Zack Kaiser (Absolem Cider), Parick Chavanelle (Allagash), Larry Westler (Apres) sit down with Jimmy Carbone to talk Ciders from Maine, fermentation and how they all came to love the process.Zack is a Cidermaker, owner, and co-founder of Absolem Cider Company. In love with the craft, art, and science of fermentation. This passion developed through experiences at Neshaminy Creek Brewing, Millstone Cellars, Diamondback Brewing, and Perennial Cider Bar. Currently searching for tasty apples, grapes, and fruits. Patrick Chavanelle has been an employee at Allagash Brewing Company in Portland, Maine since 2011. He's currently the Research and Development Manager, responsible for coordinating new beer development, analyzing raw materials, and running the brewery's cider and wine program. He sits on the board of the Hop Quality Group where he is thoroughly involved in their public hop breeding efforts. Patrick is currently working towards his Master of Science in Brewing and Practice through the University of Nottingham, as well as the Winemaking Certification program through the University of California, Davis.Larry Westler went from apple enthusiast to photo editor to lead cider maker at Apres, and has jumped into cider making feet first in the last few years. Originally from NYC, the move to Portland eventually led to a career change as well, turning a passionate hobby into selfies with thousands of pounds of apples from Maine orchards, destined to be fermented. After initially bartending at Apres, he transitioned to becoming a member of the production team, and now runs the cider program. He strives to keep a diversified portfolio of cider that showcases modern and traditional methods while keeping the focus on Maine-grown apples and fruit in general.

If you're a voracious fiction reader like I am, your biggest impression of Maine may come from Stephen King novels. But the United States' northeasternmost state is far more than pet cemeteries and telekinetic prom queens. It's also home to some of the country's highest-quality grain growers and maltsters, many of whom are based in an area that's long been used for another crop: potatoes. In her piece titled “Making It to a Million — How Allagash Helped Grow Maine's Grain Economy,” writer Catie Joyce-Bulay dives into this world of farm-to-pint malting and how Allagash Brewing Company's pledge to use 1 million pounds of grains grown and malted in Maine by the end of this year has helped spur new infrastructure and symbiotic relationships throughout the local industry. The Allagash Brewing Company, in Maine, makes a lot of "bottle-conditioned" beers—brews that get their carbonation by fermenting a second time, in the bottle, as yeast belch out CO2. "And because they do bottle conditioning they're meticulous about monitoring package pressures. It's a way for them to follow the progression of this refermentation in the bottle." Thomas Shellhammer is a brewing scientist at Oregon State University. Who freely acknowledges: "It's a fun job. Science and beer." At any rate, not long ago, Allagash noticed some very high pressures in some of their bottles. Not quite exploding. But alarming enough for them to give Shellhammer a call. What he and his colleague Kaylyn Kirkpatrick found was that hops—the bittering agent in beers—might be to blame. Because the aromatic flowers contain enzymes that can chew up starch. Typically, when hop flowers are added during the initial cooking of the fermentable brew, those key enzymes are denatured. And thus the flowers' only role is as a flavoring agent. But as the demand for hoppy beers has grown, brewers have been looking for other tricks to get those juicy, fruity, herbal aromas into beers. So they've been what's called "dry-hopping" beers—dumping loads of hops into the beer during or after fermentation, rather than during the initial boil. "There's an upward limit to how much hops you'd want to put in the kettle because the beers just get unpalatably bitter. But if a brewer focuses on dry hopping they can put very large amounts of hops into beer to create intense hoppy flavors."Problem is, adding hops late doesn't deactivate their starch-attacking enzymes. And they're able to break down starches the yeasts weren't able to attack, unleashing even more sugar into the brew. And if yeast are still hanging out, as in Allagash's bottle-conditioned beers, that kickstarts additional fermentation. And that boosts alcohol by volume and carbon dioxide concentration—to potentially explosive levels."Basically the hops are taking something that's considered by brewers to be unfermentable, and breaking them down to the point where they can actually referment, or become fermentable, or potentially contribute to sweetness, as beer ages."The full detective story is in the Journal of Agricultural and Food Chemistry. Salutations, everybody! This week, Ryan and Alex try the delightful Allagash White by Allagash Brewing Company. Allagash was started in Portland, Maine, in 1995 as a small, one man brewing company by founder Rob Todd. Todd was familiar with the brewing scene, and realized there was a gap that needed to be filled in the craft brewing scene - while there were plenty of German and British style brews, the beer world was missing real craft Belgian style beers. Rob Todd decided he was just the man to fill that gap and began brewing the first batch of Allagash White, releasing it for distribution in 1995. Since then, Allagash Brewing Co. has grown to become the face of Belgian style beers in the US. Allagash White has tastes of coriander and Curacao Orange Peel, along with the traditional spices you’d expect to taste in a Belgian White. We’ll also be calling the very talented makeup artist, Paulie Jutras, who’s worked in film, theater, and was recently a finalist in the NYX Face Awards. Through your Intstagram feed, website, blog posts, videos, and of course through your beer. I’ve always been drawn to the Allagash brand because of how well they tell there story through so many touchpoints. They first drew my deeper attention from their amazing photography, but as I learned more about them, I really enjoyed how they tell their story using beer profiles, blog posts, and informational pages on their website. Allagash cares about the details, it’s all about making everything count and making it positive. This week’s episode is with one of the country’s best and most-loved brewers. But unless you follow the industry closely, you probably don’t know him. He won the Brewers Association’s Russell Schehrer Award for Innovation in Craft Brewing in 2016 in recognition of his outstanding work at Allagash as their brewmaster, as well as the many committees and teams he serves on for the association itself. So much of what makes the Brewers Association a progressive, impactful part of our everyday drinking lives isn’t in the marketing campaigns or politics, but in the incremental analysis, research, goal-setting, and internal lobbying for quality, technical education, and investments in agriculture. These are the rails upon which the future of craft brewing in the U.S. will run. And Jason is working at the heart of so much of it, both through the association, but also his own brewery in Maine. Jason was in Chicago for Allagash’s Saison Day in which he brewed a collaboration beer with John Laffler of Off Color. So we set aside some time in the morning after their brew day and a night on the town in Chicago. And to his credit, despite his travel-weariness, not to mention this being probably the most boring part of his trip, Jason still showed up. I was delighted. I learned a ton. How Allagash Brews Sustainable Practices into its Operations: A Conversation With Luke Truman The grain is just one way it's closing the loop. Portland's Allagash Brewing Company has committed to purchasing 1 million pounds of Maine-grown and -processed grain by 2021. And three days a week, a local farmer stops by the brewery to pick up spent grain, which he uses as feed for his cows. Allagash demonstrates that same commitment to sustainability throughout its operations. From the cold Maine air that it uses to cool its largest refrigerated space, to the waste carbon dioxide (CO2) it captures from the brewing process and repurposes to keep head pressure on its tanks, the company sees sustainability potential in every aspect of its processes. The Bard MBA's Carolyn Pincus spoke recently with Allagash's sustainability lead, Luke Truman, about the brewery's many initiatives — and about how the company manages its relationship with industry regulators. Season 2, Episode 50 – This week, beers from Destihl Brewery, Allagash Brewing Company, and the return of Going In Blind: Greg Nagel Edition! This week, we’re diving into some more beers from Destihl Brewery’s Wild Sour Series, as well as some funky stuff from Allagash Brewing Company. Shows from session 27 (episodes 50, 51, and 52) were the first to be recorded in December, so this officially kicks off the 4B 2015 holiday season! It really is the best time of the year. Destihl Brewery Wild Sour Series We first learned of Destihl’s awesome sour beers way back in 2012 when John and Mattwere at the Great American Beer Festival. Destihl brought the pain with their awesome sours that made for huge lines during the festival. We had their gose from this same series on the show back in March. Season 1, Episode 10 - This week, we’re drinking the saison rumored to be the source of Wyeast Laboratories 3711 saison yeast, a delicious sour from Allagash, stout from Freeport, Maine, and finally, Matt’s first small batch brew in quite a long time. This week, we’re joined once again by our in-house special guests Sara and Yvonne, and it gets a little crazy this week. We start off with some “discussion” on the movie The Godfather, and drink a tasty brew from Brasserie Thiriez called “Extra“, a dry-hopped french farmhouse ale, rumored to be the source of Wyeast’s 3711 French Saison ale yeast. Brasserie Thiriez, Allagash Brewing Company, and Maine Beer Company After that, we dive into a couple of excellent beers via Mr. Nagel, Allagash Brewing Company‘s Coolship Cerise, and Maine Beer Company‘s Mean Old Tom. Coolship Cerise is an open-fermented sour ale aged in oak barrels with cherries, and it’s nothing short of delicious. Greg gives us a some insight on how Coolship is made, fresh off his recent trip to the east coast of the United States. Mean Old Tom is a stout aged on vanilla beans. Maine Beer Company is out of Freeport, Maine, and if this beer is an indication of the deliciousness of their beer, then we’re definitely looking forward to more from this brewery. Feature: Homebrew – Matt’s Small Batch IPA. Matt’s Mashing In! Matt‘s known for brewing small batches of brew in the past, but since becoming a professional brewer, time for homebrewing has been limited.
