot Food Truck, Golden Steak Warriors and Canevari's Deli. There will also be so far about 13 merch vendors, and food and beverage vendors. Eagles, Phillies, 76ers, Flyers. Herlinda recalls visiting Philadelphia and finding cheesesteaks. The old city has cobblestone streets and lots of corner shops like delis and restaurants. There is also a burgeoning brewery scene. Chris Amadio is from Philadelphia and he can really turn on the Philly accent when he wants to. Eagles, Phillies, 76ers, Flyers. The competition is for cheesesteaks not limited to Philly style, so everyone can have their own twist. There will be two awards, one from the judges and the people's choice award. Herlinda will actually be one of the judges on March 21. One of the other judges is Mercedes Ramos who runs the SoCo Market, who has also been on the show. The Cheesesteak competition day is kid friendly and dog friendly. There will be four bands, SPF, Citizen Flannel, Werewolf on Holiday and then Ellie James and the Electric Dream.

Host Mike sits down at Synth Beer Co. in Costa Mesa with founders/brewers Mitch McDuff and A. Max Salazar to talk about opening their September launch, the origin of the name “Synth,” and the first core beer, Laser Lager. They share the early planning, brewery build-out stories (including a beloved prototype brew house), and what it's like to run a small, hands-on brewing program. Topics include their brewing focus (drinkable West Coast IPAs, Latin American‑style lagers and pilsners, and cocktail‑quality seltzers), favorite hops and recipes, long brew days, community and neighborhood collaborations, and memorable festival moments like GABF. Guests also trade personal stories — music and video-game nostalgia (NHL HITS), nicknames, and the homemade techniques behind standout seltzers. Anderson Valley Brewing Company taproom. Herlinda Heras and Daedalus Howell host another edition of Brew Ha Ha, featuring guests from Anderson Valley Brewing Company. They are the official beer sponsor of the Great Dickens Fair, a Christmas celebration happening at the Cow Palace now through Dec. 21. (During this show, we also got a phone call from Kevin Patterson, manager of the Great Dickens Fair. His portion of this show can be heard over here, on this other podcast episode. This way both guests have their own podcast episode, for their own linking and listener traffic.) Jason O’Connell and Ben Padrone are here from Anderson Valley Brewing Company. Jason is the new owner and Ben is the Lab Manager. They begin by tasting their Salted Caramel Porter, which gets its flavors from the malts that are used, not from any actual caramelized sugars. It is aged for 6 months in bourbon barrels and comes in at 9.5% ABV. QA and QC Jason’s background is in the wine industry and he finds the beer world to be more fun. He says he bought the brewery because he was bored. Ben’s job is QA and QC, quality assurance and quality control. They do a lot of testing on the water and the product. They get their water from wells that are on their property. Anyone visiting Anderson Valley may want to visit their 18-hole championship Disc Golf course. Next year’s Booneville Beer Fest is on May 2 next year. The theme is Godzilla vs. Barkley and there is a Japanese sake connection. Stay tuned for more information before the date. They have already about a dozen breweries signed on. Among beer producers this is one of the favorite events. Fal Allen is Back at Anderson Valley BC Fal Allen is back. Fal Allen is back on the scene at Anderson Valley Brewing Company. He has been the brewer there and a key person in the company. He left the company for a while and was working in New Zealand. Now he is working with AVBC for the moment from Hawaii. Fal Allen has a great radio voice and has been on Brew Ha Ha before. Here is his last appearance on Brew Ha Ha. Next they taste their West Coast IPA, which uses Mosaic, Citra and Ekuanot hops. All seven of the beers they brought today are available at the Great Dickens Fair. SAKE They have a plan to start making sake and to use the best possible rice. Sake is gluten free, which is an advantage for some people. They are experimenting with Sato, a kind of rice for sake. They are also making a sake flavored beer. Herlinda remembers when her friends asked her to taste a large selection of sake to help them get an import company started. Watch out for this to develop over the next five years. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. Visit their website for up-to-date hours, menus, beers and more. Ben went to Humboldt State then the Master Brewers program at UC Davis. Jason studied engineering at U of British Columbia and worked in construction before working in the wine industry. He has recently acquired AVBC. Jason describes the situation as “exciting.” The sake idea is getting attention. Sake falls under the TTB brewers license but the labeling falls under wine. Allen and RD try Bride of Dankenstein, a West Coast IPA by Mason Ale Works. From Untappd: "This Classic west coast single IPA is the significant other, or bride so to speak, to our Dankenstein's Monster. We sewed together a bouquet of Citra, Idaho 7, Cascade, Cashmere, Strata, and Amarillo to create a beer that is lighter and more fruit forward than her more monstrous other half, although sure to still ELECTRIFY."7% ABVThanks for watching!#beer #craftbeer #beerreview #craftbeerreview #beerpodcast #craftbeerpodcast #ipa #westcoastipaBecome a supporter of this podcast: https://www.spreaker.com/podcast/strikeout-beer--2992189/support.

Another GABF is in the books...Reports from the field say this year's Great American Beer Festival was a shell of what it once was. That's not surprising considering the overall craft landscape, but still a bummer.Seeing the beers and breweries that win, and what categories are popular is always fun. I learn about new breweries every year. Also, the West Coast IPA continues to make a comeback. There were 300 entries in the category with Hazy/Juicy edging it out for the top spot but just 1 more entry. Impressive.More news on Iron Hill that somewhat unexpectedly shuttered all their locations. Their financial are pretty shocking. It's a bit surprising they stayed open this long.On the international front, India is facing a major can shortage that could impact beer supplies and more news on pre-Incan psychedelic brews. At Craft Coast (https://craftcoast.co) in Oceanside and San Marcos, California, Blake Masoner is happy if you show up for tacos and stay for a beer. The fairly priced tacos are scratch-made, down to the tortillas themselves, packing loads of flavor into every bite. Fellow San Diego–area brewers refer to them as “The best tacos between here and Tijuana”—but the beer they brew here is anything but an afterthought. Eight medals in four years at the World Beer Cup and Great American Beer Festical—in competitive categories such as hazy pale ale, American IPA, and international pilsener—are evidence of the brewery's ambition on the quality side, and they've modified both classic and modern brewing techniques to serve their flavor and aroma goals. In this episode, Masoner discusses: abandoning a “no core beer” policy to keep customers happy brewing Mexican-style dark lager with dry yeast and vorlauf-only dark malts mitigating sulfur production with 34/70 yeast Australian-inspired XPA design without Southern Hemisphere hops using Mosaic at different times for different effects in West Coast IPA knockout hopping to find the true heart of new varieties pinpointing flavors through dry hopping building a team-wide winning mindset And more. Making beer commercially in New York City is so difficult that it all but stopped until the previous decade's craft-beer boom rekindled the fire. Today, about 40 breweries make beer in the city, but doing so comes with its own set of rules. Beyond the regulatory and logistical hurdles, there's an underlying creative challenge: NYC is the culinary capital of the United States, and competition for space on bar and restaurant menus is pitched. Without great beer, great branding, a point of view, and a way to generate new and engaging stories, it's easy for a brewery to get lost in the noise. That's why KCBC (https://kcbcbeer.com)—opened in 2016 by homebrewers-turned-pros in the vibrantly diverse Bushwick neighborhood—leans into the city's energy with graphic storytelling through branding, and with a constantly shifting lineup that tells interesting tales about the wider world of beer. In this episode, cofounder Tony Bellis and head brewer Bobby Rolandi discuss: brewing hazy IPA with Voss kveik rather than more popular strains drier New England–style IPAs with finishing gravities around 3.5°P (1.014) developing three distinct templates for hazy IPA recipes avoiding chewier grains such as oats in favor of flaked and malted wheat fermenting cooler and with a cooler dry hop for smoother extraction achieving modern flavors in West Coast–style IPAs using classic hops experimenting with hops and fermentation in the lager space using 34/70 for IPA fermentation while using a Budvar-derived strain for lagers And more.
